FRENCH PEAR TART

This French pear tart recipe is a total WIN! Absolute perfection in both presentation and taste!

1 1/2 cups all-purpose flour
5 tbsp sugar
1/2 tsp salt
12 tbsp unsalted butter, melted
8 large pears, washed
3 tbsp unsalted butter
1 tbsp water
3/4 cup fig preserves
1/4 tsp salt

Steps:

  • Position one oven rack to middle, and move the second rack to the top slot.
  • Preheat oven to 350 degrees F.
  • In a bowl, mix together flour, sugar and salt. Add melted butter and combine to form dough.
  • Transfer dough to a 9-inch tart pan with a removable bottom. With your hands press dough down to spread on bottom and onto the rims of the pan.
  • Place in the oven on the middle rack and bake for 30 minutes, or until crust turns golden brown. When ready remove crust from oven and let sit to cool. Leave oven on.
  • Meanwhile, heat the fig preserves in microwave for about 40 seconds. Pour heated fig preserves through a mesh strainer to separate chunks from liquid.
  • Now, slice five pears into 1/2-inch slices, discarding core.
  • Heat 1 tbsp of butter in a large cast iron skillet. Add pear slices and 1 tbsp water. Cover and cook on medium heat until pears are slightly tender; about 3 minutes.
  • Remove pears onto a large platter and let sit to cool.
  • Take the remaining three pears and cut them in the same manner.
  • Now melt 2 tbsp of butter in previously used cast iron skillet. Add newly-sliced pears, chunks of fig reserves, and salt. Cook on medium heat, covered, for ten minutes; stir occasionally until pears are very tender.
  • Take a potato masher and mash the pears and fig reserves into a puree. Let cook for another 5-7 minutes or until pureed mixture reduces and thickens.
  • Transfer pear-fig puree onto the now cooled crust; spread evenly.
  • Now, take the cooled pear slices and begin to assemble them in layered circles, starting at the outer edges (see photo).
  • Place tart on the middle rack of the oven. Bake in 350 degree F-heated oven for 30 minutes.
  • Warm up the strained liquid fig preserves for 20 seconds in the microwave.
  • When tart is ready, remove from oven and brush surface of the pears evenly with the warmed fig liquid.
  • Return to oven and place on the top rack. Broil very briefly; watching carefully until pears gain a nice caramelized look.
  • Remove from oven and let cool for at least 1 1/2 hours before serving.
  • When ready, place the bottom of the tart pan on a wide can of food. Hold the ring part of the pan and carefully slide it downwards (see photo).
  • Cut pear fig tart into eight slices and serve. Enjoy!

1/2 cup whole-grain pastry flour or regular whole wheat flour
1/2 cup all-purpose flour
2 teaspoons granulated sugar
1/8 teaspoon salt
4 tablespoons cold, unsalted butter, cut into small pieces
2 tablespoons lowfat buttermilk
3 tablespoons ice water
3 medium pears
1 tablespoon lemon juice
1 tablespoon plus 1 teaspoon cornstarch
3 tablespoons light brown sugar
1/8 teaspoon ground cinnamon
1 teaspoon honey
1/4 teaspoon boiling water

Steps:

  • To prepare the crust, in a medium bowl whisk together the whole-wheat pastry flour, all- purpose flour, granulated sugar and salt. Add the butter and using two knives or a pastry cutter, cut the butter into the flour mixture until you get a pebbly, course texture. In a small bowl combine the buttermilk and ice water. Using a fork, gradually mix the buttermilk mixture into the flour mixture. Pat the dough into a 4-inch round and wrap in plastic wrap. Refrigerate for 30 minutes.
  • In the meantime, preheat the oven to 425 degrees F, and prepare the filling. Peel the pears, core them and cut into 1/4-inch slices. In a large bowl toss the pear slices with the lemon juice. Sprinkle in the cornstarch, brown sugar and cinnamon and toss until the pears are evenly coated. Set aside.
  • On a lightly floured surface, roll the chilled dough into a large circle about nine inches in diameter. Line a baking sheet with parchment paper, and draping the dough over the rolling pin, transfer to the prepared baking sheet. If the dough breaks at all patch it up with your fingers.
  • Arrange the pears in a mound in the center of the dough, leaving a 2-inch boarder. Fold the border over the filling. It will only cover the pears partially and does not need to be even.
  • Bake the tart for 15 minutes, and then reduce the oven temperature to 350 degrees F, keeping the tart in the oven all the while, and bake for another 40 minutes, until the pears are tender and the crust is golden brown.
  • In a small bowl stir together the honey and boiling water to make a glaze. When the tart is done remove it from the oven and brush the honey glaze all over the top of the fruit and crust. Transfer to a plate to cool slightly. Cut into 6 wedges and serve warm or a room temperature.

