Pineapple Clove Lemonade Recipes
JUST-RIGHT PINEAPPLE LEMONADE FROM SCRATCH
This is a not too sweet, not too tart pineapple lemonade - thus the name "just right pineapple lemonade". Feel free to use store-bought lemonade for even faster preparation.

Steps:
- Combine 1 cup water and sugar in a saucepan and bring to a gentle simmer over medium-high heat, stirring often. Simmer until sugar is dissolved. Remove from heat and allow simple syrup to cool.
- Cut off pineapple crown and remove the outer skin. Cut pineapple flesh into chunks and add to a high-capacity blender (such as Vitamix®). Pour in 2 cups water and blend until liquefied.
- Pour liquefied pineapple juice into a pitcher. Add remaining water, lemon juice, and simple syrup. Stir before serving.

PINEAPPLE LEMONADE
A tropical and refreshing lemonade made with fresh pineapple. I find that in-season pineapples tend to be very sweet so little or no sweetener is needed. Adjust to taste.

- Core pineapple using a pineapple corer or slicer. Break up into chunks and measure out 2 cups. Save juices.
- Combine 2 cups pineapple and juices, 2 cups water, and lemon juice in a blender. Blend until smooth. Pour into a pitcher. Add remaining 2 cups water and sweetener. Stir and serve over ice.

PINEAPPLE HONEY LEMONADE

Steps:
- Add a piece of pineapple, 2 teaspoons simple syrup, and 1 teaspoon chopped mint to each of 4 tall glasses and muddle. Fill half of each glass with ice.
- In a pitcher, mix together the lemon juice, seltzer and limoncello, if using. Divide the mixture among the glasses and garnish with fresh pineapple and mint sprigs.
- Heat the water and honey in a small pot over low heat. When the mixture is hot remove it from the heat and let cool.
PINEAPPLE LEMONADE

- In a saucepan combine the sugar with 2 cups water, bring the mixture to a boil over moderately high heat, stirring until the sugar is dissolved, and simmer the syrup, undisturbed, for 10 minutes. Let the syrup cool and stir in the pineapple juice, the seltzer, and the lemon juice. Pour the mixture into tall glasses filled with ice cubes and garnish the drinks with the lemon slices and the mint sprigs.
PINEAPPLE LEMONADE
This isn't really a recipe as such, but it sure is tasty. Perhaps you've already tried it - perhaps not! This was inspired by my Granny and Grandad who always serve this (or fresh orange and lemonade) when we visit. The ratios are 50:50 so while this serves on you can easily make more. If you'd like to make it healthier just use low-cal lemonade instead. Happy slurping!
