Easy Thai Pork Stir-Fry image

Easy Thai Pork Stir-Fry is a quick meal packed with your favorite Thai flavors. Ground pork is sautéed along with bell peppers, carrots and bok choy along with a sauce that is both spicy and sweet. This stir-fry works nicely with rice, noodles or in lettuce wraps.

2 Tablespoons olive oil
1 to 1 1/2 pounds ground pork
1 cup sweet onion, chopped {about 1/2 of a medium onion}
3 garlic cloves, minced
1 bell pepper, seeds removed, diced
1 cup matchstick carrots
3 cups bok choy {or green of your choice}
2 teaspoons lime juice
2 Tablespoons freshly grated ginger
2 Tablespoons soy sauce
2 teaspoons red chili sauce
2 teaspoons red chili garlic sauce {I use Huy Fong, Chili Garlic Sauce}, more or less for spiciness
Salt and pepper to taste
Freshly chopped cilantro
Chopped green onion
Sesame seeds
Peanuts
Serving options
White or brown rice
Noodles
In a lettuce wraps

Steps:

  • Cook the rice according to the package and set aside. While the rice cooks heat the 2 Tablespoons olive oil in a large skillet and add the onion, sautéing for 2 minutes. Add the garlic and the bell peppers and continue to sauté for 2 more minutes. Add the ground pork and the matchstick carrots and continue to sauté until the pork is browned, about 6-8 minutes. Add the fresh lime juice, ginger, soy sauce, chili garlic sauce and stir. Mix in the bok choy {or green of your choice} and simmer until the bok choy is wilted, about 2 minutes. Add salt and pepper to taste along with crushed red pepper if you like a little spice. Garnish with fresh cilantro, chopped green onion and sesame seeds. Serve over a bed of your favorite rice, with rice noodles or even in a lettuce wrap.

½ teaspoon garlic powder
½ teaspoon finely chopped fresh ginger or 1/4 teaspoon ground ginger

½ teaspoon chili powder
1 ½ pounds pork loin, cut into bite-size strips (see Tips)
2 cups broccoli florets
1 cup thinly sliced carrots
1 cup cauliflower florets
2 tablespoons white vinegar
1 tablespoon curry powder
2 cups hot cooked brown rice

Steps:

  • In a very large skillet, combine oil, soy sauce, garlic powder, ginger, pepper, cardamom and chili powder. Add half of the pork; stir-fry pork over medium-high heat for 3 minutes. Using a slotted spoon, remove pork from skillet. Repeat with the remaining half of the pork. Return all of the pork to the skillet.
  • Add broccoli, carrot, cauliflower, vinegar and curry powder to pork mixture. Bring to boiling; reduce heat. Cover and simmer for 3 to 5 minutes or until vegetables are crisp-tender, stirring occasionally.
  • Serve pork and vegetables over brown rice.

Thai pork fried rice with bean sprouts for some crunch. Make sure all of the ingredients are at room temperature before starting. Cold ingredients cool down the wok, which makes it difficult to stir-fry properly. Make sure the rice is not moist. I use rice that is was cooked about three days prior. If you're cooking the rice just to make this dish, use 10 to 15% less water.

3 tablespoons peanut oil
2 cloves garlic, minced
¾ pound boneless pork chops, cut into bite-size pieces
1 cup leftover cooked rice, preferably several days old
2 teaspoons soy sauce
1 teaspoon fish sauce
1 cup mung bean sprouts
½ small white onion, chopped
10 grape tomatoes, halved
3 dried Thai chile peppers, or more to taste
¼ cup chopped fresh cilantro
1 egg, beaten
1 green onion, chopped
¼ teaspoon ground white pepper
½ lime, juiced

Steps:

