Pea Crostini image

An easy pea crostini recipe with fresh spring peas, creamy feta, and fresh dill. The perfect elegant appetizer or side for spring and summer!

12 baguette slices
1 cup peas (fresh or frozen)
1 tablespoon olive oil
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon red pepper flakes
2 tablespoons finely chopped fresh dill
1/3 cup crumbled feta cheese

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper, then arrange baguette slices on top in a single layer. Bake until the slices are toasted and golden around the edges, about 10 minutes. Remove from the pan and set aside.
  • Bring a large pot of salted water to a boil. Add the peas and quickly blanch, 1 minute for fresh peas or 2 minutes for frozen. Drain peas and transfer to a bowl.
  • Add the olive oil, lemon juice, salt, and red pepper flakes, then mash with the back of a fork. Stir in the dill, then the feta.
  • Top each crostini with a few tablespoons of the pea mixture and serve.

This spin on bruschetta tops baguette slices with crushed peas, mint and salty cheese - great for canapés

Yield Serves 5 as a nibble, or 10 with other nibbles

Number Of Ingredients 7

300g frozen pea , left at room temperature to defrost
3 tbsp low-fat natural yogurt
2 tbsp chopped mint , plus a few extra leaves, torn
zest and juice ½ lemon
15 slices cut from a thin baguette , lightly toasted
85g feta cheese , crumbled
drizzle olive oil

Steps:

  • Put the defrosted peas, yogurt, chopped mint, lemon zest and juice and some seasoning in a bowl. Mash well with a potato masher. Divide the pea mixture between the toasts, then scatter a little feta on top of each with some more pepper. Arrange on a plate, scatter with more mint leaves and a drizzle of oil. Serve.

  • Arrange the slices of baguette on a rimmed baking sheet in a single layer. With a pastry brush, brush each toast on both sides with olive oil and season with salt and pepper. Transfer to the oven and bake until the crostini are crisp but not brown, about 10 minutes. Remove from the oven. Let cool. Crostini are best the same day they’re made.
  • Crumble the feta into large pieces over a bowl and add about half the olive oil, the thyme, red pepper flakes, and lemon zest. Stir gently to combine and let stand 30 minutes. (The marinated feta can be made ahead; wrap tightly and refrigerate for up to 3 days and let come to room temperature before using.)
  • Bring a small saucepan of salted water to a boil. Add the peas and cook until just tender, about 5 minutes. Drain and transfer to the bowl of a food processor. Add the remaining olive oil, mint, salt, and lemon juice and pulse into a chunky mash.
