CHILI CON QUESO

Steps:
- In a saucepan, heat butter over medium-high heat; saute onion and garlic until tender. Add chilies; cook and stir 5 minutes. In a small bowl, mix cornstarch and milk until smooth; stir into onion mixture. Bring to a boil; cook and stir until thickened, 1-2 minutes., Reduce heat to low; gradually stir in cheeses, adding in small amounts and allowing cheese to melt between additions. Serve warm with chips. If desired, top with tomato and jalapeno.

Great cheese dip for parties and more. You can also make this in a small crock pot but it does take much longer for cheese sauce to come out.

Steps:
- Cut cheese into 1in cubes and place in large saucepan.
- Add milk and turn burner to medium, stir frequently to avoid burning until cheese is melted into a sauce consistency.
- In large skillet brown the meat and drain.
- Add meat and diced tomatoes to cheese sauce and stir, add small amounts of milk if sauce is too thick.
- Transfer to serving dish or small crock pot to keep warm.

Steps:
- Place processed cheese and milk in a slow cooker.
- Heat a large skillet over medium-high heat and cook and stir beef in the skillet until crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
- Stir diced tomatoes and taco seasoning into ground beef and bring to a boil.
- Transfer ground beef mixture to the slow cooker. Stir with milk and processed cheese.
- Cook on High until cheese is melted, about 1 hour.

CHILI CON QUESO RECIPE BY TASTY
Here's what you need: vegetable oil, medium yellow onion, red bell pepper, ground beef, McCormick® Chili Seasoning, milk, heavy cream, water, corn starch, american cheese, salt, diced tomato, diced green chiles, scallion, corn chips

Steps:
- Heat the vegetable oil in a large skillet over medium heat. Add the onion and bell pepper and cook for 2 minutes, until starting to soften. Add the ground beef and chili seasoning. Cook until the beef is cooked through, about 5 minutes. Remove the pan from the heat.
- In a small saucepan, whisk together the milk and heavy cream. Bring to a boil, then remove from the heat.
- In a small bowl, whisk together the water and cornstarch to form a slurry. Pour the slurry into milk mixture and whisk to combine. Put mixture back on the heat and bring to a simmer.
- Whisk in the cheese until fully melted and season with the salt. Add the diced tomatoes and green chiles and whisk to combine.
- Pour the queso over the chili mixture. Garnish with scallions and serve with corn chips for dipping.

- Heat a nonstick skillet over medium-high heat with 1 tablespoon oil, 1 turn of the pan. Add chorizo, brown and crumble and remove to paper towel-lined platter to drain.
- Heat a nonstick Dutch oven or soup pot over medium-high heat and add 1 tablespoon oil. Add onions, garlic, salt and pepper and stir a couple of minutes. Add beef to brown and crumble. Season beef with oregano, cumin, coriander, chili powder and pimenton and stir another minute. Add broth and bring to boil, then reduce heat to medium low. Stir in cream cheese and crema or cream. Stir in cheeses and melt. Add chilies and tomatoes and gently combine. Add chorizo back to soup. Serve with tortillas and toppings of choice.
