SLOW-COOKER PORK CURRY



Slow-Cooker Pork Curry image

2 small pork tenderloins (about 12 ounces each)
2 teaspoons Madras curry powder
2 teaspoons packed light brown sugar
Grated zest and juice of 1 lime, plus wedges for serving
Kosher salt and freshly ground pepper
1 pound small red-skinned potatoes, halved or quartered if large
1 small bunch fresh cilantro, leaves whole, tender stems chopped
1 small red onion, halved and thinly sliced
1 13.5-ounce can light coconut milk (preferably Thai)
3 tablespoons Thai red curry paste
1 1/2 cups frozen French-cut green beans (about 6 ounces)
1 1/2 cups mung bean sprouts

Steps:

  • Toss the pork with the curry powder, 1 teaspoon brown sugar, the lime zest and a generous pinch each of salt and pepper in a large bowl; set aside. Put the potatoes in a 6- to 7-quart slow cooker and top with the cilantro stems and half of the red onion slices.
  • Whisk the coconut milk with 1/4 cup water and the curry paste in a small bowl. Pour into the slow cooker. Add the pork and nestle into the vegetables and sauce. Cover and cook on low, 7 hours.
  • Transfer the pork to a cutting board; let rest. Stir the green beans into the slow cooker and let stand, uncovered, 10 minutes. Toss the remaining red onion with the lime juice in a small bowl and let stand 10 minutes. Stir the remaining 1 teaspoon brown sugar into the curry sauce and season with salt and pepper.
  • Divide the green beans, potatoes and sauce among bowls. Slice the pork and add to the bowls. Top each serving with the onion and any remaining lime juice in the bowl, the bean sprouts and cilantro leaves. Serve with lime wedges.

Kosher salt and freshly ground pepper
1 1/2 teaspoons ground coriander
1/2 teaspoon red pepper flakes
1/4 cup torn fresh sage (about 14 leaves)
1 tablespoon fresh thyme
1 teaspoon chopped fresh rosemary
1 bay leaf, crumbled
3 cloves garlic
1 7-pound bone-in pork picnic shoulder, skin removed
Juice of 2 oranges
Juice of 2 lemons
1 cup low-sodium chicken broth
1 pound baby potatoes
1 rutabaga (about 1 1/4 pounds), peeled and cut into 3/4-inch pieces
1 14.5-ounce can diced fire-roasted tomatoes
1 1/2 teaspoons sugar
1 cup torn fresh mint

Steps:

  • Combine 2 tablespoons salt, 1 teaspoon pepper, the coriander, red pepper flakes, sage, thyme, rosemary, bay leaf and garlic in a food processor and pulse to make a paste. Pierce the pork all over with a paring knife, then rub with the spice paste. Tie the roast with kitchen twine so it keeps its shape.
  • Transfer the meat to a 6-quart slow cooker. Add the juice of 1 orange and 1 lemon along with the chicken broth, potatoes and rutabaga. Cover and cook on high, 7 1/2 hours.
  • Transfer the meat to a cutting board; cover with foil and set aside. Skim off the fat from the cooking liquid. Add the tomatoes, sugar and the juice of the remaining orange and lemon to the slow cooker; cover and cook on high, 30 more minutes. Stir in the mint just before serving.
  • Remove the twine from the pork and slice. Serve with the vegetables and cooking liquid.

1 teaspoon red pepper flakes
1 (2 pound) pork tenderloin, cut into thin 1 1/2 inch strips
2 tablespoons cooking oil
½ cup Marsala wine or white wine
1 (14 ounce) can coconut milk
½ cup crunchy peanut butter
2 cubes beef bouillon
3 teaspoons curry powder, or to taste
3 cloves garlic, pressed
1 onion, diced
1 pound fresh mushrooms, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Oil a large casserole dish. Combine flour and red pepper flakes in a large resealable plastic bag; add pork, seal, and shake to coat.
  • Heat oil in a large skillet or wok over medium-high heat. Brown tenderloin in hot oil, stirring frequently. Drain meat on paper towels, then arrange in the bottom of the prepared casserole dish.
  • In the same pan the pork was cooked in, mix together wine, coconut milk and peanut butter over low heat. Crumble bouillon cubes into the mixture, and season with curry powder. Heat until warm, and then stir in the garlic, onion, and mushrooms. Pour over meat in the casserole dish.
  • Bake in preheated oven for 45 minutes.

