This recipe for a simple margarita will be your new cocktail hour staple.

- Rub lime wedge around the rim of a margarita glass. Fill a saucer with salt and dip the glass, upside down, into the salt.
- Fill a cocktail shaker with ice. Add tequila, orange-flavored liqueur, simple syrup, and 3 tablespoons lime juice. Shake until well combined and chilled. Strain into salt-rimmed glass.
THE PERFECT MARGARITA
A good margarita depends on the qualityof its ingredients; always use the best tequilayou can find. You'll get excellent results usinga citrus reamer, a small, fluted cylindricalwooden tool, to extract every last drop of juicefrom the limes.

- To salt-rim the glasses, rub a cut lime around the rim of each of 4 stemmed goblets. Fill a saucer with salt. Dip goblet, upside down, into salt. Refrigerate goblets until ready to use.
- Fill blender three-quarters full of ice cubes. Pour lime juice, tequila, and Cointreau over ice. Add sugar; blend, starting slowly, and then increasing to high speed, until ice is very finely chopped and mixture is frothy. Taste for sweetness; add more sugar if desired. Blend a few seconds more; pour into salt-rimmed glasses. Serve immediately.
SOUR WATERMELON COCKTAIL GUMMIES

- To make watermelon juice:.
- Cut the watermelon in half using a serrated knife. Cut each half into semi-circle shaped slices about 2-inches thick. Cut away the green rind. Cut the red flesh into 2-inch cubes.
- Add the watermelon cubes to the jug of a blender. Blitz until smooth then pour through a metal strainer set over a large bowl.
- You will need 3/4 cup watermelon juice for these gummies. Reserve any excess watermelon juice for another use.
- To make gummy candies:.
- In a small bowl, place 1/2 cup of watermelon juice. Sprinkle over the gelatin powder and set aside to bloom.
- In a small pot, heat the remaining 1/4 cup of watermelon juice with the sugar over a low heat, stirring constantly, until the sugar has dissolved, and the juice is warm.
- Remove from the heat and immediately add in the bloomed gelatin mixture. Stir until the gelatin has melted in completely. Add the lemon juice and tequila and stir.
- Pour the mixture into silicone watermelon molds (these are commonly sold as ice cube molds online). Let set for 4-8 hours at room temperature to set. If leaving for longer than 8 hours, chill the gummies after they have set.
- Once set, carefully pop the gummies out of the watermelon molds and set on a large plate or lined baking sheet.
- To decorate:.
- Place the green candy melts in a small heatproof bowl set over a pan filled with 1-inch of water on a low heat on the stove. Stir occasionally, until the candies have melted, then remove from the heat. Repeat this with the dark chocolate chips in a separate bowl.
- Pour the melted green candy melts into a disposable piping bag. Snip off the very tip to make a small opening.
- Repeat this with the melted dark chocolate in a separate disposable piping bag.
- Pipe the green candy melts onto the outer curved edge of each gummy candy to represent the rind. Pipe small 'seeds' onto each gummy candy using the dark chocolate. Leave until the chocolate and candy melt decorations have set then serve.

- Juice one lime to make 1 ounce and set aside. From remaining lime, slice a thin wheel for garnish and a wedge for salt rim.
- Run lime wedge around one side of the rim of a chilled rocks glass; dip rim in salt to coat. Partially fill glass with ice (we prefer 1 large sphere for minimal melting and dilution).
- Fill a cocktail shaker halfway with ice. Add tequila, orange liqueur, and reserved lime juice. Shake vigorously until outside of shaker is cold and frosty, about 10 seconds; strain into prepared glass. Garnish with lime wheel and serve immediately.

- Make simple syrup: Bring sugar and water to a boil in a small saucepan. Simmer, stirring, until sugar has dissolved. Remove from heat; let cool. Refrigerate until ready to use.
- Rub rims of glasses with a lime wedge; dip rims in a dish of salt.
- In a large pitcher, combine lime juice, tequila, and triple sec or Grand Marnier. Add chilled sugar syrup, and stir to combine. Add ice cubes, and serve in prepared glasses.
PUMPKIN CHEESECAKE A LA MARTHA STEWART
I got this recipe off Martha Stewart's website. It's absolutely WONDERFUL! I love pumpkin, but it's just not in enough things. So here's a good cheesecake for you. Hope you enjoy it! My Notes: I don't use the pecans in the crust, but it's because I'm allergic to some nuts, and I don't like to push my luck. I'm sure they'd be wonderful in there, though. If you don't use them, you could probably just toss a few more cookies worth of crumbs in like I do.

- Preheat oven to 325°.
- Place gingersnaps in the bowl of a food processor, and process until finely ground.
- Add pecans, melted butter, sugar, and cinnamon.
- Process just until combined and the mixture holds together.
- Transfer the cookie mixture to a 9-inch nonstick springform pan, and pat out evenly to make the crust, lining the sides of the pan about 1 1/2 inches of the way up.
- Bake for 10 minutes. Cool completely on a wire rack.
- In a small bowl, whisk together flour, ginger, cinnamon, and nutmeg; set aside.
- In another bowl, beat the cream cheese and sugar on medium speed until light and fluffy, about 2 minutes.
- Add pumpkin, bourbon, vanilla, and flour mixture. Beat to combine.
- Add eggs, one at a time, beating to incorporate after each addition.
- Pour batter into prepared crust.
- Wrap the outside of the springform pan with a double layer of aluminum foil.
- Place in a roasting pan. Add enough hot water to come halfway up the sides of the springform pan.
- Bake until cake is set in the center, about 1 hour and 45 minutes.
- Remove from water, and cool on a wire rack.
- Remove foil, and refrigerate for at least 4 hours and up to overnight.
- Serve with whipped cream, if you'd like.

HOLIDAY HAM A LA MARTHA
I just couldn't resist posting this one. If your a fan of sweet glazed ham this is certainly special enough for Christmas dinner, and it's even easy to do! It's from Martha Stewart.

- Heat oven to 325ºF.
- Using a sharp knife, score surface of ham crosswise and lengthwise, forming a crosshatch pattern about 1/4-in deep and 1-in apart.
- Place 1 clove in the center of each square. Place ham, fat side up, in a double-layer disposable aluminum roasting pan and pat the brown sugar onto the surface of the ham (Expect some sugar to fall into the roasting pan)
- Transfer to oven, and bake until brown sugar just begins to melt, about 30 minutes.
- Pour Coca-Cola over ham, mixing with melted sugar in bottom of roasting pan. Baste ham with sugar/Coke mixture.
- Return to oven, and bake for 20 minutes more.
- Meanwhile, combine 1 cup reserved pineapple juice and wine in a small bowl. Baste ham with pineapple mixture.
- Bake ham for a total of 16 minutes per pound, basting every 20 minutes. During the last 20 minutes of baking time, decorate ham with pineapple rings (use 2-3 toothpicks to hold each ring in place).
- Center a cherry in the center of each ring, and attach it with a toothpick.
- Transfer ham to a platter, removing all toothpicks. Garnish ham with fresh bay leaves if desired.
- Makes 10-12 servings.
