- For dressing, mix first 5 ingredients until sugar is dissolved. Place fruit in a large bowl; toss gently with dressing., Refrigerate, covered, until serving. If desired, top with mint.

- Drain pineapple, reserving juice; set the pineapple aside. In a large saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Cook and stir over low heat until gelatin is completely dissolved, about 2 minutes., Remove from the heat; stir in the cream of coconut, sour cream, soda and reserved pineapple juice. Transfer to a large bowl. Cover and refrigerate for 30 minutes or until thickened, stirring occasionally. , Fold in the flaked coconut, nuts and reserved pineapple. Pour into a 6-cup ring mold coated with cooking spray. Cover and refrigerate for 3 hours or until firm. , To serve, unmold salad onto a platter. Fill the center with pineapple chunks and shredded coconut if desired.

APPLE CHARLOTTE
Apple Charlotte is a wild concept - the crust is white bread instead of pastry and you glue it together with butter. The filling is similar to apple pie but it is reduced substantially to remove most of the moisture. Sprinkle this decadent dessert with demerara sugar and serve with vanilla ice cream and a dollop of apple butter.

- Melt 4 tablespoons butter in a large saucepan over medium heat. Stir in chopped apples, apple butter, crystallized ginger, brandy, lemon zest and juice, salt, ground ginger, and 1/2 teaspoon cinnamon. Cover and cook over medium-low heat until apples have softened, 15 to 20 minutes. Uncover and continue cooking, stirring occasionally, until the liquid has evaporated and mixture has thickened, an additional 10 to 15 minutes. Remove from heat and let cool while you prepare the crust.
- Preheat the oven to 350 degrees F (175 degrees C).
- Melt remaining 12 tablespoons butter in a small microwave-safe bowl, in 15- to 30-second intervals. Stir in remaining 1/2 teaspoon cinnamon.
- Remove crusts from bread slices. Gently dip both sides of each bread slice in melted cinnamon butter and arrange inside a 9x5-inch loaf pan, cutting them as needed to line the bottom and sides of the pan completely. Overlap pieces slightly to ensure there are no cracks. Spoon in the apple mixture and cover with remaining butter-dipped bread slices.
- Bake in the preheated oven until bread is crisp and golden, about 50 minutes. Remove from oven and let stand at room temperature for 10 minutes. Place a plate or serving platter over the loaf pan and flip so the bottom has now become the top.

- If using fresh pineapple, remove crown from the pineapple. Peel pineapple; remove eyes and core. Cut into bite-size pieces. In a large bowl, combine pineapple, strawberries and papaya.
- In a small bowl, stir together drink mix, rum, cinnamon, and, if desired, cloves; pour over fruit. Cover and chill for 1 to 4 hours, gently stirring occasionally.
- Before serving, transfer fruit mixture to a serving bowl. Gently stir in kiwifruit.

- Start by preparing the fruits: wash and thoroughly dry all the fruits. Dice the mango, peel and separate tangelos and then cut each segment into 2-3 pieces, chunk the fresh pineapple.
- Add the diced mango, cut tangelos, cut pineapple, red grapes, and green grapes to a large bowl.
- In a mason jar combine the pina colada mix, pineapple juice, orange juice, coconut extract, and almond extract. Cover the jar with a lid and shake to combine.
