2 tablespoons neutral oil
2 bone-in pork chops
Kosher salt and freshly cracked black pepper
3/4 cup chicken stock
1 shallot, diced
1 tablespoon stone-ground mustard
2 teaspoons apple butter

Steps:

  • Heat the oil in a large skillet over medium-high heat. Sprinkle the pork chops with salt and pepper on both sides and cook, flipping once, until nicely browned and cooked to 150 degrees F or desired doneness, 5 to 7 minutes per side. Set the chops aside and reserve the skillet.
  • Pour the chicken stock into the skillet and scrape with a wooden spoon to lift any browned bits. Add the shallots and cook, stirring occasionally, until the stock is reduced by half, about 4 minutes. Whisk in the mustard and apple butter. Turn off the heat and continue whisking until the sauce coats the back of a spoon, about 1 minute. Season as desired with freshly cracked black pepper.

1 teaspoon salt
3/4 teaspoon freshly ground pepper
1 cup apple jelly
2 tablespoons country-style Dijon mustard
2 teaspoons chopped fresh sage leaves
4 large Fuji apples, cut into wedges
2 large sweet onions, cut into wedges
1 tablespoon canola oil

Steps:

  • Heat oven to 375°F. Line roasting pan with foil; spray rack with cooking spray. Place pork on rack. Sprinkle with 1/2 teaspoon of the salt and 1/2 teaspoon of the pepper.
  • In medium microwavable bowl, microwave jelly uncovered on High about 1 minute or until melted. Stir in mustard and sage. Brush mixture on pork.
  • In large bowl, place apples and onions. Sprinkle with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Drizzle with oil; toss to coat. Arrange apple mixture around pork.
  • Roast uncovered 50 minutes to 1 hour or until meat thermometer inserted into center of pork reads 145°F. Cover loosely with foil; let stand at least 3 minutes. Slice pork; serve with apples and onions.

1 boneless rolled pork loin roast (3 to 4 pounds), trimmed
1 garlic clove, peeled and cut into lengthwise strips
1 bottle (8 ounces) Italian salad dressing
1/4 cup red wine vinegar
1/4 teaspoon onion salt
Salt and pepper to taste
1/4 cup apricot preserves
1/4 cup prepared mustard
2 tablespoons brown sugar
2 tablespoons butter, melted

Steps:

  • Cut slits in top of roast and insert garlic strips. Place roast in a large resealable bag; add salad dressing and vinegar. Seal bag and refrigerate overnight. , Drain and discard marinade. Place roast on a rack in a shallow roasting pan. Season with onion salt, salt and pepper. , Bake, uncovered, at 325° for 1-3/4 to 2 hours or until thermometer reads 160°. Combine the preserves, mustard, brown sugar and butter; brush over roast during the last 15 minutes of baking.

Steps:

  • Preheat oven to 325°F. Mix preserves, mustard, pineapple juice, soy sauce and ginger until well blended; set aside. Place roast, rib side down, in shallow roasting pan. Insert meat thermometer into roast without touching the bone.

I found this recipe online and am posting it here to save it. I made it tonight and we all enjoyed the delicious flavor. The apple glaze was a wonderful addition to the pork. The recipe calls for a boneless roast, but I used a bone in roast. It was done is basically the same amount of time.

1 (3 lb) boneless pork sirloin roast
1/2 cup frozen apple juice concentrate, thawed
2 tablespoons cider vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
1 teaspoon soy sauce
1/2 teaspoon dried marjoram, crushed
1/4 teaspoon paprika
1/4 teaspoon black pepper
3 tart apples, cored and cut in wedges
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Place the roast in a roasting pan.
  • Combine the remaining ingredients except the apples, cornstarch and water; mix well and brush over the pork.
  • Roast in the oven preheated to 325 degrees for 45 minutes making sure to occasionally baste the pork with the apple juice mixture.
  • After roasting 45 minutes, add the apple wedges to the pan and roast another 30-45 minutes.
  • When the internal temperature of the roast is about 160 degree, remove from the oven.
  • Strain the juices into a measuring cup.
  • If there isn't 1 c of liquid, add water to equal 1 cup and pour into a saucepan.
  • Combine the cornstarch and 1 T water; add to the saucepan.
  • Cook and stir until thicken and bubbly.
  • Serve glaze over sliced pork.

  • Plan ahead, this recipe brines overnight. In a large mixing bowl, combine the salt, brown sugar, water, and apple cider and stir until the salt and sugar crystals dissolve.
  • Put the roast in a large sturdy resealable plastic bag and pour the brine over the meat. Seal, return to the bowl (to prevent leakage), and refrigerate for at least 8 hours or overnight.
  • Remove the roast from the brine and pat dry with paper towels. (Discard brine.) Tie the roast between each bone with kitchen twine. Season generously with pepper.
  • When ready to cook, start the Traeger grill on Smoke and set the temperature to 350F and preheat for 10 to 15 minutes. Make the glaze: In a small saucepan, bring the 2 cup of apple cider and the rosemary to a boil over medium-high heat and reduce by half.
  • Put the roasting pan on the grill grate and roast the meat for 1 hour. Brush with the glaze. Grill: 350 ˚F.
  • Continue to roast until the internal temperature of the meat reaches 145, another 45 minutes to 1 hour, brushing once more with the glaze. Let the meat rest for 20 minutes.
  • Remove the foil from the ends of the bones, then snip and remove the kitchen twine. Brush with the remaining glaze before slicing into individual chops.
