PENNE WITH VODKA SAUCE

Steps:
- Bring a large pot of salted water to a boil. Add the penne and cook as the label directs. Reserve 1/2 cup cooking water, then drain the pasta. Empty the tomatoes into a bowl and crush with your hands.
- Meanwhile, melt the butter in a large skillet over medium heat. Add the shallots and cook, stirring occasionally, until slightly softened, about 3 minutes. Add the garlic and red pepper flakes and cook, stirring, 30 seconds. Remove from the heat and stir in the vodka, tomatoes and salt to taste. Return the skillet to medium heat and simmer, stirring often, until the alcohol cooks off, about 7 minutes. Stir in the heavy cream and cook until the sauce thickens slightly, about 3 minutes. Stir in the parmesan and basil.
- Add the pasta to the sauce and toss to combine, adding some of the reserved cooking water to loosen, if needed. Season with salt. Serve topped with more parmesan and basil.
PENNE AND VODKA SAUCE
One of the best and easiest recipes I have tried. You can find pancetta at any good Italian deli, try not to substitute as it makes the dish. This is also very good with shrimp added in the last few minutes of simmering. If you like spice, add a dash or 2 of red pepper flakes.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Meanwhile, melt butter or margarine in a large skillet over medium heat. Add pancetta, and saute until lightly browned. Add vodka and stir until it is reduced by half, about 4 to 5 minutes. Stir in tomato sauce and cream. Simmer uncovered for 10 to 12 minutes. Stir every few minutes.
- Stir in pasta, and heat through. Serve with Parmesan cheese.

PENNE WITH SPICY VODKA TOMATO CREAM SAUCE
A nice change from your typical tomato sauce! If you're worried about the alcohol, don't be! It cooks off and cannot be tasted. It simply helps to enhance the flavors.

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In large skillet, heat oil over moderate heat. Remove casing from sausage and add to skillet. Cook, breaking up the meat, until brown. Add garlic and red pepper and cook, stirring until garlic is golden brown.
- Add tomatoes and salt; bring to boil. Reduce heat and simmer 15 minutes.
- Add vodka and cream and bring to boil. Reduce heat to low and add pasta, toss for 1 minute. Stir in fresh parsley and serve!

PENNE & SAUSAGES A LA VODKA
This recipe is an original creation specifically for the cooking contest. I used the mild Italian sausages but you could increase the heat by using the spicy type & adding more cumin. I served it with Caesar salad & Garlic bread. My DH just loved the sauce & wants me to make this dish again!!

Steps:
- Prick sausage casings several times& cook in lightly salted, boiling water for 3 minutes.
- Drain, cool& slice into rounds about 1/2 inch thick.
- Melt butter& oil in a very large skillet.
- Add sausages, onion & garlic; cook on medium heat until sausages are lightly browned.
- Add peppers & zucchini & cook for 2 minutes.
- Bring a large pot of lightly salted water to a boil.
- Add penne & cook, according to package directions, until al dente (approx 9 minutes).
- Drain well.
- In the meantime, add tomato sauce, salt, pepper & cumin to the sausage mixture.
- Simmer, stirring occasionally, for about 6 minutes or until sauce starts to thicken.
- Add vodka & cook for another minute, stirring constantly.
- Add the cream, nutmeg& Parmesan; simmer for 2 minutes, stirring constantly. Add pasta to skillet; toss or stir well and serve sprinkled with parsley & additional Parmesan.

PENNE AND SAUSAGE WITH VODKA SAUCE
Steps:
- Bring large pot of water to boil. Add sausage and boil for 10 minutes. Remove links and set aside. In large skillet, melt butter and add onion and pepper. Cook over medium-low heat until onion is translucent. Stir in tomatoes with liquid and simmer for 1 hour. Add sausage and vodka and continue to simmer for 1 hour. Turn heat to high, add cream and tomato paste and stir constantly for ten minutes. Reduce to simmer and continue to cook for 30 minutes. Preheat oven to 450 degrees. Bring 4 quarts of water to boil in large pot. Cook pasta until molto al dente. Toss pasta and sauce with 2/3 cheese in casserole dish. Bake for 10 minutes. Serve with 1/3 cup cheese on top.
PASTA WITH VODKA SAUCE AND SAUSAGE
Steps:
- Bring a medium saucepan of salted water to a boil. Add the pasta and cook until just al dente, 5 to 6 minutes. Drain in a colander and return to the saucepan.
- Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the sausage and cook, stirring, until browned and all pink has disappeared, 3 to 4 minutes. Add the onions, salt, and red pepper flakes and cook, stirring, until the onions are soft and golden, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the tomatoes and cook, stirring, until thick, about 2 minutes. Add the vodka and cook until the sauce reduced by half, 3 to 4 minutes. Stir in the cream and cook until the sauce thickens, about 2 minutes. Stir in the basil and remove from the heat.
- Toss the sauce with the pasta to coat evenly and transfer to a pasta bowl for serving. Top with cheese and sprig of basil and serve immediately.
SPICY SAUSAGE VODKA CREAM SAUCE
If you love chunky home-made sauces and sausage then THIS is for you!! I love making this one and placing it in the Crock-pot for the last simmer time, an hour makes it really thick.

- Bring large pot of salted water to a boil, add pasta and cook al dente.
- In large skillet, heat oil over moderate heat. Remove casting from sausage and add to skillet. Cook breaking up the meat, until brown. Drain if necessary.
- Add onions, garlic and red & chili pepper to and cook, stirring until garlic and onion are golden brown.
- Add tomatoes and salt; bring to a boil. Reduce heat and simmer 30 minute (cook longer to thicken).
- Add vodka and cream and bring to boil. Reduce heat to low, simmer 30 more minute
- Top plate of penne with cream sauce and add fresh parsley!
