Tangy Coleslaw for Pulled Pork image

This tangy coleslaw is great used as a topping for pulled pork sandwiches.

1 head cabbage, finely shredded
1 red onion, quartered and thinly sliced
1 cup white sugar
1 cup white vinegar
⅔ cup vegetable oil
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon celery seed

Steps:

  • Combine cabbage and red onion in a large bowl.
  • Stir sugar, vinegar, vegetable oil, salt, dry mustard, and celery seed together in a saucepan. Bring to a boil; remove from heat.
  • Pour sugar and vinegar mixture over the cabbage and red onion. Toss mixture. Let cool, about 10 minutes. Refrigerate for at least 1 hour.

1 lb lean pork tenderloin
3 1/3 tablespoons barbecue sauce, divided (equals 3 Tbsp plus 1 tsp ( I prefer Sweet Baby Ray's)
3 tablespoons light mayonnaise
1 tablespoon water
1 teaspoon apple cider vinegar
black pepper, freshly ground, to taste
2 cups packaged coleslaw mix
3 tablespoons green onions, sliced
4 medium whole grain buns or 4 medium mixed-grain hamburger buns

Steps:

  • Preheat oven to 450ºF. Line a shallow roasting pan with nonstick foil (for easy clean-up). Or coat pan with cooking spray.
  • Place pork in pan and brush with 2 tablespoons of barbecue sauce. Roast until an instant read thermometer inserted in center of pork registers 160ºF for medium, about 30 minutes. Transfer pork to a cutting board; cover loosely with foil and let stand 10 minutes.
  • Meanwhile, whisk mayonnaise, water, vinegar and pepper together in a medium bowl until smooth. Add coleslaw mix and scallions; toss to mix and coat.
  • Slice pork into 20 slices. For each sandwich, place 5 slices of pork on the bottom half of each roll and drizzle with 1 teaspoon of barbecue sauce; top with 1/2 cup of coleslaw and cover with top half of roll. Yields 1 sandwich per serving.

1 garlic clove
1 teaspoon cumin
200 g cabbage
1/2 onion
1 carrot
2 tablespoons mayonnaise
1 tablespoon yoghurt
660 g pork
2 eggs
75 g breadcrumbs
2 tablespoons oil
2 tablespoons parsley
bread

Steps:

  • Heat the oil in a frying pan; add the garlic and cumin. Cook for 2 minutes. Shred the cabbage, slice the onion, grate the carrot; put in a bowl. Add the mayo and yoghurt, stir in the garlic and cumin. Season, mix, and set aside.
  • Place each steak between 2 sheets of clingfilm; bash with a rolling pin. Put the egg and breadcrumbs on 2 plates. Dip the steak in the egg, then coat in crumbs.
  • Heat the oil in a frying pan; cook the pork for 4 minutes each side. Add the parsley; serve with coleslaw and bread.
