These banana-topped waffles are "fast food" in the best possible sense. Orange juice enlivens the hot, caramelized banana pieces topping the tasty waffles.

4 Kellogg's® Eggo® Homestyle waffles
3 large ripe bananas
1/4 cup orange juice
1/2 cup low fat Greek yogurt
1/4 cup toasted slivered almonds, milled flaxseed, toasted coconut or All-Bran

Steps:

  • 1. Lengthwise cut bananas in half. Crosswise cut each half into two pieces. In large nonstick skillet coated with cooking spray place banana pieces, cut side down. Cook over medium-high heat about 2 minutes or until lightly browned. Carefully turn. Add orange juice. Cook, frequently shaking skillet, about 1 minute more or until banana pieces soften.
  • 2. Heat one Kellogg's® Eggo® Homestyle waffle according to package directions. Place waffle on serving plate. Top with banana pieces. Pour any remaining juices from skillet over waffle and bananas. Add about 2 tablespoons yogurt and garnish as desired.

1 medium ripe banana
3 tablespoons almond butter
1 14-ounce can full-fat coconut milk
3 tablespoons dark brown sugar
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Vegan butter
Banana slices
Almond butter
Pure maple syrup
Hemp seeds

Steps:

  • In a large bowl, mash together banana and almond butter. Whisk in coconut milk, brown sugar, and vanilla.
  • Set a sifter over the bowl. Add flour, baking powder, cinnamon, and salt. Sift into the wet ingredients.
  • Stir with a spatula until incorporated, but don't over-stir!
  • Cook according to waffle maker instructions.
  • Serve with assorted toppings!

•1 cup old-fashioned oats
•2 teaspoons ground cinnamon
•1 teaspoon salt
•6 large egg whites, beaten to blend
•6 tablespoons (3/4 stick) unsalted butter, melted, or vegetable oil
•2 teaspoons baking powder
•1 cup plain low-fat yogurt
•6 bananas, sliced
•Honey or pure maple syrup
•3/4 cup sliced almonds, toasted

Steps:

  • •Mix first 4 ingredients in medium bowl to blend. Let stand until foamy, about 10 minutes. Mix both flours, oats, cinnamon and salt in large bowl. Add yeast mixture; stir to blend (batter will be thick). Cover and chill at least 1 hour or overnight. •Preheat oven to 200°F. Preheat Belgian waffle iron according to manufacturer's instructions. Mix egg whites, melted butter and baking powder into batter. Spoon 1 cup batter onto iron; spread with spatula. Cover and cook until golden and cooked through, about 4 minutes.