1 sheet puff pastry, thawed

2 (15 1/4-ounce) cans pear halves, keeping stem end attached, cut into 1/4-inch thick slices
1/2 cup shredded Cheddar

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl, mix sugar and cinnamon together. Lay puff pastry sheet on a work surface brush with melted butter and sprinkle with half the cinnamon sugar. Cut into 6 even pieces. Fan the pear slices over the puff pastry, using 1/2 a pear for each puff pastry square. Sprinkle tops of pear tarts with remaining cinnamon sugar mixture. Bake until pastry is golden and cooked through, about 20 to 25 minutes.
  • Remove from tart from oven, sprinkle with cheese and bake until cheese melts, 5 minutes more.

1/2 recipe Pate Brisee for Pear Frangipane Tart
1 tablespoon all-purpose flour, plus more for rolling dough
1/2 cup unsalted butter (1 stick)
1/2 cup granulated sugar
1 large egg
1 cup finely ground blanched almonds
3 tablespoons dark rum
1 teaspoon almond extract
3 White Wine-Poached Pears in 1/2 cup poaching liquid, cooled

Steps:

  • Preheat oven to 425 degrees. Roll out dough into a 12-inch round on a lightly floured surface. Fit into a 10-inch tart pan with a removable bottom and fold over to make a double-thick edge. Roll rolling pin over edge of tart pan to trim dough, and pierce bottom of dough all over with a fork. Freeze until firm, about 15 minutes.
  • Cream butter and sugar in the bowl of an electric mixer until light and fluffy. Add egg, ground almonds, rum, almond extract, and flour; beat until smooth. Spread the thick mixture evenly in chilled tart shell and refrigerate while preparing pears.
  • Remove cooled poached pears from poaching liquid and cut in half lengthwise, removing the core and stem. Reserve poaching liquid. Place each half, cut side down, on a cutting board, and cut crosswise into thin slices. Arrange sliced pear halves on frangipane filling around edge of tart, leaving space between each half, and place one half in center of tart. When arranging pears, try to "pull" slices toward center of tart, which will elongate pears a bit and fill the shell better than if the pears were just placed flat. Bake for 10 minutes, reduce oven temperature to 400 degrees, and bake until tart shell is golden brown and frangipane has puffed and browned, 25 to 35 minutes more.
  • While tart is baking, bring reserved poaching liquid to a boil and reduce by half. Brush this glaze lightly over pears immediately after removing tart from oven. Serve at room temperature.

18 ounces frozen all-butter puff pastry, thawed in the refrigerator
All-purpose flour, for dusting
5 to 6 Bosc pears, peeled, halved, and cored
1 tablespoon fresh lemon juice
1 large egg
1/4 cup apricot jam
1 teaspoon Cognac

Steps:

  • Preheat oven to 425 degrees, with rack in the lower third. Unfold (if necessary) puff pastry on a lightly floured surface. Working quickly, roll out dough to a 17-by-13-inch rectangle, slightly less than 1/8 inch thick. Cut off a 1-inch wide strip from each side; set aside
  • Transfer puff pastry to a parchment paper-lined cookie sheet. Lightly brush a 1-inch border of water around the edges of the pastry. Score strips firmly, without cutting all the way through, in a zigzag pattern with a paring knife. Lay pastry strips on edges to create a border. Trim strips to fit, overlapping at corners. Press gently to adhere. Transfer to freezer for 10 minutes.
  • Thinly slice pears crosswise, and brush with lemon juice to prevent browning.
  • Within the borders of the pastry, use the tines of a fork to poke pastry all over, to prevent it from rising. Whisk together egg and 1 tablespoon water in a small bowl. Brush borders with egg glaze. Sprinkle 3 tablespoons sugar evenly within the borders of the pastry. Top with pear slices arranging in rows, filling in any holes with chopped pears. Press gently to flatten slightly. Sprinkle pears with remaining 2 tablespoons sugar. Freeze again for 10 minutes.
  • Bake tart for 10 minutes. Reduce oven to 375 degrees, and continue to bake until crust is puffed and deep golden brown and pears are tender, about 1 hour. If dough under pears begins to rise, use the tip of a paring knife to allow any air to escape. Transfer tart to a wire rack, and let cool completely.
  • Heat jelly with Cognac in a small saucepan until melted, stirring until smooth. Brush over pears. Serve the tart at room temperature.

