Easy Apple Cake image

After testing many apple cake recipes with fresh apples, this old-fashioned cake is moist, dense and down-home delicious. 1-3/4 cups sugar
1 cup vegetable oil
3 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/4 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon baking soda
2 cups finely chopped peeled tart apples
1 cup chopped walnuts
1-1/4 cups whipped topping

Steps:

  • Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts., Transfer to a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 35-45 minutes. Cool on a wire rack. Serve with whipped topping.

2 eggs
1 cup vegetable oil
2 cups white sugar
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla extract
4 cups diced apple without peel

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour one 9x13 inch cake pan.
  • Beat vegetable oil and eggs until foamy. Add the sugar, flour, ground cinnamon, baking, soda, salt, and vanilla and mix well. Stir in the diced apples. Pour batter into prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes. Cool cake in pan for 10 minutes. Cake needs no frosting.

2 cups peeled, cored and chopped apples
1/2 cup packed light brown sugar
1/2 cup all purpose flour

1/2 cup packed light brown sugar
1/2 teaspoon vanilla extract
2 tablespoons water

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.
  • In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.
  • To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.
  • To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.

10 tablespoons (1 1/4 sticks) unsalted butter, melted, plus more softened for pans
2 tart apples (1 pound total), such as McIntosh or Granny Smith
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon granulated sugar
1 cup plus 1 tablespoon packed light-brown sugar
1 cup all-purpose flour
1/2 teaspoon coarse salt
1 large egg, lightly beaten
1 cup walnut halves (about 3 1/2 ounces), toasted and coarsely chopped

Steps:

  • Preheat oven to 350 degrees. Butter three 5 3/4-by-3 1/4-inch nonstick straight-sided mini loaf pans. Peel, core, and cut apples into 1/4-inch-thick wedges; transfer to a medium bowl. Add spices and granulated sugar; toss. Arrange in a line down center of pans so that apples stand upright.
  • Whisk brown sugar, flour, and salt in a large bowl. Add egg and butter; whisk until just combined. Stir in walnuts. Pour batter over apples in pans. Smooth top.
  • Bake until tops are deep golden brown and a cake tester inserted into centers comes out clean, 35 to 40 minutes. Let cool slightly in pans on wire racks, about 25 minutes. Run a knife around edges of cakes to loosen, and turn out each onto a large plate. Using a serrated knife, cut each cake into 6 slices, and serve.

1/4 cup orange juice
1 tablespoon cinnamon

3 cups chopped apples (peeled, I use Gala, Jonathon, or McIntosh)

1 cup chopped pecans
1 cup unsweetened dried shredded coconut

Steps:

  • Preheat the oven to 325 degrees. Generously spray a Bundt or tube pan.
  • Dump all ingredients into a large mixing bowl (don't you just love one bowl recipes?) folding in the apples nuts, and coconut last.
  • Pour batter into pan and bake approximately 1 1/2 hours.
  • Cool on a wire rack. When serving dust VERY LIGHTLY with powdered sugar (this should be for looks, not the sweet taste).
