PORTUGUESE GRILLED SARDINES

Portuguese Grilled Sardines image

Number Of Ingredients 5

24 sardines, fresh, cleaned, heads and tails left on
1 cup salt, coarse (kosher or sea)
2 tablespoons olive oil, extra-virgin
black pepper, freshly ground, to taste (optional)
lemon wedges, for serving

Steps:

  • 1. Rinse the sardines under cold running water, then drain and blot dry with paper towels. Sprinkle a third of the salt in the bottom of a baking dish. Arrange half the sardines on top and sprinkle with half the remaining salt. Add another layer of sardines and sprinkle the remaining salt over all. Cover and let cure in the salt, in the refrigerator, for 30 to 60 minutes.2. Preheat the grill to high.3. When ready to cook, rinse the salt off the sardines and blot dry with paper towels. Brush the sardines with the oil and season with pepper, if desired. If you're worried about the fish sticking, use a hinged fish grilling basket otherwise, oil the grate and arrange the fish directly on it. Grill the sardines until their skins are lightly charred and the flesh is cooked to flakiness, 3 to 6 minutes per side. Remove to a platter with a long spatula and serve at once. Let diners remove the head and tail, and bones, too. Serve with lemon wedges for squeezing.Serves 6 as an appetizer, 3 to 4 as an entrée

GRILLED SARDINES

Grilled Sardines image

What to do about seafood? Nutritionists say we should eat more, that many types of fish are nutritious and contain fats that seem to protect the heart. I know from experience that many of them can make for fine meals. If you've only had sardines from a can, you may turn up your nose at them. Fresh ones will change your mind. Brush them with olive oil, toss a few sprigs of rosemary onto a hot grill, and grill them. Sardines take two to three minutes to grill and about that long to eat. They're a rare treat and a great nutritional package, containing omega-3 fats, selenium, vitamin B12, calcium, niacin and phosphorus.

Time 15m

Yield Serves four

Number Of Ingredients 6

24 medium or large sardines, cleaned
2 tablespoons extra virgin olive oil
Salt
freshly ground pepper
A handful of fresh rosemary sprigs
Lemon wedges

Steps:

  • Prepare a hot grill, making sure the grill is oiled. Rinse the sardines, and dry with paper towels. Toss with the olive oil, and season with salt and pepper.
  • When the grill is ready, toss the rosemary sprigs directly on the fire. Wait for the flames to die down, then place the sardines directly over the heat, in batches if necessary. Grill for a minute or two on each side, depending on the size. Transfer from the grill to a platter using tongs or a wide metal spatula, and serve with lemon wedges.

SARDINES PORTUGUESE-STYLE

Sardines Portuguese-Style image

From Emeril at the Grill. A very easy and traditional way to enjoy fresh sardines. Serve this with lots of crusty bread!

Provided by IngridH

Categories     Portuguese

Time 20m

Yield 4 serving(s)

Number Of Ingredients 17

2 lbs fresh sardines, scaled cleaned and rinsed
2 cups tomatoes, peeled seeded and diced (about 1 pound)
3/4 cup extra virgin olive oil
1/3 cup kalamata olive, pitted and coarsely chopped
1/3 cup fresh parsley, chopped
2 tablespoons fresh basil, chopped
2 tablespoons red onions, minced
1 tablespoon garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon sea salt
1/2 teaspoon black pepper
1/2 cup extra virgin olive oil
1 teaspoon sea salt
1/2 teaspoon pepper
1/4 cup fresh lemon juice
1 lemon, sliced
4 roma tomatoes, halved

Steps:

  • Lay the sardines on a clean kitchen towel, and remove any excess moisture from them. Refrigerate until ready to grill.
  • Preheat a grill or broiler to medium high, and make sure the grates are VERY clean (to prevent the fish from sticking).
  • In a mixing bowl, combine the diced tomatoes, 1/2 cup olive oil, olives, parsley, basil, onion, garlic, salt and pepper. Mix well, then set aside at room temp until you are ready to serve.
  • Place the sardines on a rimmed baking sheet, then drizzle with 1/4 cup olive oil, turning to coat completely. Season with the remaining salt and pepper.
  • Oil the grill grates well, then place the sardines directly on the grates. Cook undisturbed, until the skin is crispy and slightly charred (2-3 minutes), at which point they will release easily from the grill. Turn them over, and cook for another 2-3 minutes.
  • While the fish are cooking, brush the lemon slices and tomato halves with some of the remaining olive oil, and season to taste with salt and pepper. Place on the grill with the fish, and cooked until they get char marks, about 2 minutes.
  • Place the sardines on a serving platter, drizzle with the remaining olive oil and 1/4 cup lemon juice. Serve immediately, with the grilled lemon and tomatoes, and the tomato-olive vinaigrette spooned over the top.
