This is one of my family favourite for breakfast and evening tea. The original recipe was from my mother, but I have made a few changers to the recipe to make it more tastier. It's best serve hot with sweet chilli sauce.

Number Of Ingredients 12

1 cup small size soft skin prawns, discard head tail and clean
3 cups all-purpose flour
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon bicarbonate of soda
1 cup bean sprouts
1/2 cup leek, cut into 2 cm
1 onion, thinly slice
1 red chili pepper, thinly slice
1/2 cup corn kernel
1 cup water (or more)
oil (for frying)

Steps:

  • Combine all ingredients and a cup of warm water.
  • Mix thoroughly with a spoon until all ingredients are really combine (about 1 minute).
  • If the mixture is too thick add more water.
  • The mixture should be thick enough in order to spoon it into hot oil for deep frying.
  • Deep fry until golden brown.
  • Best serve hot with chilli sauce, satay sauce or ketchup.

I like the sauce with other things too....chicken fingers, fried shrimp, grilled chicken....try it out on whatever you think might suit you! 1/2 lb medium shrimp
1 (10 ounce) package frozen corn, thawed and drained
4 green onions, chopped
2 stalks celery, finely chopped
2 large eggs, beaten
2 cloves garlic, minced
1/2 cup all purpose flour
2 tablespoons cilantro, chopped (fresh is best, if using dried, 1/2 the amount)
1 teaspoon salt
1 teaspoon ground coriander
1/2 teaspoon ground cumin
vegetable oil
1/4 cup soy sauce (Plus 2 tbsp soy sauce...Zaar won't let me post it like this)
2 teaspoons orange rind, grated
1/3 cup orange juice
2 tablespoons sugar
2 tablespoons cilantro, chopped (again, fresh is best, if not 1/2 the amount)
1 tablespoon white vinegar
1 tablespoon sesame oil
2 cloves garlic, minced
2 teaspoons ginger, root peeled and minced
2 teaspoons hot chili oil

Steps:

  • Peel and devein the shrimp; cut into 1/2 inch pieces.
  • Combine the shrimp, corn and next 9 ingredients in a large bowl; stir well.
  • Pour oil to a depth of 1 inch in a heavy saucepan; heat to 375 degrees. Drop shrimp mixture by tablespoonfuls into the hot oil; fry 2 minutes on each side or until golden. Do not crowd the fritters, cook in batches. Drain on paper towels. Serve immediately with sauce.

A light batter coats plump pieces of shrimp and sweet corn kernels, delivering a savory bite perfect for picnics, a finger-food weeknight meal or casual entertaining. Lemon zest and ground cayenne pepper provide an essential zing that brightens these easy-to-devour morsels. Although these crisp fritters are wonderful fresh out of the pan, they can also be cooled, stored frozen in an airtight container and popped in a hot oven to warm and refresh.

Vegetable oil, for frying
2 cups all-purpose flour
1/2 teaspoon ground cayenne
1 teaspoon baking powder
1/4 teaspoon baking soda
3/4 teaspoon kosher salt (Diamond Crystal), plus more if needed
1 whole lemon
1/4 cup thinly sliced chives (1/2 ounce)
1 cup fresh corn kernels (from 2 ears corn)
6 ounces peeled and deveined shrimp, coarsely chopped
1 1/4 cups seltzer water
1/4 cup sour cream
Sweet red chile sauce, for dipping (optional)

Steps:

  • Line a sheet pan with a layer of paper towels or fit with a wire rack. Fill a deep, medium saucepan with oil to a depth of 2 inches. Heat over medium-high to 350 degrees.
  • While the oil heats, whisk the flour, ground cayenne, baking powder, baking soda and salt in a medium bowl. Zest the lemon right into the bowl; slice the lemon into wedges and set aside for serving. To the bowl, add the chives, corn and shrimp. Stir to combine. Pour in the seltzer and stir until just combined. Fold in the sour cream until just incorporated.
  • Once a deep-fry or candy thermometer reads 350 degrees, the oil is ready. If you don't have a deep-fry thermometer, you also can see if the oil is hot enough by dropping a tiny dollop of the batter into the pot: Bubbles should form around the batter immediately and the dollop should float to the surface. Working in batches to avoid crowding the pan, carefully drop tablespoons of the batter into the hot oil and fry, turning frequently, until golden brown, about 5 minutes. Maintain the temperature of the oil while frying by raising or lowering the heat as needed.
  • Transfer the beignets to the paper towels or rack using a slotted spoon or tongs. Repeat the frying process with the remaining batter.
  • Serve the beignets warm, with lemon wedges for squeezing and with sweet chile sauce for dipping, if using. Sprinkle the beignets with a little salt, if you like.

