This recipe is a more wholesome version of pumpkin bread, but is still thick, moist, and delicious. The chocolate and pecans add a wonderful flavor!

⅓ cup whole wheat flour
¼ cup whole wheat flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
¼ teaspoon ground cloves
1 cup pumpkin puree
1 cup white sugar
½ cup applesauce
2 eggs
½ teaspoon vanilla extract
⅓ cup toasted chopped pecans
¼ cup mini chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Combine all-purpose flour, 1/3 cup plus 1/4 cups whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves in a medium bowl.
  • Mix pumpkin, sugar, applesauce, eggs, and vanilla extract together using an electric mixer in a large bowl until well blended. Add pecans and chocolate chips and mix until evenly distributed. Pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 55 minutes. Let cool in the pan for 15 to 20 minutes before transferring to a wire rack to cool completely.

1/4 cup milk
1-1/4 cups packed brown sugar
1 cup canned pumpkin
1/2 cup MIRACLE WHIP Dressing
1/2 cup chopped pecans

Steps:

  • Heat oven to 350°F.
  • Combine first 6 ingredients. Whisk eggs and milk in large bowl until blended. Add sugar, pumpkin and dressing; mix well. Add flour mixture; stir just until moistened. Stir in nuts.
  • Pour into greased and floured 9x5-inch loaf pan.
  • Bake 55 min. to 1 hour or until toothpick inserted in center comes out clean. Cool bread in pan 10 min. Remove from pan to wire rack; cool completely.

Steps:

  • Grease bread machine pan and kneading blade generously with shortening.

3/4 cup canned pumpkin
2 tablespoons butter, softened
1/4 cup sugar
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
4 to 4-1/4 cups all-purpose flour
2 teaspoons active dry yeast
SAUCE:
1 cup butter, cubed
1 cup packed brown sugar
1 cup dried cranberries
1/4 cup canned pumpkin
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves

Steps:

  • In bread machine pan, place the first 11 ingredients in order suggested by manufacturer. Select dough setting. Check dough after 5 minutes of mixing; add 1-2 tablespoons of water or flour if needed., Meanwhile, in a large saucepan, combine sauce ingredients; cook and stir until blended. Remove from heat., When dough cycle is completed, turn dough onto a lightly floured surface. Divide into 36 portions; shape into balls., Arrange half of the balls in a greased 10-in. fluted tube pan; cover with half of the sauce. Repeat, being sure to thoroughly coat the top layer with sauce., Let rise in a warm place until doubled, about 30 minutes. Preheat oven to 375°. Bake 20-25 minutes or until golden brown.
