PIZZA MUFFINS
Sometimes I'll make soup or a salad for lunch or dinner and my kids are looking for an extra something to go with it. These pizza muffins have all the flavor of pizza, but are made with wholesome ingredients, including whole-grain flour and fresh tomato sauce, as well as minimal amounts of cheese. The best part is that they are portable and perfect for lunchboxes or picnics.

Steps:
- Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with unbleached parchment liners or reusable silicone liners.
- Whisk together the flour, baking powder, baking soda, salt, and oregano in a medium bowl to combine.
- In a large bowl, beat the eggs, olive oil, buttermilk, maple syrup, and 1 cup of the marinara sauce, and stir. Add the mozzarella and stir to combine. Slowly stir in the dry mixture until just combined. Do not overbeat.
- Using a large ice-cream scoop, divide the batter evenly between each muffin cup. Use the remaining 1/4 cup marinara sauce to top each muffin with 1 teaspoon of sauce, then sprinkle with pecorino.
- Bake for 20 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool for 10 minutes in the pan and then transfer to a wire rack to completely cool.

- Preheat oven to 350°F (190°C).
- In a medium bowl, add the pancake mix, butter, and 1 egg and mix until combined.
- Press about 1 tablespoon of dough into a greased 12-portion muffin pan.
- Sprinkle basil, oregano, garlic powder, pepperoni, mozzarella cheese, and tomatoes over the dough.
- In a large measuring cup, whisk together 2 eggs, milk, and heavy cream. Pour mixture over the other ingredients in each muffin slot. Top with parmesan cheese.
- Bake 20-25 minutes, or until golden brown.
- Cool for 5 minutes.
- Serve with marinara sauce for dipping.

Stir into dry ingredients just until moistened. Stir in 1/4 cup mozzarella cheese and 1 tablespoon Parmesan cheese. , Fill greased jumbo muffin cups two-thirds full. Sprinkle with the remaining cheeses. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool in pan for 5 minutes before removing to a wire rack.

- Preheat oven to 425°. In a small bowl, mix the first 6 ingredients., Unroll pizza crust; cut into 16 squares. - Preheat oven to 425 degrees F (220 degrees C). Spray 10 muffin cups with cooking spray.

- Bring the pizza dough to room temperature and preheat the oven to 450 degrees F. Grease the cups of a mini muffin pan with cooking spray.
- Roll out the dough on a lightly floured surface to a thin 12-by-18-inch rectangle and cut into 3-inch squares. Place one square of dough in each cup, making sure that the corners of the dough are sticking out. Brush the edges of the dough with olive oil.
- Parbake the dough for 8 minutes, then remove from the oven.
- Pour 1 teaspoon sauce in each cup and evenly distribute the cheese among the cups (you can add toppings now as well). Bake for an additional 5 minutes. Cool and serve.
- Cook's Note: To freeze, allow to cool entirely. Place on a parchment-lined baking sheet and freeze until solid, about 1 hour. Transfer to a freezer storage bag, then label and freeze for up to 3 months. When ready to serve, place in a toaster oven or oven preheated to 300 degrees F until heated through, 8 to 10 minutes.