  • Heat a large wok over high heat until small wisps of smoke rise from the wok. Pour peanut oil into the wok and quickly stir garlic into the hot oil, followed by pork. Cook and stir until pork is browned and no longer pink inside, about 5 minutes.
  • Stir rice into pork mixture; add soy sauce and fish sauce. Cook and stir mixture for about 30 seconds. Mix mung bean sprouts, onion, grape tomatoes, dried chiles, and cilantro into rice. Cook and stir until mung bean sprouts are slightly wilted and translucent, 2 to 3 minutes.
  • Push the fried rice up the sides of the wok, leaving a bare spot in the center. Pour beaten egg into the bare spot and scramble egg until firm and no longer runny, about 1 minute. Stir fried rice with scrambled egg, sprinkle with green onion and white pepper, and remove from heat. Squeeze lime juice over the top and toss rice lightly to combine. Remove dried chiles before serving.

1 tablespoon peanut oil
2 tablespoons red curry paste
1/2 lb pork tenderloin, sliced thin stick in freezer for awhile to do this
1 can coconut milk
1 lime, grate the zest,keep the juice
2 tablespoons grated fresh ginger
2 tablespoons Thai fish sauce
1 teaspoon sugar
2 serrano peppers, seeded and sliced thin
1 habanero pepper, same thing
1 (14 ounce) can cut baby corn
3 cloves garlic, chopped fine
1/4 cup basil leaves, chopped
1/4 cup cilantro leaf, and stems chopped

Steps:

  • Heat wok to medium high, add oil, add curry paste, stir fry until heat hits you, up heat and add pork, continue stir frying, for a couple of minutes, then stir in coconut milk, toss in lime zest, ginger and garlic, bring to boil, cut heat and simmer until pork is tender.
  • Stir in fish sauce, sugar, peppers and baby corn, drained-- if this is too runny at this point add 1 tbls corn starch mixed in a little water,cook until thickened then add basil and cilantro leaves-- Serve with any good rice, but fragrant jasmine rice is best with any Thai dish.

This is a great quick recipe that you can just throw together and tastes wonderful. The amounts listed below I served for 2 people but I made no rice to go with it and it was perfect amount, apart from the fact there was a little to much corn for 2, it would be fine for three. If you prefer to serve it over rice it would feed 3. If you wish to do this for 4 I would up the pork amount to 750g and keep the other ingredients the same.

2 tablespoons peanut oil
500 g pork, strips (I bought pork tenderloin and sliced it into strips.)
5 tablespoons green curry paste (or adjust for your personal taste.)
125 g fresh baby corn, halved (It came in that size package I would lower to 90-100g for 2 people if not serving dish with rice 50-)
1 medium red capsicum, sliced thinly
200 g baby spinach leaves
1/3 cup coarsely shredded fresh basil
1 1/2 tablespoons lime juice
2 teaspoons fish sauce
1 teaspoon grated gingerroot (fresh or jar is fine.)
1 teaspoon sugar
1/2 cup coconut milk (I used just over about 130ml, if you want to serve over rice, I would add more milk as there won't b)

Steps:

  • Heat oil in a large pan or wok, stir-fry pork until browned all over, add paste stir to coat.
  • Add lime juice, fish sauce, ginger, sugar and milk stir-fry a few minutes to cook pork through.
  • Add capsicum and corn and stir-fry about 4 Min's, add spinach and basil, stir-fry tossing until leaves are just wilted.

4 garlic cloves, chopped
1 small red onion, sliced
2 carrots, julienned
1 small red pepper, julienned
1 tablespoon oil
1 lb boneless pork chop, thinkly sliced
1 3/4 cups chicken broth
1/3 cup fish sauce
3 tablespoons peanuts, chopped
3 tablespoons brown sugar
4 ounces rice noodles
1 tablespoon cornstarch
1/4 cup water

Steps:

  • Saute garlic, red onion, carrots and red pepper in oil in nonstick skillet over high heat for 5 minutes.
  • Add pork, cook for 3 minutes or until no longer pink.
  • Add chicken broth, fish sauce, peanuts and brown sugar.
  • Add rice noodles, broken in half (submerge in liquid).
  • Cover and cook over low heat for 6 minutes.
  • Stir in cornstarch mixed with water; cook until thickened.
