EASY PINEAPPLE CHICKEN
An easy weeknight dinner, this quick chicken stir-fry with pineapple is as delicious as it is colorful! Serve with rice for a complete meal, or fried rice for a treat. Add red chile flakes to the mix if you want something sweet and spicy!

Steps:
- Combine soy sauce, 2 tablespoons olive oil, paprika, and salt in a bowl. Add chicken strips and let marinate while preparing the remaining ingredients.
- Heat the remaining 1 tablespoon of olive oil in a wok. Add bell pepper and stir-fry for 3 minutes. Add scallions and cook for 2 more minutes. Remove chicken from marinade and add to the wok; discard marinade. Cook, stirring occasionally, until chicken is cooked through and no longer pink in the centre, 10 to 15 minutes.
- Combine pineapple juice and cornstarch in a bowl; mix together. Add pineapple chunks to the skillet and cook for 2 to 3 minutes. Pour in pineapple juice mixture and bring to a boil. Simmer until sauce has thickened, about 3 minutes.

Had this at a church function awhile back....found it to be very good and tasty...even hubby liked it and he is not much for pineapple.....

Steps:
- Cream sugar with butter.
- Sift flour and baking powder.
- Add to creamed mixture alternately with egg/milk mixture. (place egg in cup and add milk to make 1 cup).
- Spread in 9x13 pan.
- Cover with well-drained pineapple.
- Mix topping ingredients till crumbly and sprinkle over pineapple.
- Bake at 350° for 1 hour.

- In a 13x9 3-quart baking dish, mix together pineapple, sauce, garlic, ginger, chicory brew, and sea salt. Arrange chicken pieces and gently toss to coat. Cover and let marinate in the fridge for at least two hours, overnight preferred, flipping the chicken pieces often. Set the baking dish out on the counter 30 minutes before cooking. Preheat oven to 350° F. Bake the chicken in the pineapple "coffee" sauce 1 1/2 hours and let it sit under the broiler for 3 minutes to give the chicken some added color. Serve immediately. * You could easily make this in your slow cooker, just marinate the chicken per the instructions above. Then place everything in the crock and set it to cook on low for 6-8 hours.

- To a small ramekin, add the paprika, granulated onion and granulated garlic, and mix to combine.
- Place the chicken thighs on a work surface, sprinkle with a couple of good pinches of salt and black pepper, then season each piece generously and evenly with the paprika/onion/garlic mixture.
- Place a large braising pan, cast-iron skillet or Dutch oven over medium-high heat, and drizzle in about 2-3 tablespoons of the oil; once the pan is very hot, add the seasoned chicken thighs into the pan skin-side down (work in batches if necessary) and sear the chicken for about 3-4 minutes until the skin is browned, then flip and sear for another 3 minutes; remove the browned chicken thighs from the pan, and hold on a plate.
- If there is excess oil, carefully spoon or pour it out, leaving about 2-3 tablespoons in the pan; add the sliced onions along with a pinch of salt and pepper, and saute those for about 8-10 minutes until golden and caramelized.
