- Combine dry ingredients. Pour boiling water over mixture and stir until moistened. Let cool and make into small pat ties. Fry in deep fat until golden brown. Serves 6.

- Preheat the oven to 400 degrees Fahrenheit.
- In a bowl, mix all the ingredients together, adding in the cornbread mix first. Mix well.
- Grease a pan and pour in cornbread mix, 9 x 11 and 9 x 9 work well. Bake in the oven for 25-30 minutes or until bread is golden brown and a toothpick comes out almost clean when inserted.
- Allow to cool for 10-15 minutes, Slice and Enjoy!

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Whisk the flour and baking powder together in a small bowl.
- Beat the white sugar, oil, and egg together in a bowl until smooth. Stir in the flour mixture alternately with the milk. Pour into a 9-inch square pan. Dissolve the brown sugar in the hot water, then pour stir in the melted butter. Drizzle the syrup over the pudding.
- Bake in the preheated oven until the pudding firms and becomes golden brown on top, about 40 minutes.

POOR MANS CAKE III
This recipe if from the l930's. My Grandmother gave it to my Mother and she gave it to me. Now I am a grandmother and passed it down to my kids. It's really good. You don't have to dirty your mixer for this one, just a big bowl.

Steps:
- Preheat oven to 350 degrees F (175 degrees C) grease and flour a 9x13 inch pan.
- In a saucepan mix brown sugar, raisins, water and shortening. Bring to a boil and boil 3 minutes. Remove from heat and let cool.
- In a large bowl, combine flour, baking soda, salt, cinnamon, nutmeg and cloves. When raisin mixture is cool, add to dry ingredients and mix well to combine.
- Bake at 350 degrees F (175 degrees C) for 30 or 40 minutes. Do not over bake or it will be too dry. Test after 30 minutes. A toothpick inserted into the center of cake should come out clean.
