POOR MAMMA'S SPAGHETTI
What did Mamma do when her grocery money didn't stretch for real Parmesan cheese? She improvised, naturally. Being a good cook, her meal eventually became famous, even dukes loved Mamma's spaghetti. And so will you. But pssst, don't give away Mamma's little secret...

Steps:
- Pour the olive oil into a skillet and set over medium heat. Add the garlic clove, and cook until the clove is browned. Remove the garlic from the oil, and finely crumble the slices of bread into the skillet. Cook until nicely toasted, then scoop out the crumbs onto a paper towel. Reserve the oil.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add the spaghetti, and cook for about 8 minutes, until tender. Drain.
- Mix the reserved oil into the spaghetti, then place onto serving plates. Sprinkle with bread crumbs and freshly ground black pepper.

A quick, simple pasta tossed with butter, parsley, and Parmesan cheese. A wonderful recipe to make when you don't feel like making a trip to the grocery store. I used what I had on hand and it worked like a charm! Add summer vine-ripened tomatoes for an extra dash of flavor!

Steps:
- Bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente; drain.
- Heat a skillet over medium-low heat. Melt butter with garlic very slowly to avoid burning the garlic. Season with salt, freshly ground black pepper, and parsley. Sprinkle with cayenne pepper to taste, if desired.
- Toss pasta into the skillet until well-coated with butter. Increase heat to medium, and cook until pasta is heated through and has absorbed some of the butter. Adjust seasoning with salt and pepper, if necessary. Serve with grated Parmesan cheese.

- Cook pasta in salted water until tender as directed on package. Meanwhile, in a small 1-qt. saucepan or skillet melt the butter over low heat; when melted add the minced garlic and cook for 1 minute, stirring constantly so it doesn't brown. Remove from heat and stir in the green onion. Drain pasta well in a colander then transfer to a serving bowl. Pour the garlic butter over the pasta and toss to coat. Add Parmesan and toss well. Garnish as desired and serve immediately.

- 1. Brown hamburger and onion. Season to taste.
- 2. Add tomato soup and 1 can of water.
- 3. Cover and simmer while cooking spaghetti.
- 4. Cook spaghetti according to package directions.
- 5. When spaghetti is done, drain and mix with meat/soup. Season to taste.
- 6. Let set about 10 minutes for noodles to absorb some of the sauce.

- Put water on to boil in a large pot. When it comes to a boil, salt generously and throw in the spaghetti.
- Shortly before the spaghetti is done cooking, melt a good dollop of lard in a skillet. When it's good and hot, break open the egg and add it to the skillet. Fry the egg "sunny side up", but not too much, taking care that the yolk remains runny and the whites are cooked but still soft. (If the pasta isn't done yet, you can remove the egg to prevent it from overcooking and return it to the skillet along with the pasta.)
- When the pasta is al dente, transfer it to the skillet, along with the grated cheese, a good grinding of black pepper and a ladleful of the pasta cooking water. Mix vigorously over a gentle flame, breaking up the egg, until the pasta is well coated with its condimento.
