TURKEY CHILI

Steps:
- Heat the canola oil in a large pot or Dutch oven over medium heat. Add the onion and a pinch of kosher salt and saute, stirring with a wooden spoon, for about 2 minutes, or until translucent. Add the garlic and bell pepper and saute for 1 minute. Add the chili powder, cumin, and cayenne and cook for at least 1 minute so that they bloom.
- Add the tomato paste and cook for 1 or 2 minutes to deepen its flavor.
- Add the turkey and switch tools from a wooden spoon to a whisk. Cook the turkey, breaking up any large chunks with the whisk as you cook, for 5 minutes, or until browned.
- Add the tomatoes, 3 cups of the stock, and the cocoa powder and bring to a simmer, whisking to make sure the cocoa powder is thoroughly dissolved and combined. Add the beans and bring the chili to a simmer.
- Cover the pot with a lid or foil and cook the chili for 1 hour. Taste the chili after 1 hour and adjust the seasoning. If the chili is too thick for your liking, add a bit more chicken stock.
- Serve in deep bowls topped with sour cream, sliced scallions, and grated Cheddar, if desired.

- Heat the vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat. Add the ground beef and cook, stirring occasionally, until browned, about 10 minutes. Add the garlic, onions, jalapenos and red bell pepper and cook, stirring occasionally, until the vegetables have softened, about 4 minutes.
- Stir in the chili powder, cumin, salt and pepper. Evenly coat the ground beef mixture and cook to toast the spices for about a minute. Add the tomatoes and bring the mixture up to a simmer. Stir in the brisket, pastrami and smoked beans. Cook, uncovered, stirring occasionally, to thicken and bring the flavors together, about 35 minutes. Serve bowls of chili hot with some sour cream, Cheddar, and red onion.

- If you're grinding your meat, place the defrosted meat in the freezer for 20 minutes to help firm it up, this will make it easier to grind and improve the texture. Cut the meat into large strips and run it through a grinder with a large die.
- Take the ground meat and place it in a smoker (stovetop or outside) on low heat for 20 to 25 minutes using a hardwood like hickory or mesquite to add the smoke flavor. You don't want the meat to completely cook in the smoker, but you do want it to spend as much time as possible in the smoker, without having the meat start to brown, to let the smoke infiltrate the beef.
- While the beef is in the smoker start cutting up the onion, celery, peppers, and garlic. The onion, celery, and peppers should be a large dice, so they hold up through the cooking process and to provide some crunch. The garlic should be finely minced.
- In a large heavy duty pot sauté the vegetables in olive oil until they start to look translucent. Add the meat to the pan to brown. Once the ground beef is browned pour off the extra fat.
