PECAN TOFFEE TASSIES
A nutty and caramel-y bite-sized treat

Steps:
- Preheat oven to 350 °F. Unroll piecrusts onto a lightly floured surface. Roll into 2 (15-inch) circles. Cut out 48 circles using a 1 3/4-inch fluted or round cookie cutter, re-rolling dough as needed. Place in 1 3/4-inch muffin pans, pressing on bottom and up the sides of each of the mini-muffin cups. Combine melted butter, brown sugar, flour and eggs in a large bowl, mixing well. Add vanilla. Stir in pecans and brickle chips. Spoon pecan filling evenly into pie shells. Bake for 25 minutes, or until filling is set and crust is lightly browned. Cool in pans on wire racks.
GRANDMA'S PECAN TASSIES
My grandma used to make these every Christmas. She passed the torch to me, and now my family asks me to make these every Christmas. They are delectable.

Steps:
- Combine 1 cup butter and cream cheese in a bowl using an electric mixer on medium speed until creamy. Add flour gradually, beating at low speed. Shape mixture into 48 balls and place on a baking sheet. Cover and chill in the refrigerator for 1 hour.
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease the cups of a mini-muffin pan. Press 1 chilled dough ball into each cup and shape into a tart shell.
- Whisk brown sugar, eggs, 2 tablespoons butter, vanilla extract, and salt together in a bowl. Stir in 1 1/4 cups pecans. Spoon mixture into tart shells. Top with the remaining pecans.
- Bake in the preheated oven until edges of cookie shell are delicately brown, 12 to 15 minutes.
- Cool in pans on wire racks for 10 minutes. Gently remove from pans and cool completely on wire racks, about 20 minutes.

TOFFEE PECANS
These Toffee Pecans (also referred to as butter toffee pecans, candied pecans, praline pecans and caramelized pecans) come together on the stovetop in about 5 minutes. They're perfect for snacking, as a holiday gift and for tossing into salads.

- Line a cooking sheet with parchment paper.
- Place the butter in a large pot over low heat until melted.
- Increase your heat to medium-low and add the sugars, salt, and vanilla.
- Stir briskly until the mixture thickens.
- Add the pecans and stir constantly so the nuts are coated evenly. Continue to stir until the sugar begins to caramelize and turns brown (approximately 5-7 minutes).
- Pour the pecan mixture onto the cookie sheet and separate the nuts with two forks.
- When the nuts have cooled completely, place them in an airtight container. They will stay good for 3-5 days.

BESS LONDON'S PECAN TASSIES
Steps:
- With an electric mixer, beat the 1/2 cup butter and the cream cheese until smooth. Add the flour and beat until fully combined. Cover the bowl with plastic wrap and chill in the refrigerator for 1 hour.
- Preheat the oven to 325 degrees F. Spray a 24-cup mini-muffin pan with cooking spray.
- In a large mixing bowl, whisk together the melted butter, egg, brown sugar, vanilla and salt until smooth. Set aside.
- Shape the chilled dough into 24 balls, about 1 inch in diameter. Press each ball into a cup of the muffin pan, spreading evenly and up the sides, then spoon 1 teaspoon of the pecans into each muffin cup. Fill each cup with the egg mixture until evenly distributed, about 1 teaspoon in each. Bake until the filling is set, about 25 minutes. Cool on a wire rack for 10 minutes, and then remove from the muffin pan.

- In a small bowl, beat butter and cream cheese until smooth; gradually beat in flour. Refrigerate, covered, 1 hour or until firm enough to roll., Preheat oven to 375°. - Preheat the oven to 350 degrees F.
- Spray or grease a 15x10 pan.
- Unroll both pie crusts and press into pan and 1/2 inch up sides.
- Combine the melted butter, brown sugar, flour, and eggs in a large bowl, mixing well.
- Add the vanilla.
- Stir in the pecans and heath bar toffee chips.
- Spoon the pecan filling evenly over the pie crust.
- Bake for 25 minutes, or until filling is set and crust is lightly browned.
- Cool in pan on wire racks. Cut in to bars.
