AIR FRYER PLANTAIN CHIPS
Green plantains in the air fryer result in potato-like crunchy, crispy chips without being full of calories and fat. These can be sweet or savory, depending on which you are craving - use salt for savory or cinnamon-sugar for sweet chips.

Steps:
- Preheat an air fryer to 350 degrees F (175 degrees C).
- Cut both ends of plantain and score along the side through the skin only. Peel skin off and cut plantain in half. Peel into strips using a vegetable peeler.
- Spray the air fryer basket with avocado oil. Place plantain strips in the basket, making sure they do not touch. Spray top of plantain strips with oil.
- Cook in the preheated air fryer for 7 to 9 minutes. Use tongs to turn each strip over, and continue frying until crispy, an additional 3 to 5 minutes. Immediately sprinkle with salt.

PUERTO RICAN PLANTAIN RECIPES: INCLUDING TOSTONES (FRIED GREEN PLANTAINS)
Tostones are a super popular savory Puerto Rican snack made from green plantains that are sliced, smashed and fried to crispy perfection.

Steps:
- Start by peeling your plantains and cutting into 1 inch sections. Preheat your oil in a heavy bottomed skillet over medium heat.
- Once the oil is hot, gently add in your plantain chunks, making sure not to crown the pan too much. Your pan should have enough oil to almost cover the slices, so add more if needed. Fry the slices for 8-10 minutes, making sure to flip them until golden brown all around.
- Remove the slices and cool on a paper towel lined plate. Once the slices are cool, use a plate to smash the slices until they flatten just slightly. Make sure to not smash them too thin or they will break apart on the second fry.
- In a large bowl combine the water, lime juice, salt and adobo seasoning (optional). Gently add in the fried plantains and soak for 4-5 minutes before draining the water and patting dry with paper towels.
- Bring the oil back to high heat and add the smashed plantains back to the oil, frying for another 5 minutes or until crispy. Top with a sprinkle of salt and a squeeze of lime juice and enjoy!
AIR FRYER TOSTONES
Tostones are made with green (unripe) plantains and are a very popular side dish in many Caribbean and South American countries. The traditional method is to twice-fry the plantains in oil, but this air-fried version of my Puerto Rican family's recipe is much lighter as it uses olive oil spray instead of deep-frying.

Steps:
- Preheat an air fryer to 400 degrees F (200 degrees C).
- Slice tips off the plantain. Make a vertical cut in the skin from end to end, making sure to cut only through the thick skin and not into the plantain flesh. Cut plantain, still with the peel, into 1-inch chunks. Peel the skin off each chunk starting at the slit you made.
- Place the plantain chunks in your air fryer basket and spray them with olive oil spray. Air fry for 5 minutes. Meanwhile, prepare a bowl of salted water.
- Remove the plantain pieces from the air fryer with tongs. Smash to about 1/2-inch thickness using a tostonera (plantain smasher). Soak the smashed tostones in the bowl of salted water while smashing the rest.
- Remove the tostones from the salted water and pat dry with a paper towel.
- Return tostones to the air fryer in batches, filling the basket with a single layer each time. Spray the tops with olive oil spray and season with salt; air fry for 5 minutes. Flip with tongs and spray the other side with olive oil spray. Season with salt. Air fry until golden brown and crisp, 4 to 5 minutes more.

- In a large bowl, combine garlic, garlic salt and onion powder. Add plantains; cover with cold water. Soak for 30 minutes. Drain plantains; place on paper towels and pat dry. , Preheat air fryer to 375°. In batches, place plantains in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until lightly browned, 10-12 minutes. Place plantain pieces between 2 sheets of aluminum foil. With the bottom of a glass, flatten to 1/2-in. thickness. Increase air fryer temperature to 400°. Return flattened plantains to air fryer; cook until golden brown, 2-3 minutes longer. Combine seasoning mix ingredients; sprinkle over tostones.

- Peel the plantain and cut it into 1-inch chunks.
- Heat the oil in a large skillet. Place the plantains in the oil and fry on both sides,; approximately 3 1/2 minutes per side.
- Remove the plantains from the pan and flatten the plantains by placing a plate over the fried plantains and pressing down.
- Dip the plantains in water, then return them to the hot oil and fry 1 minute on each side. Salt to taste and serve immediately.