Pinch salt
1/3 cup light brown sugar, firmly packed
11 tablespoons cold butter (do not use margarine)
2 egg yolks, lightly beaten with a fork
10 to 12 seckle pears or 6-7 bosc pears, peeled, cut in quarters and then into 2 or 3 lengthwise slices
2 tablespoons lemon juice
1/2 cup currants
1/2 teaspoon ground ginger
1 teaspoon cinnamon
1/3 to 1/2 cup white sugar, depending on the sweetness of the pears
2 tablespoons butter
4 tablespoons sugar

Steps:

  • Place the currants in a small saucepan. Cover with water and bring to a boil. Allow them to boil for a minute and turn off the heat. Let them soak for about 5 minutes. Drain thoroughly and set aside. Preheat the oven to 375 degrees F. Combine flour, salt, and sugar, and cut in butter with a dough blender or 2 knives until it resembles a coarse meal. You can also use a food processor. Stir in egg yolks. Knead this mixture until smooth. This takes quite a bit of kneading (you might want to use 2 hands). Press the dough out on the bottom and sides of an 8 or 9-inch springform pan. Neatly finish the rim. In a large bowl, gently combine the pear slices with the lemon juice, spices, sugar, and currants. Carefully arrange the fruits in the crust. Dot with butter, sprinkle with sugar. Bake for about 30 to 40 minutes, or until the crust is golden. Cool and serve.

CHOCOLATE-GLAZED CHOCOLATE PEAR TORTE



Chocolate-Glazed Chocolate Pear Torte image

This dense, moist chocolate cake, made with dried pears, is stunning when decorated with gold leaf. Of course, you can always simply top it with chocolate curls.

Nonstick vegetable oil spray
3/4 cup chopped dried pears (about 4 ounces)
3/4 cup water
1 1/3 cups sugar
3 tablespoons poire Williams (clear pear brandy) or brandy
9 ounces semisweet chocolate, chopped
1/2 cup (1 stick) unsalted butter
1/3 cup finely ground almonds
1/4 cup all purpose flour
6 large eggs, separated
8 ounces semisweet chocolate, chopped
3/4 cup whipping cream
2 tablespoons (1/4 stick) unsalted butter
1 tablespoon poire Williams (clear pear brandy) or brandy
2 3 3/4-inch square sheets edible gold leaf* (optional)

Steps:

  • Position rack in center of oven and preheat to 350°F. Spray 10-inch-diameter cake pan with 2-inch-high sides with nonstick vegetable spray. Line bottom of pan with parchment paper; spray paper. Combine dried pears, 3/4 cup water and 1/3 cup sugar in heavy small saucepan. Simmer mixture over medium-low heat until pears are tender and liquid is syrupy, about 18 minutes. Transfer mixture to processor. Add pear brandy and purée until mixture forms thick paste. Set pear purée aside.
  • Stir chocolate and butter in heavy medium saucepan over medium-low heat until smooth. Add pear purée, almonds and flour. Stir to blend well. Transfer mixture to large bowl.
  • Using electric mixer, beat egg yolks in medium bowl until foamy. Gradually add 1/2 cup sugar, beating until mixture is very pale and thick, about 5 minutes. Using clean dry beaters, beat egg whites in large bowl until soft peaks form. Gradually add remaining 1/2 cup sugar to egg whites and beat until medium-stiff peaks form. Fold egg yolk mixture into chocolate mixture in 3 additions. Stir 1/4 of egg whites into chocolate mixture to lighten. Fold in remaining whites in 3 additions.
  • Pour batter into prepared pan. Cover with foil, sealing foil around pan edges and tenting center to allow torte to rise while baking. Place cake pan in large roasting pan. Add enough hot water to roasting pan to come halfway up sides of cake pan. Bake torte until top and sides are set and firm to touch and tester inserted into center comes out with moist crumbs attached, about 1 hour 45 minutes. Transfer pan to rack. Cool 20 minutes. Run knife around pan sides to loosen torte. Invert torte onto 10-inch-diameter tart pan bottom. Peel off parchment. Cool completely. (Can be made 1 day ahead. Cover loosely; chill.)
  • Stir first 4 ingredients in heavy small saucepan over medium-low heat until smooth.
  • Line baking sheet with foil. Place rack on baking sheet. Transfer torte atop tart pan bottom to rack. Pour 1/2 cup glaze over torte. Using icing spatula and working quickly, smooth glaze over top and sides, covering evenly. Freeze torte until glaze is set, about 10 minutes. Pour remaining glaze over torte and spread over top and sides until smooth. Freeze torte just until glaze is firm, about 15 minutes. (Torte can be made 1 day ahead. Cover and chill. Let torte stand at room temperature 30 minutes before serving.)
  • Using spatula, transfer torte to platter. If desired, press tip of small sharp knife into 1 gold leaf sheet; gently peel off 1-inch free-form piece. Using knife as aid, carefully press gold leaf onto torte. Repeat with remaining gold leaf, spacing pieces decoratively.

