KELLOGG'SAND#174; EGGOAND#174; WAFFLES WITH CARAMELIZED BANANAS AND GREEK YOGURT
These banana-topped waffles are "fast food" in the best possible sense. Orange juice enlivens the hot, caramelized banana pieces topping the tasty waffles.

Steps:
- 1. Lengthwise cut bananas in half. Crosswise cut each half into two pieces. In large nonstick skillet coated with cooking spray place banana pieces, cut side down. Cook over medium-high heat about 2 minutes or until lightly browned. Carefully turn. Add orange juice. Cook, frequently shaking skillet, about 1 minute more or until banana pieces soften.
- 2. Heat one Kellogg's® Eggo® Homestyle waffle according to package directions. Place waffle on serving plate. Top with banana pieces. Pour any remaining juices from skillet over waffle and bananas. Add about 2 tablespoons yogurt and garnish as desired.

VEGAN BANANA ALMOND BUTTER WAFFLES
Light and crisp yet hearty and full-of-flavor. Friends, meet my new favorite waffle.

- In a large bowl, mash together banana and almond butter. Whisk in coconut milk, brown sugar, and vanilla.
- Set a sifter over the bowl. Add flour, baking powder, cinnamon, and salt. Sift into the wet ingredients.
- Stir with a spatula until incorporated, but don't over-stir!
- Cook according to waffle maker instructions.
- Serve with assorted toppings!

- Mix first 4 ingredients in medium bowl to blend. Let stand until foamy, about 10 minutes. Mix both flours, oats, cinnamon and salt in large bowl. Add yeast mixture; stir to blend (batter will be thick). Cover and chill at least 1 hour or overnight. Preheat oven to 200°F. Preheat Belgian waffle iron according to manufacturer's instructions. Mix egg whites, melted butter and baking powder into batter. Spoon 1 cup batter onto iron; spread with spatula. Cover and cook until golden and cooked through, about 4 minutes. Transfer waffle to baking sheet and keep warm in oven. Repeat, making 6 waffles total. Place waffles on plates. Top with yogurt, bananas, honey and almonds.
