This recipe is a simple Spanish rice that is quick and easy and tastes delicious. The vegetable juice and the taco seasoning add more flavor to this dish.

¼ cup chopped onion
2 cloves garlic, minced
2 tablespoons vegetable oil
3 cups uncooked instant rice (such as Minute®)
2 ¼ cups chicken broth
1 cup vegetable juice (such as V8®)
1 ½ teaspoons taco seasoning

Steps:

  • Cook and stir onion, garlic, and vegetable oil in a skillet over medium heat until onions are softened, about 5 minutes.
  • Stir rice into onion mixture and cook, stirring often, until rice becomes slightly opaque, 1 to 2 minutes.
  • Stir chicken broth, vegetable juice, and taco seasoning into rice mixture and bring to a boil. Cover and simmer over low heat until rice has absorbed most of the liquid, about 5 minutes.

Number Of Ingredients 9

1 1/2 cups long grain rice
1 1/2 cups water
1 14.5 ounce can of diced tomatoes
1 teaspoon garlic granules
1 teaspoon cumin
2 TBSP cilantro, chopped
1 pinch hot pepper flakes, use more or less depending on your preference
1/2 teaspoon salt, more as needed
2 TBSP butter

Steps:

  • mix the water and rice in the pan of your rice cooker
  • use your kitchen shears to chop the diced tomatoes directly in the can, you just want to cut them a little smaller, you can always get petite chopped tomatoes but they don't sell those in bulk at the warehouse stores
  • add them and their juices to the rice
  • stir in the rest of the ingredients
  • close the rice cooker
  • set it to cook rice, if you have that setting, mine has two: rice or soup
  • let the rice cooker do it's magic and serve hot when it's done

1 can diced tomatoes, with juice (14-ounce )
3 1/2 cups water
1 small onion, diced
3 bouillon cubes or 3 teaspoons Better than Bouillon
1-3 tablespoons chili powder
1 teaspoon salt
1 teaspoon cumin or smoked cumin
1/2 teaspoon garlic powder

Steps:

  • Place the rice in the bottom of the rice cooker and then add the diced tomatoes and water. Add the onion and spices and stir a little on the top to dissolve the spices in the water.
  • Cook according to manufacturer's instructions.
  • When the rice is cooked, test for salt and add more if needed.
  • Serve as a side dish or inside your favorite burritos and tacos.

This is a great, easy way to make a delicious side dish when cooking Mexican for dinner. My kids really love it, too. Substitutions for spices and vegetables are fine -- add the tastes that your family likes most. You can make this on the stovetop in a skillet with a lid, as well. Bring all ingredients to a boil and stir well; cover and simmer for 25 minutes or until rice is soft. If you add some of the optional ingredients, this can be an excellent main dish. Try adding chopped green chile peppers. Tastes great with the Enchilada II recipe.

1 cup white rice
8 oz el pato tomato sauce
1 1/2 cup chicken broth
1 dried bay leaf (optional)
1/2 cup frozen peas and carrots (optional)

Steps:

  • Add Rice, Chicken Broth and El Pato into a rice cooker. Turn it on. Wait for it to be done. Should take about 15 minutes or so.
  • Give it a stir to mix it al together and that's about it. Enjoy!

3 cups cooked white rice (such as Uncle Ben's®)

Steps:

  • Heat butter in a frying pan over medium heat; cook and stir onion, green bell pepper, celery, and garlic until slightly tender, 5 to 10 minutes. Stir tomatoes with juice, chili powder, beef bouillon granules, and salt into onion mixture; add rice. Easy is an understatement, and this is delicious, made again on 21 Mar 22022, and been making this since 2018 and the family loves it!. A nice change from plain white rice for a side. I make this as written in my small 1 liter (1 quart) rice cooker as well. As a variant, you can use a can of whole tomatoes with juice, just chop the tomatoes up.

1 can(s) diced tomatoes with juice, (400 g/14-15 oz)
3 1/2 cup(s) water
1 small onion, diced
3 - chicken stock cubes, crushed
1 tablespoon(s) chili powder
1 teaspoon(s) salt
1 teaspoon(s) ground cumin
1/2 teaspoon(s) garlic powder

Steps:

  • Place the rinsed rice in the bottom of the rice cooker and then add the diced tomatoes, onion, stock cubes, spices, and water. Stir together, cover and set your rice cooker to Cook setting.
  • When the cooker switches to Warm, mix with a large spoon, it will be wet, taste and mix in salt if desired.
  • Serve as a side dish, enjoy.
