THE BEST PULLED PORK
Chipotle powder, apple cider and ketchup create the perfect balance of smoky, sweet and tangy without the need for a smoker or grill! For our classic, satisfying pulled pork, all that's required is a flavorful homemade rub and a long trip to the oven to cook low and slow until it's meltingly tender. Eat it as-is, or pile onto a potato roll with your favorite toppings for the ultimate sandwich. Coleslaw is a traditional accompaniment, and we love a vinegary one for the way it cuts through the richness of the pork.

- Whisk together the chile powder, salt, paprika, garlic powder, onion powder, black pepper and 2 tablespoons of the brown sugar in a small bowl until completely combined and no lumps remain. Spread the spice rub evenly over the pork butt, pressing it into the flesh on all sides. Let the pork sit at room temperature for at least 1 hour or wrap tightly with plastic wrap and refrigerate for up to 48 hours.
- Position a rack in the lower third of the oven and preheat to 275 degrees F.
- Whisk together the barbecue sauce, apple cider, ketchup, mustard, Worcestershire sauce and the remaining 1/2 cup brown sugar in large Dutch oven or other heavy large pot until combined. Transfer the pork and any accumulated juices to the pot, turning the pork to coat it with sauce. Bring the sauce to a boil over medium-high heat. Then cover, transfer to the oven and bake until the pork is very tender and easily shreds when pulled apart with a fork, 3 to 3 1/2 hours. Let the pork cool uncovered for 30 minutes.
- Reserve 1 cup of the sauce for serving, then smash the pork into the remaining sauce with a potato masher; it should fall apart and shred completely. Stir to combine the pork with the sauce. Serve on toasted potato rolls topped with coleslaw. Pass the reserved sauce.

- Place roast in a 5-qt. slow cooker. Top with onion. Combine the ketchup, root beer, vinegar, Worcestershire, hot sauce, salt, pepper and mustard; pour over top. Cover and cook on low until meat is tender, 6-8 hours., Meanwhile, scrub and pierce potatoes. Bake at 400° until tender, 50-55 minutes., Remove pork; shred meat with two forks. Skim fat from cooking juices; transfer to a large saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth; gradually stir into the pan. Bring to a boil; cook and stir until thickened, 2 minutes. Return meat to cooking juices; heat through., With a sharp knife, cut an "X" in each potato; fluff with a fork. Top each with butter and pork mixture; top with sour cream. Sprinkle with cheese and, if desired, green onions.

PULLED PORK-STUFFED SWEET POTATOES RECIPE BY TASTY

- Layer bottom of crock pot with onion and lay pork loin on top. Season with salt, pepper, and garlic. Top with BBQ sauce.
- Cook on high for 4 hours or low for 8 hours.
- "Pull apart" the pork loin using two forks. Cover and let sit and move on to sweet potatoes.
- Preheat oven to 400˚F (200˚C).
- Using a fork, poke holes down one side of each sweet potato. Microwave for 3-5 minutes, or until softened. Let sweet potatoes cool before handling.
- Next, cut sweet potatoes in half and carve out the centers with a spoon, leaving a rim around the outside of each sweet potato.
- Place sweet potatoes on a baking sheet covered in parchment paper, drizzle with olive oil and season with salt and pepper.
- Bake for 20 minutes.
- Add shredded carrots and purple cabbage to the shredded pork and combine.
- Fill sweet potatoes with pork, drizzle with BBQ sauce, and garnish with green onion.

- I like to sear the pork before adding it to the slow cooker. I think it adds extra flavor. You can opt to skip this step and the step of of sautéing the onions and just put everything in the slow cooker right away if you want save time. First I generously coat the pork in salt and pepper. Then I heat a tablespoon of olive oil in a skillet over high heat. I add the pork and sear each side until golden.
- Place the pork in a slow cooker and pour the barbecue sauce over. Place the lid on the slow cooker and set the temperature to low.
- Then I sauté the onions in the pan drippings. Slice the onions into long tin strips, then add a tablespoon of butter to the skillet. Once the butter is hot, add the onions, tossing them in the butter to evenly coat them. Season with salt and pepper. Sauté until the onions start to brown, then add them to the slow cooker with the pork.
- Let the pork cook for 6 hours. At the 5 hour mark, prepare the potatoes. First heat your oven to 375 degrees. Then rise and dry the potatoes, poke a couple holes in them (I don't want to risk a potato exploding in my oven), and then generously coat the outside of each potato in butter. This makes the skin really crispy. Place the potatoes on a baking sheet (this is a must, otherwise you will have butter dripping onto the bottom of your oven and burning). Then generously top with salt. Place the potatoes in the oven to bake for 50 minutes to an hour.

- Heat up the pulled pork with some BBQ sauce in a small saucepan over medium-low heat for a few minutes on the stove top or in a microwave safe bowl in the microwave.
- Place the cooked potatoes on a baking sheet and slice each one open on the top lengthwise with a long cut and horizontally with a short cut. Push the ends together to open up the potatoes. Scoop out a few tablespoons of each potato into a bowl. Use the extra potato to make a small portion of loaded mashed potatoes with some of the filling and topping ingredients or gnocchi.
- Add a pat of butter and a sprinkle of salt and pepper to the inside of each potato. Divide the pulled pork between the potatoes and top with shredded cheese, and a drizzle of BBQ sauce.
- Drop a couple of sliced jalapenos on top along with red onions, and scallions. Serve while the potatoes are still hot.
