PULLED PORK WITH RED ONIONS

Steps:
- Place the roast, fat side up, in a slow cooker. Pour the BBQ sauce over the top and whisk in some water if you prefer. (And brown sugar if you need it.)
- Set on low and cook for 8 hours. Once cooked, use two forks to pull the pork apart.
- Steam some broccoli.
- Serve the pulled pork on bread with red onion slices. Add a little extra BBQ sauce if you need it.
- Freeze & Thaw Instructions: To freeze, remove as much air as you can from the bag, coating the pork roast with the BBQ sauce as you squeeze the air out. Put in the freezer on a plate or baking sheet (so it doesn't stick to the grates or floor of the freezer). Freeze up to 6 months in fridge freezer or 12 months transferring to a slow cooker to cook.

- Add the pork, salt, pepper, garlic powder, cumin and paprika to a 6-quart slow cooker. Toss to combine, then pour in the apple juice. Cover with the lid and let cook for 8 hours on low, or until the pork is easily shreddable.
- Remove the pork from the juices to a serving dish and shred with forks or fingers.
- Add the butter to a small skillet over medium heat and let melt. Whisk in the flour until combined, about 1 minute. Add 1 cup drippings from the slow cooker and whisk until thickened. Taste for seasoning. Drizzle over the pork or transfer to a serving dish. Serve the pork warm with warm gravy and a sprinkle of chopped parsley. Eat with the dinner rolls.

- Preheat oven to 350°F. Line a cookie sheet with parchment paper. Combine the pulled pork and barbecue sauce in a medium-size saucepan. Warm the mixture over low heat for about 15 minutes, stirring often to prevent burning. Butter one side of each slice of bread and place it, butter-side down, on the prepared cookie sheet. Top four of the bread slices with two slices of cheese and 1/4 cup pulled pork. Top the pulled pork with a 1/2 cup coleslaw and then two additional slices of cheese. Place the second slice of bread, butter-side up, on top of the cheese. Press down slightly. Heat a griddle over medium-low heat. Place the sandwiches on the griddle and cover with a cookie sheet or grill press. Cook on each side for 4 to 5 minutes, or until a toasty, golden brown. Remove sandwiches to a cookie sheet and bake about 10 minutes.
PULLED PORK (CROCK POT)
I found this pulled pork recipe years ago, and it's a favorite at potlucks. Freezes well for easy quick meals.

- Slice one onion and place in crock pot.
- Put in the roast and cover with the other onion, sliced. Pour over the ginger ale. Cover and cook on LOW for about 12 hours. See Note2 below regarding amount of time needed!
- Remove the meat, strain and save the onions, discard all liquid. With two forks, shred the meat, discarding any remaining fat, bones or skin. Most of the fat will have melted away.
- Return the shredded meat and the onions to the crock pot, stir in the barbecue sauce. Continue to cook for another 4 to 6 hours on LOW.
- Serve with hamburger buns or rolls and additional barbecue sauce. Any leftovers freeze very well.
- TIP: freeze ready-made sandwiches - a scoop of meat on a bun, well-wrapped. These make a great quick meal or snack. To reheat, remove wrapping, wrap in a paper towel, and zap 1-2 minute in the microwave.
- Note: Shoulder or butt are recommended because the meat shreds very well. Other cuts do not shred as readily. It is a fattier cut, but the fat melts away in the cooking and is poured away when you discard the liquid.
- Note 2: I have an older, smaller crock pot. The above times work perfectly for me. But if you have a newer or bigger crock pot, you may need to revise times downward, esp. after the bbq sauce is added. I think you need at least a couple of hours for it all to meld, but that may be all you need. Update: I recently bought a bigger crockpot, I think 5 or 6 qts. I cooked a 6 lb pork shoulder in it for 8 hours and it was shreddable at that point. Shredded, added the sauce, and cooked for another hour or so to meld everything. So use your best judgment on timing!
- Note3: You might want to turn your roast over after it's cooked a while, to ensure more even cooking. I think this may depend on the size and shape of your roast and the size of your slow cooker. Remember that each time you remove the lid you lose heat and be careful, as turning a large piece of meat is awkward.
- Note4: my sister says this takes 2 hours in the Instapot. I don't have one, up to you to figure out the steps.

PULLED PORK WITH CABBAGE AND ONIONS (CROCK POT)
This is a good recipe to make when you don't have a lot of time to set up. Use your favourite bottled sauce or make your own, if you have a family favourite and the time. The variation in ingredient amounts depends on your own tastes and likes.

Steps:
- Place onion and cabbage in bottom of crock pot, season with 1/2 teaspoon each of red pepper and garlic.
- Put pork roast on top of vegetables and season with the rest of the spices.
- Pour barbecue sauce over all.
- Cook on low for 6-8 hours.
- Take roast out of crock pot and shred with two forks.
- If you want a thicker sauce, put the temperature on high then mix the water and cornstarch and put it in the crock pot while you are shredding the pork.
- Eat on kaiser or Portuguese buns and enjoy!