Number Of Ingredients 19

50g fine cornmeal or polenta
50g plain flour
225g sweetcorn , from a can or frozen (drained if from a can)
3 large eggs
75ml milk
40g butter , melted and cooled
1 tsp baking powder
3 tsp chipotle paste or chipotle powder
1 red chilli , halved, deseeded and chopped
2 spring onions , finely chopped
300g raw shelled king prawns , roughly chopped
sunflower oil , for frying
soured cream and lime wedges, to serve
2 ripe avocados
2 limes , juiced
1 garlic clove , grated to a purée
1 tbsp extra virgin olive oil
¼ tbsp sherry vinegar
2 tbsp finely chopped coriander

Steps:

  • Prepare the avocado just before you want to cook the cakes, as it discolours if it sits too long. Halve and stone the avocados and scoop out the flesh. Mash with all the other ingredients until smooth. Taste for seasoning (you may want to add a little more vinegar). Cover and set aside.
  • For the fritters, put the cornmeal, flour, half the sweetcorn, the eggs, milk, butter and baking powder in a food processor and, using the pulse button, blitz together. Season and stir in the rest of the corn, the chipotle paste, chilli, spring onions and the prawns by hand.
  • Heat some oil in a large frying pan and, once it is hot but not smoking, spoon dollops of the corn-cake batter into the pan. You are aiming to make cakes about 10cm in diameter. If you use a large pan, you should be able to cook four fritters at the same time. When each cake has set underneath and you can see bubbles on the surface, flip it over and cook until golden. Lift each cake out onto a double layer of kitchen paper. You can keep the cakes warm on a baking sheet (in a single layer) in a low oven while you cook the rest. Add more oil as you need it. Serve the cakes with the avocado purée, some soured cream and wedges of lime.

140g plain flour
1 tsp baking powder
2 eggs
125ml milk
2 tbsp yellow or red Thai curry paste
140g frozen sweetcorn kernels, defrosted
small bunch spring onions , chopped
small bunch coriander leaves, chopped
140g raw peeled king prawns , chopped
vegetable oil , for frying
sweet chilli sauce , to serve

Steps:

  • Tip the flour, baking powder and ½ tsp salt into a bowl or jug. Whisk in the eggs and milk to form a thick smooth batter. Stir the curry paste into the batter and mix until combined. Tip the sweetcorn, spring onions, coriander and prawns into another larger bowl.
  • Pour the batter onto the sweetcorn, mix and fold through to combine. Heat a few tbsp of oil in a large, non-stick pan until hot. Fry large spoonfuls of the batter at a time (do this is batches), for about 2 mins each side, or until golden and cooked through. You will make about 8-10. Keep warm in a low oven while you cook the rest. Serve with sweet chilli sauce.

3/4 cup flour
1/4 cup corn meal
1/4 tsp baking powder
1/2 tsp salt
12 oz cooked shrimp
1 corn cob, kernels cut off (or 3/4 cup frozen)
olive oil
1/4 red or orange bell pepper, diced
4 scallions, white & light green parts sliced thinly
(can also substitute chopped red onion)
1/4 cup fresh herbs, chopped (cilantro, mint, parsley)
1 egg
1/2 cup water (or mix of water and clam juice)
canola oil

Steps:

  • Chop the cooked shrimp. Place in a large mixing bowl. You can use either fresh or frozen corn for this recipe. You may choose to roast the corn, but it's not really necessary. If using corn on the cob, remove husks and silks, and then cut off the kernels Roast kernels in a skillet with a little olive oil and salt until lightly browned and caramelized. Add to the shrimp. To the skillet, add a little more oil if necessary, and lightly saute the chopped bell pepper and onion. Add to the shrimp and corn. In a medium bowl, combine the flour, corn meal, baking powder, and salt. In a small bowl, whisk the egg, add chopped herbs and water, and mix to combine. Pour into the flour mixture and stir well. Add more water if mixture is too stiff. Combine the batter with the shrimp and corn. Heat oil on medium-high in a large skillet to about 1/4 inch deep. Carefully drop mounded spoonfuls of batter into the oil, pressing down with the back of the spoon to spread into a 2 inch diameter fritters. Fry until browned, flip over, and brown the other side. About 3 to 5 minutes each side. Remove fritters to paper towel to drain oil. Serve with chutney or sauce of your choice.

  • Shuck the corn, then use a small serrated knife to remove the kernels, keeping the blade close to the core. I do it inside a bowl, instead of on a chopping board, to stop them scattering everywhere.
