POLYNESIAN-STYLE FRIED BROWN RICE
Brown rice flavored with ginger and sesame is stir-fried with red onion, red bell pepper, pineapple and a little bacon for a side dish with some Polynesian flair.

- Preheat the oven to 375°F. Place the brown rice in a shallow 3-quart casserole or 13 x 9-inch baking dish. Add the chicken broth, orange juice, and sesame oil.
- Smash the ginger pieces with the side of a large knife to help release the flavor, then add them to the rice. Stir once and cover tightly.
- Bake for 1 to 1-1/4 hours, or until the rice is tender and all the liquid has been absorbed. Remove from the oven, fluff with a fork and cool completely, about 90 minutes.
- Heat a wok or large pan over medium-high heat and fry the bacon until just barely crisp. Raise the heat to high and add about 1/2 of the rice.
- Stir fry for about 2 minutes, tossing constantly with a spatula. Make a well in the center of the rice, add a bit of oil, then add the onion, bell pepper, and garlic.
- Continue cooking for another 1 to 2 minutes until the onion is soft and translucent and combine with the rice thoroughly.
- Once again, make a well in the center of the rice and add a little more oil.
- Start adding the remaining rice in small increments, continually stir-frying until all the rice is heated through and golden brown.
- Make another well in the center of the rice and add the egg. Cook until set, scramble and distribute throughout the rice.
- Stir in the pineapple and soy (or fish) sauce, mix thoroughly and serve.
POLYNESIAN RICE
I make this in a rice cooker and it's super simple! When I have frozen diced onion, red, and green bell pepper mix on hand, I use 2 T of that in place of the fresh onion and peppers, and it's every bit as good. I really prefer the mix of red and green peppers in this dish to just plain ol' green sweet peppers. I frequently use the reduced sodium version of both the soy sauce and the chicken broth and it turns out just fine.

CRISPY HAWAIIAN FRIED RICE

- Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add the ham, barbecue spice and scallion whites. Saute for 2 to 3 minutes.
- Lower the heat to medium. Toss the rice with the remaining 2 tablespoons oil in a medium bowl. Add to the skillet and quickly stir so the ham and scallions get evenly distributed in the rice. Cook without stirring for 5 minutes so the bottom gets crispy.
- Combine the hoisin, soy, chile sauce and ginger in a small bowl and whisk together. Add the sauce to the skillet along with the peas and pineapple. Stir gently to combine, retaining the crispy bottom. Serve immediately topped with the fried egg, french-fried onions, sesame seeds and scallion greens.
HAWAIIAN RICE
Funny how adding pineapple to any dish makes it "Hawaiian" but hey, that's the name it had when I got it. A really nice twist on fried rice.

Steps:
- Cook the egg with a little salt and pepper, set aside.
- Heat oils, add onions & carrots.
- Stir fry until onions become translucent (about 2 minutes).
- Add the rice and continue to cook until the rice starts turning a light gold color.
- Slice the cooked egg into strips, add with the cooked chicken stirring while cooking to warm it up.
- Remove from element, add soy sauce, pepper and pineapple, return to element turning up to high heat, stir fry vigorously for thirty more seconds. (Pineapple gets flavorless if stir fried too much).
- Note: Always use cold cooked rice for stir fry & break apart with wetted fingers any clumps.

- Cook rice according to package directions. Meanwhile, in a Dutch oven, heat 1 tablespoon margarine over medium-high heat. Whisk eggs until blended; pour into pan. Mixture should set immediately at edge. As eggs set, push cooked portions toward center, letting uncooked portions flow underneath. When eggs are thickened and no liquid egg remains, remove to a cutting board and chop., In same pan, heat 1 tablespoon margarine over medium-high heat. Add Spam and onion; cook and stir until Spam is lightly browned, 6-8 minutes. Add mixed vegetables, garlic and pepper; cook until heated through. Stir in cooked rice, soy sauce and remaining 1/2 cup margarine; cook and stir until margarine is melted. Gently stir in eggs. If desired, top with sliced green onion.

HAWAIIAN LUAU FRIED RICE
This Hawaiian Fried Rice is the perfect summer side dish recipe.

- Cook rice according to package directions for 6 cups cooked rice; set aside.
- Add shredded coconut to a pan over medium-high heat. Stir constantly until coconut begins to turn golden brown.
- Remove coconut completely from the pan; set aside.
- Using the same pan over medium-high heat, add vegetable oil, onion, ginger, bell pepper and ham and sauté until ham begins to turn golden brown and red pepper and onion are tender.
- Add cooked rice, pineapple, sesame oil, soy sauce and toasted coconut to the pan and cook, stirring constantly, until heated through and well combined.
- Remove from heat.
- Serve and garnish with green onion.

ISLAND-STYLE FRIED RICE
Everyone in Hawaii has their own version of fried rice. This is my own version of fried rice that the locals ate in Hawaii.

Steps:
- Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Let the rice cool completely.
- Heat 2 teaspoons of oil in a skillet over medium heat, and brown the luncheon meat and sausage. Set aside, and pour the beaten eggs into the hot skillet. Scramble the eggs, and set aside.
- Heat 2 tablespoons of oil in a large nonstick skillet over medium heat, and stir in the rice. Toss the rice with the hot oil until heated through and beginning to brown, about 2 minutes. Add the garlic powder, toss the rice for 1 more minute to develop the garlic taste, and stir in the luncheon meat, sausage, scrambled eggs, pineapple, and oyster sauce. Cook and stir until the oyster sauce coats the rice and other ingredients, 2 to 3 minutes, stir in the green onions, and serve.
