PORK STEW WITH PINEAPPLE

Number Of Ingredients 12

1 tablespoon vegetable oil or olive oil
2 1/2 pounds boneless pork loin country-style ribs, cut in 1-inch pieces
1 teaspoon salt, or to taste
1/4 teaspoon freshly ground pepper, or to taste
2 medium onions, sliced in wedges from top to root end
1 teaspoon dried oregano (Mexican variety preferred), crumbled
1 cup canned fat-free reduced-sodium chicken broth
3/4 cup , drained pineapple chunk, , fresh or canned
1/4 cup pineapple juice from draining the pineapple
1 tablespoon Worcestershire sauce
1 tablespoon ground ancho or pasilla chili powder
1/4 teaspoon ground cinnamon (Mexican canela or Ceylon variety preferred)

Steps:

  • 1. Preheat oven to 350°. Heat the oil in a large ovenproof pan over medium-high heat. Brown the meat, in batches, and season with 1/2 teaspoon of the salt and pepper. Remove the browned meat to a bowl as it browns. 2. Add the onions, oregano, and remaining salt to the pan and cook, partially covered, stirring frequently to scrape up browned bits from the pan bottom, about 2 minutes. Add the remaining ingredients and return the meat and collected juices to the pan. Stir to combine. Bring to a boil. Cover and place in the oven and cook 45 to 50 minutes or until the meat is very tender. Add salt, if needed. Serve hot.From "1,000 Mexican Recipes." Copyright 2001 by Marge Poore. Family favourite from my mother-in-law. Good for a weeknight supper or for company. I use any kind of lean pork (loin, tenderloin etc.). Easy and delicious.

1 1/2 lbs pork, cut into 1 inch pieces
2 tablespoons soya sauce
1/3 cup ketchup
1/3 cup water
1 (19 ounce) can pineapple tidbits, drained (reserve juice or syrup)
1 green pepper, cut into pieces (or red)
pepper, to taste
2 tablespoons vinegar
1 tablespoon oil
1 medium onion, chopped
2 tablespoons brown sugar
2 tablespoons cornstarch
1 teaspoon salt

Steps:

  • Brown onions and pork in oil.
  • In a bowl or large measuring cup, combine sugar, cornstarch and salt. Gradually add vinegar, soya sauce, ketchup, water, and syrup/juice of drained pineapple.
  • Add mixture to pork.
  • Cook over low heat, stirring until thick and clear.
  • Cover and simmer for 1 hour.
  • Add pineapple tidbits and green pepper. Cook for an additional 5 minutes.
  • Serve over hot rice.

  • Mix water, cornstarch, reserved pineapple juice, honey, soy sauce, brown sugar, ginger and garlic in a small bowl until well combined.
  • Turn the Instant Pot ON and select "saute" mode, adjust heat to more. When hot, add 1 tablespoon of oil. Add onion and red peppers and saute for 3 minutes, stirring constantly, until they are vibrant in color and just tender. Remove from Instant Pot and reserve.
  • Add the remaining tablespoon of oil to the Instant Pot. When hot, add pork meat and saute until no longer pink. Add pineapple chunks and oregano. Season with salt and black pepper to taste; mix to combine. Add the sauce. Press "cancel". Secure the lid to the instant pot and select "manual" or "high pressure" and cook for 10 minutes.
