Steps:
- In a large mixing bowl, combine all-purpose flour, shortening, sugar, and salt. Blend together with a pastry cutter until crumbly.

AUNT RUTH'S FAMOUS BUTTERSCOTCH CHEESECAKE
Aunt Ruth was our nanny when I was little and made this cheesecake often. Since it had to chill overnight, it was torture when my sister and I had to wait until the next day to have a piece. Steps:
- Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan. In a small bowl, combine cracker crumbs and sugar; stir in butter. Press onto the bottom of prepared pan. Place pan on a baking sheet. Bake at 325° for 10 minutes. Cool on a wire rack., In a small bowl, whisk the milks and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set., Meanwhile, in a large bowl, beat cream cheese until smooth. Beat in pudding and vanilla. Add eggs; beat on low speed just until combined. Pour over crust. Place springform pan in a large baking pan; add 1 in. of hot water to larger pan. , Bake at 325° for 65-75 minutes or until center is almost set and top appears dull. Remove springform pan from water bath. Cool on a wire rack for 10 minutes. , Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Garnish with whipped cream and butterscotch candies if desired.

Steps:
- In large bowl mix flour and salt. Cut in shortening with two butter knifes.
- In separate bowl, mix together egg, vinegar, and water. Drizzle wet mixture into dry mixture, cutting it in.
- Roll out dough, and fit into two 9 inch pie pans.
- Bake at 425 degrees F (220 degrees C) for 12 minutes.

- In a 6-quart Dutch oven, bring 3 quarts water to a rolling boil. Peel sweet potatoes, then cut into small pieces. Place potatoes into boiling water; return to a boil and cook until fork tender, about 10 to 15 minutes. Drain and set aside. Preheat oven to 350 degrees F. Using a potato masher or electric hand mixer, cream butter into sweet potatoes. Add eggs and milk. Combine sugar with cornstarch; add to potato mixture along with vanilla and lemon flavoring. Pour into pie shells. Bake until center is set and top is golden brown, about 45 to 50 minutes. Yield: 2 deep dish pies
AUNT JENNIE'S PIE CRUST (WITH OIL)
Legend has it that my Great Aunt Jennie used to make the best pies with oil. As I kid I'm not sure I taste tested them but she had a gift for baking. I just ran across her recipe for pie crust. I'll be making it soon, but in the mean time.... give it a try and please rate.

Steps:
- Preheat oven to 425°.
- Mix together oil and milk.
- Mix dry ingredients, whisk to combine.
- Mix all ingredients well to form a soft dough.
- Dampen table and put a strip of wax paper over the damp area.
- Take 1/2 of dough and place another piece of waxed paper over the dough.
- Roll to desired size and place in pie plate. Roll the second crust.
- Add desired fruit filling, canned or fresh.
- Top with second pie crust. Brush lightly with milk and sprinkle with sugar.
- Make a few small slits with a knife. Trim off excess dough. cover with foil to prevent burning.
- Bake for 20 minutes at 425°, remove foil.
- Reduce oven temperature to 400° and bake 20 minutes longer, until crust is golden brown.

- Combine sugar& cornstarch.
- Stir in rhubarb& water.
- Cook& stir over medium heat until thickened.
- Reduce heat, cook 2-3 minutes longer.
- Add food coloring.
- Spread on graham wafer crust and let cool.
- Fold marshmallows into whipped cream and spoon over rhubarb mixture.
- Prepare pudding according to package instructions and spread over all.
- Sprinkle with graham wafer crumbs.
- Chill (Best chilled overnight).
