PRALINE PEACH COBBLER
This recipe from the Missouri Ozarks represents our area well because so many farms have peach trees. Cobbler is a delicious dessert for picnics and potluck dinners. It can be served cold or warm, and is especially good topped with a generous scoop of vanilla ice cream.

- In a large saucepan, mix 1-1/2 cups sugar, cornstarch and cinnamon. Stir in water until smooth. Add peaches. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Pour into a lightly greased 13x9-in. baking dish; set aside. , In a bowl, combine flour and remaining sugar; cut in shortening until mixture resembles coarse crumbs. Add buttermilk and stir just until moistened. If needed, add additional buttermilk, 1 tablespoon at a time, until dough clings together. Turn onto a floured surface; knead gently 6-8 times. Roll into a 12x8-in. rectangle. , Combine butter, brown sugar and pecans; spread over the dough to within 1/2 in. of edges. Starting with long side, roll up jelly-roll style. Cut into twelve 1-in. pieces. Place on top of the peach mixture. Bake, uncovered, at 400° for 25-30 minutes or until golden brown.

- Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In medium bowl, mix cracker crumbs, pecans, brown sugar and butter. Press evenly in bottom of pan.
- Arrange peaches on crust. Sprinkle with cinnamon-sugar. In medium bowl, mix Bisquick mix, granulated sugar and milk; pour over peaches.
- Bake 45 to 50 minutes or until golden. Serve warm.

PEACH COBBLER WITH PRALINE FILLING
This luscious peach cobbler uses a homemade fresh peach filling. Then the peaches are layered with biscuits that are filled with a praline filling. Marvelous combination of flavors and a great way to use up fresh peaches.

Steps:
- Combine sugar, cornstarch and cinnamon in medium-sized saucepan until smooth.
- Slowly add in water and whisk to combine.
- Add peaches.
- Bring mixture to a boil over medium heat and boil about 3-5 minutes or until mixture is thick.
- Remove from heat.
- Pour peaches into a greased 9x13" baking dish.
- Combine dry ingredients.
- Cut in shortening with a pastry blender until coarse crumbs form.
- Add buttermilk and stir until a soft ball forms.
- Knead on floured surface lightly.
- Roll dough into an oblong about 8x12".
- Combine ingredients well and spread over top of biscuit rectangle.
- Roll tightly from long end and cut in one-inch slices. (I cut the biscuit dough into 15 slices).
- Place the slices on top of the peaches in baking dish.
- Bake at 350° about 30-45 minutes or until biscuits are golden.
- Serve warm.

- Make the topping in a small bowl.
- cut margarine very small and get soft to room temperature using a serving size spoon like a pastry blender, mix in other ingredients until crumbly (Do it for a few minutes.
- put aside and come back and do it again several Times.

- For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.

- Combine peaches, Chinese five-spice powder, and lemon zest in a bowl.
