Steps:
- In a large cast-iron or other heavy skillet, cook the sausage over medium heat until no longer pink; drain. Add the onion, carrots and green pepper; cook until tender. Stir in the potatoes, salt and pepper. Reduce heat; cook and stir until lightly browned and heated through, about 20 minutes.

SPICY ANDOUILLE SAUSAGE HASH
This spicy breakfast hash is my own take on an old campfire recipe.

Steps:
- Melt butter and oil in a large cast iron skillet over medium-low heat. Add onion and garlic; saute until onions are soft, 5 to 7 minutes.
- Add potatoes and stir until well coated with butter and oil. Cook over medium heat until tender, 15 to 20 minutes.
- Cut sausage into 1/2-inch thick slices and stir into the skillet. Cover and cook until heated through, about 5 minutes. Stir in corn and jalapeno; cover and cook until heated through, about 5 minutes. Season with salt and pepper.

Steps:
- Boil the potatoes for 5 mins, drain them.
- Heat the oil in a large frying pan and fry the onions till soft.
- Add the potatoes and continue cooking till the potatoes are brown.
- Add the sausage and mustard cook for 5 minutes.
- Make 4 wells in the mixture and crack an egg into each one, cover the pan with a lid and cook till the eggs are set.
- Serve with crusty bread.
