Steps:
- Whisk together the ingredients for (one) marinade in a small bowl until combined.
- Combine marinade with pork in a ziplock freezer bag, and toss until the pork is evenly coated in the marinade. Carefully press out any extra air that might be in the bag, then seal. (You will need 1/2 cup marinade per 1 pound of pork.)
- Refrigerate the pork pack(s) for anywhere from 30 minutes to up to 1 day.
- Immediately transfer the pork pack(s) to the freezer, and freeze for up to 3 months. Then when you're ready to cook the pork, transfer the pork pack back to the refrigerator for 24 hours, or until it has thawed completely. Or to speed up the process, you can submerge the sealed pork pack in a bowl of cold water in the refrigerator until it has thawed completely.
- When ready to cook, remove the pork from the marinade, discard the remaining marinade, and cook however you prefer. (See recommendations below.)

- Cut each pork chop from one side through the middle horizontally to within 1/2 inch of the other side. Open the two sides and spread them out like an open book.
- Whisk olive oil, brown sugar, lemon juice, mustard, garlic, thyme, onion powder, Worcestershire sauce, vinegar, mesquite seasoning, parsley, salt, and pepper together in a bowl and pour into a large resealable plastic bag. Add pork chops, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, 6 to 8 hours.

- Whisk together the olive oil, soy sauce, garlic, mustard, salt, and pepper in a bowl. Place the pork loin in a large resealable plastic bag and pour in the marinade. Marinate in the refrigerator at least 1 hour before cooking.
- Preheat an oven to 350 degrees F (175 degrees C).
- Transfer the pork loin to a baking dish; pour marinade over the pork.

VIRGIL'S "TOP SECRET" PORK CHOP MARINADE
This is my father-in-law's famous 'top secret' pork chop marinade. Top secret means that he shared it with everyone the last 20 years, even my brother, who is no relation to Virgil, but he would never share with me until recently. I gave him so much grief about it that he finally shared it with me. I know what you're thinking, 'Virgil didn't share it with you because he didn't want it blabbed on the internet.' Nope. He only did that to pester me. This is a very good marinade that was developed by Virgil and his brother specifically for pork chops, but also works on beef and chicken.

- Make your marinade the day before, or at least an hour before cooking. Start by bashing up 1 teaspoon fennel seeds, ½ teaspoon cumin seeds and 2 cloves in a pestle and mortar.
- Add 1 heaped tablespoon sweet smoked paprika and the zest and juice of 1 orange and muddle it all together.
- Peel and very finely chop 4 cloves of garlic, then pick and very finely chop 1 small bunch of fresh thyme and add both to the pestle and mortar.
- Add 150ml quality tomato ketchup and 6 tablespoons of balsamic vinegar, then combine.
- Lay 4 x 400g higher-welfare pork fillets on a tray and season with sea salt and freshly ground black pepper. Spoon over most of the marinade and massage it into the fillets until they’re completely coated (save a little for brushing over during cooking to build up a deliciously sticky blackened glaze).