2 cups cubed cooked pork
1/2 cup chopped onion
1/2 cup red pepper, sliced
1 cup sliced celery
1/2 cup salted peanuts
2 1/2 tablespoons butter or 2 1/2 tablespoons margarine
3 tablespoons flour
1 cup pork stock or 250 ml chicken stock
1 cup apple, wedges
2 tablespoons chopped chutney (optional)
2 teaspoons curry powder
1/4 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a skillet, saute onion, red pepper, celery, and peanuts in butter.
  • Stir in flour, then add stock.
  • Add chutney, curry, salt, pepper, and sugar. Simmer 10 minutes, or until thickened, stirring often.
  • Add the apple wedges and cooked pork and heat thoroughly.
  • Serve with hot rice.

1 tablespoon coriander seed
1 teaspoon fennel seed
1 teaspoon black peppercorns
6 garlic cloves, peeled
2 cm fresh ginger, peeled
1 onion, roughly chopped
1 1/2 kg lean pork, diced
3 tablespoons oil
3/4 cup water
salt
1 cup Greek yogurt
1 cup fresh coriander, finely chopped

Steps:

  • Curry Paste:.
  • Toast the coriander, fennel and peppercorns in a dry fry pan over medium heat until fragrant.
  • Grind or use a mortar and pestle to crush to a powder.
  • Put the garlic, ginger, onion and ground spices in a food processor and pulse until a paste is formed.
  • Curry:.
  • Add 2 tablespoons oil to a fry pan and brown the pork in batches. Remove to a plate.
  • Add the remaining oil and heat; fry the spice paste for 3 to 4 minutes stirring often. Add the pork and stir well; add the water and bring to the boil.
  • Season with salt to taste (I find curry needs quite a bit of salt so start with about 1 teaspoon), cover and simmer gently for 2 hours (add more water if the sauce becomes too thick).
  • Pour off any excess oil and stir through the yogurt and coriander leaves.

This recipe is one of the easiest things you can do with pork. Tomato ketchup is already rich in flavor so this dish doesn't require much unless you want to put in more vegetables. To add something green in this dish, I've added bitter melon.

½ small bitter melon
6 ounces pork tenderloin, thinly sliced
¼ medium onion, sliced
⅓ medium carrot, cut into thin strips
3 tablespoons tomato ketchup
1 teaspoon curry powder
1 teaspoon sesame oil
1 clove garlic, minced
1 pinch salt
1 pinch ground black pepper

Steps:

  • Cut bitter melon along its length. Remove any seeds in the center by scraping them out with a spoon. Slice thinly crosswise, then soak in salt water for at least 5 minutes. Drain.
  • Combine bitter melon with pork, onion, and carrot in a large, microwave-safe bowl.
  • Combine ketchup, curry powder, sesame oil, garlic, salt, and pepper in a small bowl; mix well. Pour over melon-pork mixture and toss until well mixed. Cover and microwave at 600W for 4 minutes.
  • Remove from the microwave, uncover, and mix. Return to the microwave and cook until pork is well done, 1 to 2 more minutes.

1 can (14-1/2 ounces) reduced-sodium chicken broth
1 boneless pork loin roast (3 to 4 pounds)

Steps:

  • In a small bowl, mix seasonings. In a 6-qt. slow cooker, combine vegetables, broth and 2 teaspoons seasoning mixture. Rub remaining seasoning mixture over roast; place over vegetables. 1 tablespoon extra virgin olive oil
2 pounds pork shoulder in 1-inch cubes
1 head garlic, papery coating removed, cut in half crosswise
2 cups red wine
3 tablespoons coriander seeds, cracked and wrapped in cheesecloth
1 tablespoon butter
lemon juice to taste
1/2 cup chopped cilantro leaves

Steps:

  • Place oil in a large, deep skillet on medium-high heat. A minute later, add pork, and cook, undisturbed, until brown on one side, about 5 to 10 minutes. Turn and brown another side. Add garlic and cook, stirring occasionally, for a minute or two. Add 1 1/2 cups wine, then coriander.
  • Turn heat to low, and cover. Simmer gently for 45 minutes to an hour, until pork is tender. Remove coriander. Stir in remaining wine; cook 2 or 3 minutes. Stir in butter.
  • Add lemon juice to taste. Stir in half the cilantro, then serve, garnished with remaining cilantro.
