4 cups all-purpose flour, divided
6 tablespoons Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker
2 large eggs
1-1/2 cups water
1 teaspoon salt
2 broiler/fryer chickens (3-1/2 to 4 pounds each), cut up
Oil for deep-fat frying

Steps:

  • In a large shallow dish, combine 2-2/3 cups flour and Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker. In another shallow dish, beat eggs and 1-1/2 cups water; add 1 teaspoon salt and the remaining 1-1/3 cup flour and 1/2 teaspoon pepper. Dip chicken in egg mixture, then place in the flour mixture, a few pieces at a time. Turn to coat., In a deep-fat fryer, heat oil to 375°. Working in batches, fry chicken, several pieces at a time, until golden brown and a thermometer inserted into chicken reads 165°, 7-8 minutes on each side. Drain on paper towels.

1 pound seedless cucumber or Persian cucumbers
sliced ¼-inch-thick
½ small onion
quartered and thinly sliced (or 1 large shallot
halved and thinly sliced)
1 ½ teaspoons yellow mustard seed
1 ½ teaspoons coriander seed
1 teaspoon black peppercorns
2 tablespoons dried dill
or 4 stems fresh dill
2 fresh bay leaves
2 large cloves garlic
crushed
1 cup white or cider vinegar
1 cup water
About ¼ cup sugar
2 tablespoons kosher salt
1 ½ cups sour cream or Greek yogurt
¼ cup buttermilk
2 tablespoons white vinegar or lemon juice
2 teaspoons hot sauce (Rach likes Frank's RedHot or Tabasco)
2 teaspoons superfine sugar or sugar
2 tablespoons dried dill
2 tablespoons dried parsley
2 tablespoons dried chives
2 teaspoons granulated garlic
2 teaspoons granulated onion
Salt
fine black and/or white pepper
to taste
6 pieces boneless
skinless chicken cutlets (or 3 horizontally halved chicken breasts
tenders removed)
12 slices bacon
halved across
1 cup fine bread crumbs
1 cup panko
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 tablespoon paprika
Frying oil
about 1 quart
6 slices American cheese or Pepper Jack cheese
2 cups shredded Napa
white cabbage or iceberg lettuce
6 brioche rolls
halved
6 thin slices white or red onion
6 thin slices beefsteak tomato

Steps:

  • For the Refrigerator Overnight Pickles, arrange the cucumbers and onions, seeds, peppercorns, dill, bay and garlic in a Mason jar or airtight container
  • Bring to a boil in a small pot the vinegar, water, sugar and salt, dissolve the sugar and salt, then pour over the top of the cucumbers and cool a bit
  • Cover and refrigerate overnight and keep for up to 3 weeks
  • For the Ranch marinade and dressing, combine all ingredients and divide, placing about ¾ cup in a plastic food storage bag and funnel the rest into a squirt bottle or transfer to an airtight container
  • For the sandwiches, place chicken in bag with marinade and refrigerate overnight
  • Preheat oven to 400˚F
  • Arrange bacon on slotted pan or wire rack-lined baking sheet
  • Bake until crisp
  • Combine breadcrumbs and panko and season with garlic, onion and paprika
  • Heat about 1 to 1 ½ inches frying oil in a large cast-iron skillet over medium-high heat
  • Shake excess dressing off chicken and press evenly into coating on both sides
  • Fry chicken about 3 minutes per each side until deeply golden and cooked through
  • Drain on wire rack-lined baking sheet and top each piece with 1 slice cheese
  • Place in the oven to melt
  • Toss cabbage or lettuce with some Ranch dressing
  • Assemble sandwiches: bun bottom, pickles, chicken, bacon, onion, tomato, cabbage or lettuce, bun top

1/4 cup plus 2 tablespoons buttermilk
2 to 3 dashes hot sauce
Kosher salt and freshly ground black pepper
Four 5-to-6-ounce chicken cutlets
1 small clove garlic
1/3 cup mayonnaise
2 teaspoons apple cider vinegar
2 tablespoons chopped fresh chives or scallions
4 slices pepper Jack cheese
4 kaiser or onion rolls, split and toasted
Lettuce leaves and tomato slices, for topping
Potato chips, for serving (optional)

Steps:

