These Norwegian Klubb Dumplings are so tasty, filling, and a great way to celebrate Scandinavia. Whether it is a holiday tradition or a weeknight meal, these dumplings are worth the effort.

4 potatoes, peeled and shredded
3 cups flour
1 teaspoon salt
1 egg
Approximately 4 ounces ham or other cooked pork cut into 8-12 cubes
5 Tablespoons melted butter
Salt and pepper to taste

Steps:

  • Bring large pot of salted water to hard simmer
  • While water is warming, grate potatoes and put in big bowl
  • Add flour, egg, and salt to the bowl
  • Mix and knead until firm. Add more flour if necessary to bring to stiff bread dough consistency
  • Wrap dough around one cube of ham. Each dumpling should be the size of a large meatball and you should get 8-12 dumplings.
  • Drop dumpling into simmering water and allow to cook for 45 minutes, making sure dumpling does not stick to the bottom of the pot.
  • remove with a slotted spoon and serve with butter, salt, and pepper

A big favorite of my Swedish-raised husband. This reminds him of his grandma's kitchen every time. Serve hot with butter. These are great as leftovers, sliced and fried, served with a fried egg.

¼ pound salt pork, cubed
1 small onion, coarsely chopped
1 ½ cups cold mashed potatoes
1 large egg
¾ teaspoon salt
¼ teaspoon ground black pepper
1 pinch ground nutmeg
2 cups sifted all-purpose flour
½ cup all-purpose flour
1 gallon water, or as needed
2 (32 fluid ounce) containers beef broth

Steps:

  • Fry salt pork with onion in a skillet until the salt pork is golden brown, about 10 minutes. Drain fat and set salt pork and onion mixture aside.
  • Mix mashed potatoes, egg, salt, black pepper, and nutmeg together in a bowl; stir 1 cup flour into potato mixture. Sprinkle 1 cup flour onto a work surface and turn the dough out onto the flour. Knead the flour on the work surface into the dough.
  • Cut dough into 12 equal pieces and roll into balls, dusting your hands and sprinkling work surface with remaining 1/2 cup flour. Press your thumb into each dumpling to make an indentation, and fill with a small amount of salt pork-onion mixture. Pinch the dumplings closed and roll in flour.
  • Bring water to a boil in a large pot. If desired, replace half the water with beef broth. Drop dumplings into the boiling water and broth and reduce heat to low. Simmer until cooked through, about 25 minutes. Drain and transfer to a serving bowl.

Kosher salt
1 pound thick cut ham, cut into 1-inch cubes
2 large russet potatoes, peeled (about 20 ounces) and coarsely grated
1 large egg, beaten
2 teaspoons kosher salt
1 1/4 to 1 1/2 cups all-purpose flour, plus more for rolling the klubb
Brussels sprouts, for serving (see recipe below)
2 tablespoons unsalted butter, melted
1 tablespoon whole grain mustard
Hot sauce, for serving (optional)
2 tablespoons neutral oil
1 pound Brussels sprouts, halved
1 shallot, sliced
Kosher salt
Freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil and add 1/2 cup of cubed ham. Let the ham boil (to flavor the water) while you make the klubb.
  • To make the klubb: In a large mixing bowl, add the grated potatoes, egg and salt. Using a fork, mix well until thoroughly combined. Add 1 1/4 cups flour and mix well. Add up to ¼ cup more flour, a little at a time, until you get a thick, sticky dough that clumps together when pressed in your fist.
  • Moisten your hands with water. Using a 1/3 cup measure, scoop the potato mixture into your hand and press an indentation in the center. Place a piece of ham into the center and press the potato mixture around to enclose it. Roll into a loose ball and coat in the flour. Then roll into a nice round ball. Repeat with the remaining potato mixture. You'll get about 8 to 10 klubb in all.
  • Gently drop the klubb in the boiling water. Reduce the heat to a simmer. Let the klubb cook for 2 minutes to firm up, then loosen them with a spatula if they seem to be sticking to the bottom of the pot. Cook the klubb for 35 to 45 minutes, until firm, shiny and floating at the top.
  • When the klubb have about 15 minutes left on the timer, make the Brussels sprouts.
  • When the klubb are done, drain and nestle directly into the Brussels sprouts, adding another drizzle of oil if the pan looks dry. Cook undisturbed for a couple more minutes to get some texture on the klubb. Add the butter, mustard, salt and pepper. Stir to combine and fully coat. Season with flaky salt and black pepper. Serve with hot sauce at the table, if desired.
  • Heat a large nonstick skillet over medium-high heat and add the oil. Add the Brussels sprouts and cook undisturbed for 6 to 8 minutes until deeply golden. Give them a toss and add the remaining ham, the shallot, a couple of good pinches of salt and pepper. Cook, stirring occasionally until the Brussels sprouts start to get tender, 6 to 8 more minutes.

