I first served my family this rich ladder recipe years ago. From the very first bite, it was a hit with everyone. Now I bake it often for church groups, potluck dinners and parties with friends. It makes a nice breakfast pastry or a lovely dessert. -Norma Foster, Compton, Illinois

Yield 2 loaves (10 slices each).

Number Of Ingredients 20

2 packages (1/4 ounce each) active dry yeast
1/4 cup warm water (110° to 115°)
1/2 cup warm milk (110° to 115°)
1/2 cup butter, softened
1/3 cup sugar
4 eggs
1 teaspoon salt
4-1/2 to 4-3/4 cups all-purpose flour
FILLING:
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1-1/4 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon ground allspice
4 cups thinly sliced peeled tart apples
1/4 cup butter, softened
ICING:
1 cup confectioners' sugar
1 to 2 tablespoons orange juice
1/4 teaspoon vanilla extract

Steps:

  • In a large bowl, dissolve yeast in water. Add the milk, butter, sugar, salt, eggs and 2 cups flour. Beat on low speed for 3 minutes. Stir in enough remaining flour to form a soft dough., Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and refrigerate for 1-2 hours; punch dough down. Cover and refrigerate overnight. , Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each half into a 12-in. x 9-in. rectangle. Place each on a greased baking sheet. Spread with butter. For filling, combine the brown sugar, flour, cinnamon, nutmeg and allspice in a large bowl;, add apples and toss to coat. Spread filling down center third of each rectangle. , On each long side, cut 1-in. wide strips about 3 in. into center. 1 small onion, finely chopped
2 teaspoons butter
3/4 cup shredded peeled apple
1/2 cup soft bread crumbs
1 egg
4 teaspoons ketchup
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
Dash ground allspice
3/4 pound lean ground beef (90% lean)

Steps:

  • In a small skillet, saute onion in butter until tender. In a large bowl, combine the apple, bread crumbs, egg, ketchup, mustard, salt, pepper and allspice. Stir in onion. Crumble beef over mixture and mix well. Shape into a 6x5-in. loaf., Place in an 8-in. square baking dish coated with cooking spray. Bake, uncovered, at 350° for 40-45 minutes or until no pink remains and a thermometer reads 160°.

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup chopped walnuts
½ cup butter, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup apples - peeled, cored and shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5 inch loaf pan.
  • Mix together flour, baking powder, soda, salt and nuts.
  • In a large bowl, beat margarine, sugar and 1 egg until smooth. Beat in second egg, and stir in vanilla. Stir in shredded apples. Pour flour mixture into batter; stir just until moistened. Spread into prepared pan.
  • Bake for 50 to 60 minutes, or until an inserted toothpick comes out clean. Let stand 10 minutes, then remove from pan. Place on a rack to cool.

Filling
1/4 cup butter, softened
1/3 cup packed brown sugar
2 Tbsp flour
1 1/4 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
4 cups thinly peeled tart apples
Icing
1 cup confectioners' sugar
1/4 tsp pure almond extract
1-2 Tbsp apple cider

Steps:

  • In a large mixing bowl dissolve yeast in warm water. Add milk, butter, sugar, salt, eggs, and 2 cups flour beat on low speed for 3 min. Stir in remaining flour to form a soft dough. Turn on a lightly floured surface. Knead until smooth and elastic. Place in a greased bowl. Cover and refrigerate for 1-2 hours. Punch down. Refrigerate overnight.
  • Punch dough down. Separate into 2 portions. Roll on floured surface. Place on greased baking sheet. Spread with 1/4 cup of butter. For the filling combine brown sugar, flour, cinnamon, nutmeg, and allspice in large bowl. Add apples, toss to coat. Spoon down center third of each rectangle. On each long side, cut 1-in wide strips about 3-in into center on both sides. Start with one end and fold alternating strips at an angle across filling; seal engs. Cover and rise until nearly doubled about 50 min.
  • Bake at 350°F for 30-40 min until golden brown. Remove pan to wire rack. Combine icing ingredients in a small bowl. Drizzle over the warm bread.

Steps:

  • In a bowl, put butter, sugar and 1 egg. Beat to obtain a creamy mixture. Add the second egg and beat well. Add vanilla and cinnamon if using. Stir and add apples.
  • In another bowl, mix flour, baking powder, baking soda, salt and walnuts. Pour in the dough. Stir only to wet. Put in a greased loaf pan of 9 x 5 x 3 inch.
  • Cook in a preheated oven of 350 F for 50 to 60 minutes or until toothpick inserted comes out clean. Let rest 10 minutes then remove from the pan. Put on a grill to cool down and wrap it.