  • Preheat a grill or grill pan to medium high. Combine 1/4 cup buttermilk, the hot sauce, 1/2 teaspoon salt, and pepper to taste in a large bowl. Add the chicken and turn to coat; let stand 10 minutes.
  • Meanwhile, make the ranch sauce: Mince the garlic with 1/4 teaspoon salt on a cutting board; mash with the flat side of a chef's knife to make a paste. Combine the garlic paste, mayonnaise, vinegar, the remaining 2 tablespoons buttermilk and the chives in a small bowl. Season with salt and pepper.
  • Transfer the chicken to the grill, letting the excess marinade drip off. Grill until marked on the bottom, 3 to 4 minutes, then flip the chicken, top each piece with a slice of cheese and continue grilling until just cooked through, 2 to 4 more minutes.
  • Spread each roll with some of the ranch sauce and fill with the chicken, lettuce and tomato. Serve with potato chips.

Pointedly low-fuss and remarkably moist, this recipe gets its verve from pickles used two ways: Dill pickle brine seasons and moistens the chicken from the inside-out, while chopped pickles add zip to the coleslaw. Many fried chicken sandwich recipes use breasts, but thighs have more fat, which means they're more flavorful and harder to overcook. The chicken also fries at a lower temperature, so it finishes cooking and its crust crisps at precisely the same time. The buttermilk is key to the crispness here, so avoid any substitutions. Paired with cornstarch, it forms a thick crust that shatters with each bite. This sandwich is best enjoyed immediately, with your favorite hot sauce and a pile of napkins.

4 boneless, skinless chicken thighs (about 4 ounces each)
24 dill pickle coins (about 3/4 packed cup), plus 1/2 cup pickle brine
1/2 cup mayonnaise
4 teaspoons drained capers, chopped
Kosher salt and black pepper
3/4 cup buttermilk
1 cup all-purpose flour
1/4 cup cornstarch
1 tablespoon onion powder
Canola oil or other neutral oil, for frying (4 to 6 cups)
2 tablespoons unsalted butter
4 soft buns, like brioche, split
1 1/3 cups thinly sliced green cabbage (about 4 ounces)
Thinly sliced red onion, for serving (optional)
Hot sauce, for serving (optional)

Steps:

  • Add the chicken thighs and 1/2 cup pickle brine to a resealable plastic bag and refrigerate at least 1 hour or up to 24 hours, turning the bag occasionally to marinate evenly.
  • While the chicken marinates, prepare the pickle mayonnaise: Finely chop 8 dill pickle coins. In a medium bowl, whisk together the mayonnaise, capers and chopped pickles; season generously with salt and pepper. Refrigerate until ready to use.
  • When ready to cook the chicken, pour the buttermilk into a wide shallow bowl. In a separate wide shallow bowl, add the flour, cornstarch, onion powder and 1 tablespoon each salt and pepper; whisk to combine.
  • In a large Dutch oven or deep cast-iron skillet, add 2 inches of oil and, over medium-high, heat to 325 degrees, about 5 minutes.
  • Working with one piece at a time, remove the chicken from the brine, transfer to the buttermilk and turn to coat. Lift chicken from the buttermilk, allowing the excess liquid to drip off, then add it to the flour mixture and turn to coat, patting extra flour mixture on top to ensure the chicken is well coated on all surfaces. Transfer to a plate and repeat with the remaining chicken.
  • Working in two batches, add the chicken to the hot oil and cook, turning every 1 to 2 minutes, until crust is deep golden and chicken is cooked through, about 6 minutes total. Transfer to a paper towel-lined plate to cool and season with salt and pepper. (An instant-read thermometer inserted into the center of the thickest part of the thigh should read at least 165 degrees.) Repeat with the remaining chicken, adjusting the heat to ensure that the oil maintains a temperature of 325 degrees.
  • Melt 1 tablespoon butter in a large, preferably nonstick, skillet over medium. Add 2 buns, split-side down, and cook until warmed and toasted, about 2 minutes. Repeat with remaining butter and buns.
  • Make the coleslaw by tossing the cabbage with half of the pickle mayonnaise and season with salt and pepper. Slather the remaining pickle mayonnaise on the bottom of the buns and top with the chicken, red onion, remaining pickles and coleslaw. Serve with hot sauce, if using.