750 g raw potatoes, grated
250 g boiled potatoes
200 g barley flour
salt

Steps:

  • Mix the raw, grated potato with the flour immediately to stop the potato turning brown.
  • Mash the boiled potato, mix with the grated potato and add salt to taste. Roll the potato mixture into balls and leave to summer in salted water for approximately 30 minutes.
  • Make sure there is enough water in the pan so that the dumplings are not touching.
  • Serve with goat's cheese sauce and meat.

4 cups grated raw potatoes
3 cups flour (may need more)
1/2 teaspoon baking powder
1 teaspoon salt
1 ham shank

Steps:

  • Mix potatoes, flour, baking powder and salt together to make a stiff dough.
  • Form dough into dumplings, placing a small cube of ham in center of each dumpling.
  • Add enough flour to keep from sticking.
  • Drop into boiling ham broth or stock. Cook one to one and a half hours. Serve with hot butter and ham.

This is a traditional Norwegian recipe that would be made for Christmas and other holidays. my Great-Grandmother, Mina Taylor learned from her parents who brought it with them when they emigrated from Norway in the late 18 90's. They would spend hours making this dish with a lot of steps and some difficulty. My Grandma taught me this as an easier way and can be done in about an hour or so. If you don't have a stand mixer, you can stir the potatoes by hand, but it will take more work from you and will take a little bit longer to make. Enjoy!

6 large russet potatoes
4 cups flour (Could use Gluten-Free flour)
1 (12 ounce) can evaporated milk
3 tablespoons olive oil or 3 tablespoons butter
salt and pepper

Steps:

  • Peel the potatoes. Using a cheese grater, grate the potatoes and place in a large mixing bowl.
  • Using a KitchenAide or other stand mixer, Add the flour one cup at a time until the potatoes are not sticky and are able to handle. You may need to add more or less flour, depending on how sticky the potatoes may become.
  • Form the potatoes and roll up into a ball about the size of a tennis ball. This should make about 6 balls.
  • In a large pot, boil the potatoes in salted water for about 20 minutes or until soft when poked with a fork.
  • Remove them from the water and allow to cool for about 10 minutes or so. Slice the potatoes into good bite-size pieces.
  • Heat a large skillet and add the 3 tbsp of olive oil or butter and add the sliced potatoes and fry until golden brown and salt and pepper for taste.
  • Add the canned milk and cook in the potatoes until the milk has evaporated into the potatoes. These go really well with a roast or a ham and add a vegetable and you have a delicious meal!

Norwegian Klub is a dish my mother made when we were growing up. I like to have it topped with bacon grease, and my wife likes them brushed with butter and sprinkled with sugar. Sliced and fried the next day these are a hearty breakfast meal. If you have a grinder, you may grind the potatoes instead of grating.

6 slices bacon
2 cups all-purpose flour
½ teaspoon baking powder
10 medium potatoes, peeled and shredded
2 teaspoons salt

Steps:

  • Place bacon in a large skillet over medium-high heat. Remove bacon from the pan, and reserve the grease.
  • In a medium bowl, stir together the flour and baking powder. Stir in potatoes to make a sticky dough.
  • Bring a large pot of water to a boil, and add 2 teaspoons of salt. Squeeze the potato mixture into 6 or 7 dumplings, or your desired size. Drop carefully into the boiling water. Simmer for 45 to 60 minutes. Remove to a platter with a slotted spoon.
  • Serve with bacon grease brushed over the top, and crumbled bacon. These may also be sliced and fried the next day for another great meal.

  • Prepare mixture: Place grated potatoes in a large mixing bowl. Add eggs and mix with your hands (I find this is the easiest way given the thick, heavy batter). Add 1 cup of flour - and then keep adding flour until the potato mixture sticks together. This was about 2 cups when I made it.
  • Form into balls: Take about 1/2 cup of the potato mixture. Place piece of pork chop in the middle and form into a ball. Repeat until all of the potatoes have been used.
  • Cook dumplings: Bring a large pot of water to a boil. Add potato dumplings one at a time. Cook for 30 minutes in simmering water. At 30 minutes, take one dumpling out and test to see if the meat inside is cooked. If not, cook for a little longer. My batch took 30 minutes.
  • Serving: Serve hot, topped with melted butter, salt and pepper, and parsley and/or chopped green onion.