My version of a recipe found on a free supermarket recipe card! It's chocolaty, juicy, and scrumptious. The tart is best served warm with creme fraiche.

1 shortcrust pastry crust
6 ½ ounces 70% dark chocolate, chopped
1 ½ cups ground almonds
2 eggs
½ cup superfine sugar
6 ½ tablespoons butter, softened
3 pears - peeled, cored, and quartered

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Roll pastry out to 1/4 inch thickness and use it to line a 9-inch tart dish. Prick the pastry with a fork and then place into the freezer for 20 minutes to prevent pastry from rising during baking.
  • Bake in the preheated oven for 10 minutes. Set crust aside. Reduce oven temperature to 325 degrees F (165 degrees C).
  • Heat a saucepan about 1/3-full of water to a low simmer, about 5 minutes, then reduce heat to lowest setting. Place a heat-proof bowl over the pan in such a way that it does not touch the water. Add chocolate to the bowl and allow to melt. Limit stirring to an absolute minimum to prevent chocolate from separating.
  • Mix ground almonds, eggs, sugar, and butter together in a bowl. Add warm melted chocolate and stir to combine. Pour chocolate mixture into the baked pastry crust.
  • Arrange pears on top of the tart by pressing them into the chocolate mixture.
  • Bake in the hot oven until pastry is golden and mixture is firm, 35 to 45 minutes.

Juice of 1 lemon
4 ripe pears
3/4 cup sugar
4 ounces bittersweet chocolate
3 tablespoons soft unsalted butter
2 large eggs
1/2 cup ground hazelnuts or almonds
3 tablespoons flour
1 9-inch tart shell, baked
1 cup heavy cream, whipped

Steps:

  • Place the water and lemon juice in a saucepan. Peel the pears, cut them in half and core them. As each is peeled and cored, place it in the saucepan, just covered with water.
  • Add one-half cup of the sugar, bring to a simmer and cook gently about 10 minutes, until the pears are just tender. Drain the pears and place them on several thicknesses of paper towel to continue draining.
  • Melt the chocolate over hot water or in a microwave oven. Beat in the butter a tablespoon at a time, then beat in the eggs.
  • Mix one-third cup of the hazelnuts or almonds with the flour and the remaining sugar and stir into the chocolate mixture.
  • Preheat oven to 350 degrees.
  • Sprinkle the remaining hazelnuts or almonds over the bottom of the baked tart shell. Cut each pear half into four thick slices and arrange the slices close together in the tart shell. Spread the chocolate mixture over the pears.
  • Bake 30 minutes. Serve warm or cooled to room temperature with whipped cream on the side.

A sweet pear tart that's great for the fall as pears are in season. Based off of a recipe for apple tart found at World's Healthiest Foods website. This recipe does have alcohol in it, but if you would prefer not to use any substitute an extract (such as vanilla or almond) and water with a little bit of brown sugar. Cook time includes the time to allow it to chill in the refrigerator, about 1 hour. Note: I made this trying the extract mix and it came out lovely! 1/2 cup of water, 1 teaspoon each of vanilla and almond extract, dash of nutmeg, and three teaspoons of brown sugar.

2 1/2 cups walnuts
1 1/2 cups dates
3 pears
1 lemon
2 cups water
1/4 teaspoon cinnamon
1/8 teaspoon allspice
1/8 teaspoon ground cloves
2 tablespoons honey
1/2 cup brandy
1/4 cup slivered almonds

Steps:

  • Combine walnuts and dates in food processor. Make sure you remove pits if dates have them and cut off end where stem was. Process until well mixed and ground, but not smooth. About 40 seconds. It should be a coarse texture when done. Press evenly into a 9 inch tart pan. Set in refrigerator while making the filling.
  • Squeeze the juice out of the lemon and combine with water in a bowl.
  • Slice pears by cutting into quarters. Cut out core and slice crosswise in 1/4 inch thick slices. Put into lemon water while you finish cutting pears. Drain well in colander when done.
  • Place pears in a large skillet with rest of the ingredients (excluding almonds) and cook for about 10 minutes, stirring frequently on medium heat.
  • Remove pears with a slotted spoon from hot pan to a bowl and cool completely.
  • Add in almonds and then reduce liquid to about half the volume and cool separately.
  • Spread pears evenly over crust. Brush syrup over pears.
