150g butter, softened
300g caster sugar
1 tsp vanilla extract
3 eggs, separated
250g plain flour
25g cornflour
1 tsp baking powder
2 level tbsp good quality cocoa powder
250ml buttermilk
Red food colouring (use 2 tbsp liquid colour or 1/2 tsp thick red food paste)
Pinch of salt
1 tsp white wine vinegar
1 tsp bicarbonate of soda

Steps:

  • Preheat the oven to 180ºC/350°F/Gas Mark 4. Butter and flour the sides of the cake tins and line the bases with parchment paper.
  • Cream the butter in a large bowl or in an electric food mixer until soft. Add the sugar and beat until the mixture is pale and fluffy. Add the vanilla extract and the egg yolks, one by one, beating well after each addition.
  • Place the flour, cornflour, baking powder and cocoa powder in a sieve resting on a plate. Measure the buttermilk with the food colouring and mix together. It should be very red, so add more if you need to.
  • Sift one-third of the dry ingredients into the butter and eggs mixture until just combined, then pour in one-third of the buttermilk mixture and mix until just combined. Continue, combining a third at a time, until both are incorporated.
  • Whisk the egg whites and salt in a large, spotlessly clean bowl until stiffish peaks form. Add one-quarter to the batter and mix. Add the remaining egg whites in three stages, folding them in gently with a large metal spoon until just incorporated, leaving as much air in the egg whites as possible.
  • In a small bowl, mix the vinegar and bicarbonate of soda until it bubbles up, then gently fold this into the batter. Quickly pour the batter into the two prepared tins and smooth the tops. Bake in the oven for 25-30 minutes or until a skewer inserted into the middle comes out clean and the cakes feel slightly springy on top.
  • Leave in the tins for 15 minutes, then carefully remove the cakes from the tins, running a table knife or a palette knife slowly around them to loosen them, and invert them onto a wire rack to cool.
  • To make the white frosting, place the egg whites, sugar, golden syrup, salt, cream of tartar and water in a stainless steel or heatproof bowl set over a saucepan of simmering water. (The base of the bowl should not touch the water.) Bring the water to a steady simmer. With a hand-held electric beater or a balloon whisk (to build up your muscles!), whisk the mixture until you have shiny, satiny soft peaks. Remove the bowl from the simmering water and continue to whisk for a further 2 minutes - it will get a bit stiffer. Whisk in the vanilla extract.
  • Immediately ice the middle, top and sides of the cake with a palette knife, fluffing the frosting up to form little peaks all over the cake. You need to work fast to ice the cake, as the icing sets very quickly. Leave for at least 30 minutes to allow a thin crust to form outside a creamy interior.

Historically, red velvet cake was just chocolate cake tinted red from the acid in cocoa powder, not from food coloring. Nowadays most cocoa powders are alkalized, as in stripped of acid. Look for a non-alkalized one for this old-fashioned recipe. Completing the classic look is a coat of bright white ermine frosting, cooked the old-fashioned way.

½ cup cocoa powder
1 ½ teaspoons baking soda
½ teaspoon kosher salt
1 ½ cups buttermilk
2 teaspoons vanilla extract
3 ¾ cups brown sugar
1 ½ sticks unsalted butter, softened
3 eggs, at room temperature
1 cup white sugar
1 cup whole milk
½ cup all-purpose flour, sifted
½ teaspoon salt
2 cups unsalted butter, softened
1 ½ teaspoons vanilla extract

Steps:

  • Preheat the oven to 325 degrees F (163 degrees C). Line the bottoms of three 9-inch cake pans with parchment paper. Spray the sides with cooking spray.
  • Sift all-purpose flour, cake flour, cocoa powder, baking soda, and salt together in a medium bowl.
  • Microwave buttermilk just until warm, about 30 seconds. Stir in vanilla extract.
  • Beat brown sugar and butter together in a bowl until light and fluffy, about 5 minutes. Add eggs one at a time, mixing thoroughly before each addition. Blend in the flour mixture and buttermilk in 3 additions until fully combined. Let mixer run on low for 5 minutes. Distribute the cake batter between the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the center the cakes comes out clean, 30 to 35 minutes.
  • Let cool for 15 minutes in the pans. Turn cakes out and let cool completely on a wire rack, at least 30 minutes. Cover with plastic wrap and chill for at least 1 hour or overnight.
  • Meanwhile, whisk sugar, milk, flour, and salt together in a medium saucepan for the frosting. Cook over medium heat, whisking constantly, until the mixture thickens and begins to simmer, about 10 minutes. Pour into a medium bowl and chill for about 45 minutes, stirring occasionally.
  • Beat butter until smooth, about 5 minutes. Slowly add the milk and flour mixture, 1/4 cup at a time, beating in between each addition and scraping the sides of the bowl occasionally. Mix in the vanilla extract.
  • Level the cake layers before assembling the cake. Scoop about 2/3 cup of frosting onto the first layer and spread into an even layer. Repeat with the second and third cake layers. Frost the outsides of the cake with thin layer of frosting to catch any crumbs and chill for 20 minutes.
  • Finish frosting the cake with remaining frosting. Cut and serve.

2 1/2 cups White Lily self-rising flour
1 teaspoon baking soda
1 1/2 cups sugar
1 1/2 cups vegetable oil
2 large eggs, lightly beaten
1 teaspoon white vinegar
1 teaspoon pure vanilla extract
1 cup whole buttermilk
2 1/2 tablespoons red food coloring
Vegetable-oil cooking spray
8 ounces cream cheese, room temperature
1/2 cup (1 stick) margarine, room temperature
1 pound confectioner's sugar, sifted
1 cup pecans, finely chopped
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees. Spray three 9-by-2-inch round cake pans with cooking spray, and line with wax paper. Set aside. In a medium bowl, sift together flour and baking soda. Set aside. In a medium bowl, combine sugar, vegetable oil, eggs, vinegar, and vanilla. With an electric mixer, beat until light and fluffy, about 2 minutes. Gradually add flour mixture, and mix on low speed just until flour has been incorporated. Slowly add buttermilk. Add food coloring, and beat to combine. Divide batter among pans; each pan will be about half full. Tap pans on counter to remove bubbles. Bake until a cake tester inserted into the middle comes out clean, about 30 minutes. Remove the pans to a rack to cool for 5 minutes. Invert pans onto wire racks sprayed with vegetable oil to cool cake completely, or quick-chill in the freezer for 10 to 15 minutes. To assemble: Place one layer, top side down, on a cake stand. Using an offset spatula, spread with 1/4 inch of frosting. Repeat with remaining layers. To frost the top and sides of the cake, work from the center toward and over the edge, making sure to evenly coat. Store in an airtight container for up to one week. For Frosting: Place cream cheese and margarine in a medium bowl. With a handheld electric mixer, beat until light and fluffy, about 2 minutes. Add sugar, pecans, and vanilla. Beat, on low speed to combine. If too soft, chill until slightly stiff, about 10 minutes, before using.
