PEAS AND MACARONI
Simple, filling, delicious meal

Steps:
- Heat oil over medium heat in a large pot or dutch oven.
- Add minced garlic and keep it moving until light, golden brown.
- Add tomato sauce to the oil and garlic and stir to combine.
- Stir in tomato paste, breaking up and combining with sauce and oil. Using the tomato paste can, add three cans of water. Stir until fully combined.
- Place lid on pot, and lower the heat to simmer. Stir every ten minutes or so, for about 1 hour. Gravy is ready when it turns dark red and the oil can be seen separating on the top.
- Boil water in large pasta pot. Once at a rolling boil, generously salt the water, then, breaking the pasta into three pieces, boil until "al dente"
- Drain the pasta, reserving some of the salty starch water from the pot - enough to barely cover the pasta.
- Empty the can of peas, water and all, into the pot with the macaroni. Stir to combine.
- Pour the gravy into the pot with the peas and pasta. Enjoy!
MACARONI AND PEAS
This is great comfort food. I love this on a cold winter evening with some bread and a glass of red wine.

Steps:
- Saute onions in olive oil. When onions are soft, saute garlic quickly.
- Add tomato sauce and 1/2 can water.
- Add seasonings to your taste. (I prefer a lot of red pepper to make the sauce hot).
- Simmer covered for about 45 minutes. Add peas during last 20 minutes of cooking.
- Prepare macaroni (elbows or small shells) as directed on box.
- Serve in a big bowl with lots of sauce. I prefer it as a soupy pasta. Add grated cheese. Delicious with bread and a glass of wine.

PASTA ALLA PAMELA WITH SHRIMP AND PEAS

Steps:
- Bring a big pot of water to a boil. Salt liberally.
- In a large bowl, toss the shrimp with 1 teaspoon salt, 1/2 teaspoon pepper and the baking soda and marinate in the fridge for 15 minutes (this keeps the shrimp moist with a nice crust on the outside).
- Add the pasta to the pot of boiling water and cook according to the package instructions. Drain, reserving about 1 cup of the pasta cooking water.
- Meanwhile, heat a large skillet over medium-high heat until hot. Add the oil to the skillet, then arrange the shrimp in a single layer in the oil. Reduce the heat to medium. Cook, undisturbed, until a nice crust is formed, about 2 minutes. Flip the shrimp, then add the butter and garlic. Cook gently until fragrant, about 1 more minute. Add the wine to deglaze and let simmer for 1 more minute. Add the peas and pasta. Toss to combine. Taste for seasoning and adjust with salt and pepper. Add a generous amount of Parmesan and toss again, adding the pasta water as necessary.
- Transfer the pasta to a large serving bowl. Garnish with more Parmesan and the parsley. Serve.
PASTA PEAS
This is a great and very quick recipe that my grandmother and my mom used to make for me. I make it for my family now. Enjoy!

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- While pasta water is boiling, heat olive oil in a large skillet over medium heat. Cook onions in oil until tender. Stir in salt, pepper, tomato sauce, water and peas. Reduce heat and simmer until pasta is done.
- Stir cooked pasta into tomato mixture. Increase heat and bring to a boil briefly. Remove from heat, stir in cheese, cover and let rest 10 minutes. Serve.

This dish is very economical, fast and really tasty. Made this when I was first married and money was very tight.(we were in the military). I still make it a lot, using different kinds of beans.

Steps:
- Start the water for the pasta.
- Meanwhile,heat a little of the oil in a sauce pan.
- Add the onions and cook until golden.
- (DO NOT BURN).
- Add the herbs, peas,and 1/2 cup of water and the rest of the oil.
- Keep warm.
- Drain the cooked pasta and put it in a bowl.
- Add the peas and mix.
- Add the rest of the water, if needed.
- I have also used Great Northern or Pork and beans--all undrained.
- You may add a diced tomato to the onions and peas, if you like.

MACARONI SALAD WITH PEAS
I love macaroni salad, but wanted something a bit lighter. I looked through a lot of recipes and combined the best of all, and added my special touch--this was a big hit even among folks who don't normally like macaroni salads. The peas are the real surprise.

- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain, rinse, and transfer to a bowl.
- Combine mayonnaise, sour cream, vinegar, sugar, dry mustard, salt, and pepper for dressing in a small bowl; mix well. Pour over pasta.
- Add dressing, green onions, celery, bell pepper, peas, and parsley to the pasta. Mix until well combined.
- Chill in the refrigerator for 2 to 3 hours before serving.

MAC AND CHEESE AND PEAS
Steps:
- Bring a large pot of water to a boil. Season generously with salt. Cook the pasta according to the package directions. When you have 1 minute of cook time left, pour in the frozen peas. Drain and set aside.
- Melt the butter in a large high-sided 10-inch saute pan over medium heat. Stir in the flour and cook until golden brown, about 2 minutes. Slowly whisk in the milk. Reduce to low heat, bring to a simmer and cook until it becomes a thin gravy, about 5 minutes. Add the cream cheese and break up until smooth. Add the white pepper and ground mustard. Remove from the heat, add the bourbon if using and whisk to combine until fully incorporated. Stir in the Cheddar and American cheeses and cook until all the cheese is melted, 2 to 4 minutes. Taste and add salt as needed.
- Add the cooked pasta and peas to the cheese sauce and stir to thoroughly combine. Taste again and salt and pepper as needed before serving.
