Mini Pecan Pies, or Pecan Hand Pies, are the perfect Thanksgiving dessert recipe. Freezer friendly and easy to make, your family will LOVE these treats.

1 cup light brown sugar, packed
2/3 cup light corn syrup
1/3 cup unsalted butter
1 1/2 cups chopped pecans
1 tsp vanilla extract
1/2 tsp kosher salt
2 boxes refrigerated pie crust *see notes
1 egg, divided

Steps:

  • In a small saucepan, over medium heat, combine brown sugar, corn syrup, and butter. Stir continuously until butter melts and mixture begins to boil. Boil until bubbly for about 2 full minutes. Remove from heat.
  • Stir in Fisher Nuts chopped pecans, vanilla extract, and kosher salt. Set aside to cool while preparing the pie crust.
  • Either making a homemade pie crust or using refrigerated dough, unroll crust and use a 4-inch circle cutter to create hand pies. Re-roll scraps of pie crust to get approximately 24 circles.
  • In 2 small bowls, separate one egg...with the whites going into one bowl and the yolk in the other bowl. Whisk each one separately. Set aside.
  • Using a 1 Tbsp scoop, spoon warm pecan pie filling onto each pie crust circle. Use a pastry brush, and brush the edges of the pie crust with the egg WHITES.
  • Fold each pie crust in half and pinch edges. Use a fork to poke the top of each hand pie.
  • Brush the tops of each hand pie with egg YOLK. Place each hand pie on a parchment paper lined cookie sheet.
  • In a preheated 425 degree F oven, bake hand pies for about 15 minutes, until lightly browned.
  • Remove and cool on a wire rack. Drizzle with caramel and chocolate if desired.

1/2 cup cold unsalted butter
1 1/4 cups flour
1 Tbsp sugar
1/2 tsp cinnamon
pinch of nutmeg
1/2 tsp salt
1/4 cup buttermilk
1-2 Tbsp vodka
1/2 cup light brown sugar
1/2 cup pecans, finely chopped
1/8 tsp salt
1 1/2 Tbsp unsalted butter, melted
1/2 tsp vanilla extract
1 large egg yolk
1 tsp water
2 tsp sugar (for sprinkling)

Steps:

  • For the crust, grate 1/4 cup butter into a small bowl; cut remaining 1/4 cup butter into small cubes and place in a second bowl; chill bowls in freezer for 15 minutes. Whisk together flour, sugar, cinnamon, nutmeg, and salt in a medium bowl; place bowl in freezer to chill for 15 minutes. Chill buttermilk and vodka in freezer for 15 minutes.
  • Sprinkle cubed butter over chilled flour mixture and toss with a spatula to coat. Use a pastry blender to cut in butter until the biggest pieces are the size of peas; fold in grated butter. Drizzle buttermilk over flour mixture; use a spatula to gather dough together until it forms large clumps. If needed, add vodka 1 tablespoon at a time, then gently knead just to form a ball. Wrap dough in plastic and flatten slightly to form a disc. Chill in the refrigerator at least 1 hour (or up to 2 days, or place in a freezer bag and freeze 1 to 2 months).
  • Line a baking sheet with parchment paper. Place dough on a floured board and dust dough with flour. Roll out dough until dough is a 12-inch circle, 1/8″ thick (If dough starts to stick, use a floured bench scraper to gently lift dough from board). Use a 3 1/2-inch round biscuit cutter to cut out 12 circles of dough (re-roll scraps once). Place circles on baking sheet and chill in the refrigerator for 15 minutes. Preheat oven to 400°F.
  • For the filling, combine brown sugar, pecans, and salt in a small bowl. Add melted butter and vanilla; fold in until combined. To assemble hand pies, whisk together egg yolk and water in a small bowl. Brush chilled circles lightly with egg wash; top with 1 tablespoon filling. Fold circles over and crimp edges with a fork to seal. Chill assembled pies in the refrigerator for 10 minutes.
  • Just before baking, vent pies with a sharp knife, brush lightly with egg wash, and sprinkle with sugar. Bake for 18 to 19 minutes, until golden brown. Cool pies on baking sheet for 2 minutes, then transfer to a wire rack to cool completely.

  • In a large (preferably 12-cup) food processor, combine the flour, salt and sugar. Add the butter and pulse in 1-second bursts until the mixture resembles coarse meal. Drizzle the ice water over the dough and pulse in 1-second bursts until it just comes together. Turn the dough out onto a work surface, gather up any crumbs and pat into 2 disks. Wrap the disks in plastic and refrigerate until chilled, about 1 hour.
  • On a floured work surface, roll out 1 disk of the dough to a 16-inch square, a scant 1/4 inch thick. Using a small pot lid or plate (5 1/2 to 6 inches) as a template, cut out as many dough rounds as possible. Repeat with the second disk of dough. Reroll the scraps, chilling if necessary, for a total of 12 dough rounds. Transfer the pastry rounds to parchment paper–lined baking sheets and refrigerate until chilled, about 20 minutes.
  • Preheat the oven to 375°. Spread the pecans on a baking sheet and toast for about 8 minutes, until browned and fragrant. Let cool, then coarsely chop the nuts.
  • In a medium saucepan, combine 1 cup of the sugar with 1/2 cup of water. Cook over moderate heat, swirling the pan gently once the caramel begins to form, until the caramel is medium-amber, about 9 minutes. Remove from the heat and whisk in the butter, cream, 1 teaspoon of the vanilla extract and a pinch of salt. Transfer 1 cup of the caramel to a large bowl and let cool slightly. (Save any remaining caramel for later use.) Whisk the remaining 1 cup of sugar and 1 teaspoon of vanilla extract and the corn syrup into the caramel in the bowl. Whisk in the 4 unbeaten eggs until smooth. Add the pecans and a generous pinch of salt.
