Fettuccine Alfredo with Ham and Peas! This rich and creamy dish is a family favorite meal. Easy to make and delightfully satisfying!

1 pound fettuccini pasta (cooked in salted water according to manufacturer's directions)
1 1/2 cup heavy cream
2 tablespoons olive oil
1 garlic, minced
1 small shallot, minced
1/4 cup white wine (optional)
1/4 teaspoon pepper
1 cup grated cheese, parmesan or a combination of Parmigiano Reggiano
6-8 ounces sliced or diced ham
1 1/2 cup peas, frozen

Steps:

  • Cook pasta Al dente according to packaged directions. Add peas the last minute of cooking.
  • In a small saucepan heat oil over medium. Add shallots and garlic and cook until fragrant (careful not to burn!). Add wine and cook until alcohol burn off. Add cream until heated. Strain liquid in another heat proof bowl (optional) and discard shallots.
  • Return liquid to saucepan and add cheese and pepper. Stir until melted. Add ham to warm.
  • Combine pasta with peas and Alfredo sauce. Serve immediately.

2 tablespoons butter
1-1/2 pounds sliced fully cooked ham, cut into strips (about 5 cups)
2 cups fresh sugar snap peas
2 cups heavy whipping cream
1/2 cup grated Romano cheese
1/4 teaspoon pepper

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a large skillet, heat butter over medium heat. Add ham and peas; cook and stir 5 minutes. Stir in cream, cheese and pepper; bring to a boil. Reduce heat; simmer, uncovered, 1-2 minutes or until sauce is slightly thickened and peas are crisp-tender., Drain fettuccine; add to skillet and toss to coat. Serve immediately.

This easy weeknight dinner comes together in a pinch. It's a great way to use up leftover ham from a holiday meal. Just add a bag of frozen peas and a quick-and-easy homemade alfredo sauce you can make in minutes.

1 pound short pasta (farfalle, penne, etc.)
1 bag of frozen peas
2 cups diced cooked ham
1 batch of homemade Alfredo sauce (or a jar of prepared sauce from the store)
Parmesan cheese for garnish

Steps:

  • Place a large pot of water on the stovetop to boil. Add a hefty pinch of salt. Boil the pasta according to the directions on the package. Open the bag of frozen peas and place them in the bottom of a mesh strainer. Drain the pasta over the peas. The heat from the water and pasta will thaw them perfectly. Meanwhile, dice the cooked ham. Prepare the homemade Alfredo sauce if using. You can get our favorite Alfredo recipe here. Once the sauce is ready, stir in the cooked ham and let it warm through for 1 - 2 minutes. Toss the sauce with the pasta and peas. Serve with parmesan cheese as desired.

1 pound fusilli con buco pasta, such as Rustichella d'Abruzzo or Setaro
3 tablespoons unsalted butter
2 tablespoons olive oil
1 clove garlic, smashed
2 1/2 cups freshly grated Parmesan, plus more for serving
1 cup mascarpone, at room temperature
2 teaspoons grated lemon zest (from 1 large lemon)
1 1/2 cups frozen peas, thawed
1 tablespoon lemon juice
1 teaspoon pink peppercorns, ground

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until just short of al dente, 10 or 11 minutes.
  • Meanwhile, heat a large straight-sided skillet over medium heat. Add the butter and olive oil to the hot skillet. When the butter is melted, add the garlic; cook, stirring often, until soft and fragrant. Add 1/2 cup of the pasta water, then reduce the heat to low.
  • When the pasta is ready, lift it out of the water and add it directly to the sauce; reserve the pasta water. Sprinkle the Parmesan over the pasta and stir to combine. Return the heat to medium, add the mascarpone, lemon zest and 3/4 teaspoon salt and toss well. Continue cooking until the pasta is al dente, another minute or two, adding pasta water as needed to thin the sauce.
  • Add the peas and lemon juice; toss well to combine. Add more pasta water as needed to reach the desired sauce consistency (you will most likely use about 1 1/2 cups pasta water in all).
  • Sprinkle with the pink pepper and additional Parmesan, if desired.

2 Tbsp. butter
1 small onion, finely chopped
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
1-1/2 cups milk
1/2 cup KRAFT Grated Parmesan Cheese
8 slices OSCAR MAYER Deli Fresh Smoked Ham, cut into thin strips
1 cup frozen peas, thawed
1/8 tsp. each ground black pepper and ground nutmeg

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, melt butter in medium saucepan on medium heat. Add onions; cook and stir 7 min. or until crisp-tender. Add cream cheese and milk; cook 5 min. or until mixture comes to boil and cream cheese is completely melted, stirring frequently. Add Parmesan; cook 3 min., stirring frequently. Add ham, peas, pepper and nutmeg; cook 3 min. or until heated through, stirring frequently.

This is one of the recipes I adopted from the Recipezaar account. I chose it because a local restaurant makes a similar dish that I absolutely love. Susie in Texas was kind enough to test out the recipe and I have incorporated her suggestion of reversing a couple of steps. The directions now read according to her suggestions. I hope you enjoy it!

5 tablespoons unsalted butter
1 cup parmesan cheese
6 green onions
1 lb fettuccine, cooked
8 ounces mushrooms, sliced
salt and pepper
1 1/4 cups whipping cream
1 (10 ) package frozen tiny peas
4 ounces ham, Boiled, chopped

Steps:

  • Melt butter in heavy large skillet over medium head.
  • Add shallots and saute until soft.
  • Add mushrooms, increase heat to high and cook until mushrooms are very lightly browned.
  • Stir in peas and cook about 30 seconds.
  • Add cream and boil two minutes.
  • Reduce heat to low; blend in ham cheese and fettuccine and toss until heated, well combined and sauce clings to pasta.
  • Season to taste.
  • Serve immediately.

2 cups fresh sliced mushrooms
1 small onion, diced
2 garlic cloves, minced
2 cups cooked ham, cut into 1 inch long strips
2 cups frozen peas, thawed
8 ounces cream cheese
2 cups whipping cream
1 cup butter
3/4 cup grated parmesan cheese

Steps:

  • 1.) Fry Mushrooms, Onions, and Garlic until just soft in your favorite oil until just soft.
  • 2.) Remove from heat and place in a bowl with Ham and Peas which you will add to the sauce later.
  • 3.) On medium low heat, melt Butter and Cream Cheese. Stir to combine and then add Whipping Cream.
  • 4.) Turn heat to medium and bring to a soft boil. Add Ham and Pea mixture and bring to a soft boil again. Reduce to simmer and bring your pasta water to a boil.
  • 5.) Boil pasta till al dente. Drain and serve with covered with Alfredo sauce.
  • 6.) Finish with fresh ground nutmeg or garnish of your choice.
