A modeling chocolate recipe that has no lumps, is smooth and easy to work with. Can be made from candy melts or real chocolate. Used by the pros.

16 oz white candy melts
4 oz corn syrup (or glucose) (Warmed for a few seconds until about body temperature)
Few drops gel food coloring (If you plan on coloring, if not, leave out)
6 oz corn syrup
16 oz chocolate (any kind)

Steps:

  • Melt candy melts in a plastic or microwave-safe bowl in the microwave or stove-top sauce pan.
  • Warm corn syrup and add food coloring. Remember that your final product will be lighter than the color of your corn syrup. You can also add color later if you want.
  • Fold mixture together with a spatula until mixture starts to seize and resembles soft serve ice cream.
  • It is important to not over-mix or your modeling chocolate will get oily.
  • Wrap in plastic and let set until chocolate is firm but still pliable. Usually a couple of hours depending on how hot it is in your room.
  • Unwrap chocolate and knead until smooth, smashing any hard lumps with your fingers.
  • Re-wrap chocolate and place back in plastic wrap to set up until hard.

WHITE CHOCOLATE PLASTIQUE

This white chocolate plastique makes the perfect modeling chocolate, and the ivory color is beautiful on its own or can easily be combined with food coloring for colored flowers, leaves, and holiday decorations. It works very much like the dark chocolate version (opposite page), but it needs a smaller amount of corn syrup and a little cornstarch.

Yield makes 1/2 pounds plastique

Number Of Ingredients 3

16 ounces white chocolate, finely chopped
3/4 cup light corn syrup
1/4 cup cornstarch, sifted

Steps:

  • Melt the chocolate over in a stainless steel bowl over a saucepan of simmering water, and stir in the corn syrup, then the cornstarch. Allow the mixture to come to room temperature, stirring occasionally. If your room is warm, put the plastique in the refrigerator for 10 minutes or so for it to firm up. If you plan to add food coloring to part of the batch, this is the right time to knead it in. It should come together with the consistency of a pie dough or a slightly melted Tootsie Roll, and it will become more flexible as you work with it. Store the plastique wrapped in plastic or in a sealable plastic bag.

1 lb chocolate, best quality semi-sweet or dark
3/4 cup light corn syrup

Steps:

  • Melt chocolate in a double boiler, in a metal bowl over (not in) a pot of boiling water, or carefully in the microwave.
  • Remove from heat and stir in the corn syrup until very well blended.
  • Pour onto a big sheet of plastic wrap and wrap tightly. Allow to come to room temperature before using. This is important. It may take overnight.
  • Use cocoa powder to prevent sticking while you work with it.

DARK CHOCOLATE PLASTIQUE

This is a miracle of culinary chemistry. This simple mix of melted chocolate and corn syrup renders the chocolate pliable enough to shape, yet firm enough to hold its form once you craft it. Makes chocolate flowers, letters, animals-any decoration you can dream up.

Yield makes 1 1/2 pounds plastique

Number Of Ingredients 2

16 ounces chocolate, finely chopped (2 cups)
1 cup light corn syrup

Steps:

  • Melt the chocolate in a stainless steel bowl over a pan of simmering water. Once the chocolate is melted, stir in the corn syrup. Remove from the heat and allow the mixture to come to room temperature, stirring occasionally. The chocolate plastique should come together with the consistency of a pie dough or a slightly melted Tootsie Roll, and it will become more flexible as you work with it. Roll it out on a work surface covered with parchment paper. Roll it thin (about 1/4 inch) in order to cut designs with cookie cutters. Store the remaining chocolate plastique covered at room temperature or in the freezer in a tightly wrapped sealable plastic freezer bag.

  • Melt the chocolate in a microwave-safe bowl in the microwave. Use bursts of 30 seconds, and stirring in between until melted. Or use the double boiler method on the stovetop. Add a bit of water to a small pot, place it on the burner, add a larger bowl on top. Place the chocolate in the bowl. Turn the heat to medium. As the water heats up, the steam will warm the bowl melting the chocolate. Make sure to stir as it starts melting.
  • Heat up the corn syrup for just a few seconds until warm, it should be close to the temp as the melted chocolate. Pour the warm corn syrup into the melted chocolate and fold the two ingredients together with a spatula. Don't mix it fast. Eventually, it will pull from the sides and form a dough.
  • Place the modeling chocolate on a piece of plastic wrap, and spread it out a bit. Wrap it up gently in the plastic wrap. Allow it to rest for about 12 hours at room temperature or about 3 hours in the fridge.
  • Now it can be used. It will be hard, just break a piece off and knead it in your hands until soft like play-dough, then use it to mold and sculpt whatever decorations you want. Enjoy!
