PEPPERCORN STEAK WITH HERBED BLUE CHEESE FROM SPARKPEOPLE RECIPE
This steak was so wonderful good - cooking time will depend on how thick your serving of Steak is. The pepper was a bit overwhelming for me, but for hubby it was just right !

- Preheat oven to 375 degrees.
- In a small bowl combine the blue cheese and parsley and use a wooden spoon to combine, cover and refrigerate.
- Spread the cracked peppercorns onto a plate. Put the meat dry and roll in the peppercorns to coat on all sides.
- Place a cast-iron skillet or heavy-bottomed ovenproof saute pan over moderately high heat. ( do not use nonstick cooking spray or any type of oil to prepare the pan).
- Once hot, place steaks into the dry pan and sear the top and bottom of each steak. 1 to 2 minutes per side, to sear the steak. Do not attempt to pull meat from pan - it will release easily once completely seared. If there is any resistance it is not done yet.
- Place 1 Tablespoon of blue cheese mixture on top of each steak and transfer the pan to the oven. Roast 6 to 7 minutes for rare, 7 to 8 minutes for medium.
- NOTE: To crack peppercorns pour desired amount into a sturdy plastic bag and then spread them flat on a towel to protect counter top and pound with flat side of mallet, rolling pen, or bottom of heavy pan into a coarse "grind".
