QUICK CARAMEL SAUCE

Steps:
- Pour 1/2 cup water into a medium heavy-bottom saucepan; add sugar. Cook over medium heat, gently stirring occasionally, until sugar is dissolved.
- Continue to cook, without stirring, until syrup comes to a boil, washing down sides of pan with a wet pastry brush 2 or 3 times to prevent crystals from forming. Let syrup boil, gently swirling pan occasionally, until it has almost turned medium amber.
- Remove from heat, and carefully pour in cream (caramel will bubble). Add vanilla and salt, and stir with a clean wooden spoon until caramel is smooth.

- Mix the brown sugar, half-and-half, butter and salt in a saucepan over medium-low heat. Cook while whisking gently for 5 to 7 minutes, until it gets thicker. Add the vanilla and cook another minute to thicken further. Turn off the heat, cool slightly and pour the sauce into a jar. Refrigerate until cold.

- In a tall medium saucepan over medium-high heat, add sugars. Stir until the sugars start to melt. When almost melted, reduce heat to medium and continue stirring until all melted. Let the mixture sits for 15 to 30 seconds; turn the heat off.
- Add butter and stir continuously until melted. Add heavy cream and quickly stir until all combined. Add generous pinches of fleur de sel and give another stir to mix.
- Remove from the heat and transfer to a sealed jar. Let it cool completely before transferring to the refrigerator.
- Note: Add ½ to 1 tablespoons dark rum for flavor.

- Add the sugar and water to a 3-quart heavy bottomed saucepan; stir a little so it sits in a flat, even layer.
- Warm pot over medium heat and cook until the sugar dissolves, turns clear, and starts to bubble. (It will be cloudy at first, but will turn into a clear, bubbling liquid.) This takes about 3-4 minutes.
