DAMN HOT POLENTA BREAD

Damn Hot Polenta Bread image

Provided by Michael Chiarello : Food Network

Categories     side-dish

Time 1h45m

Yield 8 servings

Number Of Ingredients 18

2 cups all-purpose flour
1 1/2 cups fine grind polenta
1 cup grated Asiago cheese
1/3 cup finely sliced scallion greens
1/4 cup granulated sugar
2 tablespoons baking powder
2 teaspoons baking soda
1 1/2 teaspoons sea salt, preferably gray salt
4 extra large eggs, whisked
1 1/2 cups buttermilk
1/4 pound unsalted butter, melted, plus more to cover if not serving immediately
1/2 cup Damn Hot Peppers, recipe follows
Hot sauce, to taste
2 tablespoons extra-virgin olive oil
1 pound green bell peppers, halved, seeded and cut into 1-inch pieces
2 jalapenos, cut into 1/8-inch slices
2 teaspoons sea salt, preferably gray salt, more if needed
1 cup fresh tomato puree (peel, seed, and puree 1 pound ripe tomatoes in a food processor)

Steps:

  • Preheat the oven to 350 degrees F.
  • Generously butter a 9 by 13-inch baking dish; set aside. In a large bowl, stir the flour, polenta, cheese, scallions, sugar, baking powder, baking, soda and salt. In another bowl, whisk together the eggs, buttermilk, and melted butter. Add the liquid ingredients to the dry ingredients and stir with a rubber spatula just until blended; do not over-mix.
  • Add 3/4 cup Damn Hot Peppers and then stir in hot sauce, to taste. Transfer the batter to the prepared pan and level it with a rubber spatula. Bake until the bread is golden brown and firm to the touch, about 35 minutes. Cool briefly and then cut into squares and serve warm. If not serving immediately, cover with more melted butter to keep moist overnight.
  • In a non-reactive saucepan, heat the olive oil. When the oil is hot add the bell peppers, jalapenos and sea salt. Cook over medium high heat for about 15 minutes or until the peppers are partially tender. Stir the bottom from time to time, adjusting the heat as necessary so that they don't brown. There will still be some liquid left in the pot.
  • Add the tomatoes, lower the heat to a simmer and continue cooking for about 10 minutes, to reduce the tomato juice and finish cooking the peppers. Add additional salt, if needed. Add to batter as directed.

POLENTA BREAD RECIPE

Polenta Bread Recipe image

Polenta bread; a yeasted bread using polenta in place of some of the flour. The addition of polenta makes the bread fantastic for toasting and gives it lots of crunch.

Provided by Helen Best-Shaw

Categories     Baking

Time 2h30m

Number Of Ingredients 11

50 g polenta
300 ml lukewarm water
15 g fresh yeast
1/2 tsp clear honey
225 g white bread flour
25 g butter
3 tbsp pine nuts
1 1/2 tsp salt
1 egg yolk
1 tbsp water
2 tbsp pine nuts (for sprinkling)

Steps:

  • Lightly grease a baking sheet. Mix the polenta and 250ml of the water together in a pan and slowly bring to the boil, stirring continuously with a large wooden spoon. Reduce the heat and simmer for 2-3 minutes, stirring occasionally. Set aside to cool for 10 minutes, or until just warm.
  • In a small bowl, mix the yeast with the remaining water and honey until creamy/frothy (depending on the yeast being fresh/dry). Sift 115g of the flour into a larger bowl. Gradually beat in the yeast mixture, then gradually stir in the polenta mixture to combine. Turn out on to a lightly floured surface and knead for 5 minutes until smooth and elastic.
  • Cover the bowl with lightly oiled cling film and leave the dough to rise in a warm place for about an hour or until it has doubled in bulk.
  • Melt the butter in a small pan add the pine nuts and cook over a medium heat, stirring, until the pale and golden. Set aside to cool.
  • Add the remaining flour and salt to the polenta dough and mix to a soft dough. Knead in the pine nuts cooked in butter (and the butter). Turn out on to a lightly floured surface and knead for 5 minutes until smooth and elastic.
  • Place in a lightly oiled bowl, cover with lightly oiled cling film and leave to rise in a warm place for about 1 hour or until doubled in bulk.
  • Knock back (punch down) and turn the dough out on to a lightly floured surface. Cut the dough into two equal pieces and roll each piece into a fat sausage about 38 cm/15 inches long. Plait (braid) together the two pieces and place on the baking sheet. Cover with lightly oiled cling film and leave in a warm place for 45 minutes. Pre-heat the oven to 200 C/ 400 F/ Gas Mark 6.
  • Mix the egg yolk and water and brush over the loaf. Sprinkle with the pine nuts and bake for 30 minutes or until golden and sounding hollow when tapped on the base. Cool on a wire rack.

POLENTA BREAD (ABM)

Polenta Bread (ABM) image

This makes a light and delicious loaf, with no sugar added, so it isn't a sweet bread--perfect for sandwiches or savory toppings! Cooking time will depend upon your bread machine.

Provided by FlemishMinx

Categories     Yeast Breads

Time 5m

Yield 1 loaf

Number Of Ingredients 8

1 1/3 cups very warm water
1 tablespoon extra virgin olive oil
1 teaspoon salt
3 cups bread flour
1 egg, beaten with
1 tablespoon water
1/2 cup finely ground quick-cooking polenta
2 teaspoons active dry yeast

Steps:

  • Add ingredients to your bread machine in the order recommended by your manufacturer (for mine, it is the order as given above) but, DO NOT add in the eggs in any order in which they come directly in contact with the warm water, or they will cook (that is why I add them in between the flour and the polenta).
  • Use the regular white bread setting.

HOW TO MAKE PERFECT POLENTA

How to Make Perfect Polenta image

Polenta is nothing more than coarsely ground cornmeal. The classic ratio is 1 part polenta to 4 parts water, but I like to measure the polenta just a little scant of a full cup. I often use chicken broth instead of water. It's a perfect base for any kind of saucy meat or mushroom ragout.

Provided by Chef John

Categories     Side Dish     Grain Side Dish Recipes     Polenta Recipes

Time 55m

Yield 4

Number Of Ingredients 5

4 cups water
1 teaspoon fine salt
1 cup polenta
3 tablespoons butter, divided
½ cup freshly grated Parmigiano-Reggiano cheese, plus more for garnish

Steps:

  • Bring water and salt to a boil in a large saucepan; pour polenta slowly into boiling water, whisking constantly until all polenta is stirred in and there are no lumps.
  • Reduce heat to low and simmer, whisking often, until polenta starts to thicken, about 5 minutes. Polenta mixture should still be slightly loose. Cover and cook for 30 minutes, whisking every 5 to 6 minutes. When polenta is too thick to whisk, stir with a wooden spoon. Polenta is done when texture is creamy and the individual grains are tender.
  • Turn off heat and gently stir 2 tablespoons butter into polenta until butter partially melts; mix 1/2 cup Parmigiano-Reggiano cheese into polenta until cheese has melted. Cover and let stand 5 minutes to thicken; stir and taste for salt before transferring to a serving bowl. Top polenta with remaining 1 tablespoon butter and about 1 tablespoon freshly grated Parmigiano-Reggiano cheese for garnish.
