1 1/2 cups buttermilk
1 1/2 cups all-purpose flour
2 tablespoons Miss Brown's House Seasoning, recipe follows
1 tablespoon hot sauce
1 teaspoon yellow mustard
4 thin bone-in pork loin chops (about 2 pounds total)
Canola oil, for frying
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
3/4 cup half-and-half
Generous pinch of Miss Brown's House Seasoning, recipe follows
Kosher salt and freshly ground black pepper
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons sweet paprika
1 1/2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper

Steps:

  • For the pork chops: Pour the buttermilk into a shallow baking dish and set aside. In another shallow baking dish, stir together the flour and 1 tablespoon plus 2 teaspoons of the House Seasoning and set aside.
  • Stir together the hot sauce, mustard and the remaining teaspoon of the House Seasoning in a small bowl. Rub the seasoning onto both sides of the pork chops. Place the pork chops in the buttermilk and turn to coat completely.
  • Pour enough oil into a large cast-iron skillet to come 1 inch up the sides. Heat over medium-high heat until a deep-fry thermometer reaches 350 degrees F.
  • Working with one piece at a time, remove the pork chops from the buttermilk, letting any excess drip off. Coat in the flour mixture and carefully add to the hot oil. Fry, turning once, until the chops are browned and reach an internal temperature of 150 degrees F, about 4 minutes per side. Transfer to a clean wire rack set over a rimmed baking sheet to drain.
  • For the table gravy: Meanwhile, drain the oil from the skillet. Melt the butter over medium-high heat, then whisk in the flour and cook for a minute, whisking constantly. Whisk in the half-and-half, a little at a time. Bring the gravy to a simmer and simmer until thickened, whisking occasionally, 1 to 2 minutes. Whisk in the House Seasoning and season with salt and pepper.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

  • Preheat oven to 350 degrees F (175 degrees C).

1/4 teaspoon salt
1/4 teaspoon dried thyme leaves

1 tablespoon water
1 tablespoon cornstarch

Steps:

  • 1. Cook noodles to desired doneness as directed on package, adding green beans during last 4 minutes of cooking time. Drain cover to keep warm.2. 1 leek (white and light green part), thinly sliced (about 1 cup)
4 bone-in pork loin chops, 3/4 inch thick (about 1 1/2 lb)
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup stout or dark beer
1 tablespoon Gold Medal™ all-purpose flour

Steps:

  • In 12-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Add leeks; cook 3 to 5 minutes, stirring frequently, until tender. Remove leeks from skillet; set aside.
  • Sprinkle both sides of pork chops with salt and pepper. In same skillet, heat remaining 1 tablespoon oil over medium-high heat. Add pork; cook 5 to 6 minutes, turning once, until golden brown on each side. Spoon leeks over pork. Pour beer around pork. Heat to boiling; reduce heat to low. Cover; simmer 45 to 50 minutes or until pork is tender. Remove pork from skillet; cover to keep warm.

1/2 teaspoon sage
1/2 teaspoon marjoram
1/4 teaspoon black pepper
1/8 teaspoon salt
olive oil or cooking spray
1/4 cup chopped onion
1 clove minced garlic
1 cup sliced mushrooms
3/4 cup beef broth
1/3 cup sour cream (can use fat free)
1 tablespoon all-purpose flour
1 teaspoon Dijon mustard or 1 teaspoon spicy brown mustard
hot cooked egg noodles

Steps:

  • Combine sage, marjoram, pepper and salt; rub on both sides of chops.
  • Lightly coat large nonstick skillet with oil or spray and heat over medium.
  • Place chops in skillet and cook 5 minutes, turning once, until chops are barely pink.

1 cup beef stock
2 tablespoons brown sugar
½ teaspoon chipotle-flavored hot sauce
2 teaspoons Worcestershire sauce
1 pinch salt, to taste

Steps:

  • Place the pork chops in a dish; pour 2 cans of the root beer over the chops. Place in refrigerator to marinate at least 2 hours. Remove the pork chops from the root beer; season with salt and pepper.
