GRANDMA'S GROUND BEEF CASSEROLE

As the title suggests, this was my Grandmother's recipe. I've tweaked the amount of cheese and sour cream depending on what I've got in the fridge and it always turns out great! My mother has suggested this was made up as a way to use up ingredients in the fridge.

1 pound ground beef
1 teaspoon white sugar
1 teaspoon salt
1 teaspoon garlic salt
2 (15 ounce) cans tomato sauce
1 (8 ounce) package egg noodles
1 cup sour cream
1 (3 ounce) package cream cheese
1 large white onion, diced
½ cup shredded sharp Cheddar cheese, or more to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix sugar, salt, garlic salt and tomato sauce into ground beef; simmer until flavors blend, about 20 minutes. Remove from heat, cover skillet, and cool to room temperature.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and cool slightly.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Mix sour cream, cream cheese, and onion in a bowl.
  • Scoop half the noodles into the prepared casserole dish; top with half the sour cream mixture. Spoon half the ground beef mixture atop sour cream layer. Repeat layering with remaining ingredients. Top casserole with Cheddar cheese.
  • Bake in the preheated oven until Cheddar cheese has browned, 25 to 30 minutes.

Steps:

  • Brown ground beef in large skillet, stirring until crumbly, drain.
  • Saute onion in small skillet until tender.
  • Stir into ground beef mixture with beans and rice.
  • Heat through, stirring frequently.
  • Layer corn chips, ground beef mixture and cheese alternately in a 9 x 13 inch baking dish.
  • Bake at 350 degrees until cheese is melted.

4 egg whites
1 cup evaporated milk
⅓ cup all-purpose flour
1 teaspoon salt
1 pound Oaxaca cheese, shredded
27 ounces canned Hatch chile peppers, sliced open
2 tablespoons vegetable oil
1 medium white onion, diced
2 cloves garlic
3 tablespoons New Mexico chile powder
1 teaspoon salt
½ teaspoon cumin
1 red bell pepper, sliced
1 tablespoon all-purpose flour
1 (14.5 ounce) can chicken broth

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13-inch baking dish with cooking spray.
  • Place egg whites in a bowl and beat until stiff. Gently fold in evaporated milk, flour, and salt. Cover bottom of baking dish with 1/2 the egg white mixture. Place chiles flat over egg whites. Sprinkle Oaxaca cheese over chiles. Top with remaining chiles and egg white mixture.
  • Bake in the preheated oven until eggs are set, about 30 minutes.
  • While casserole bakes, heat oil in a medium saucepan over medium-high heat. Saute onion and garlic for 2 minutes. Add chile powder, salt, and cumin. Cook and stir for another minute. Add bell peppers and cook until soft, 3 to 5 minutes. Add flour and stir for 2 minutes. Slowly add broth, stirring to avoid lumps. Bring to a boil; reduce heat to low and simmer until casserole is ready.
  • Serve the sauce with slices of the chile relleno casserole.

A friend of mine at work made this for a pot luck last year and it was so good, I wanted to share it with everyone.

2 pound(s) ground beef
1 - onion, chopped
15 oz can(s) tomato sauce
2-16 oz can(s) spicy chili beans
1-1/4 oz package(s) taco seasoning mix
16 oz package(s) frozen corn, thawed
8 oz package(s) finely shredded cheddar jack cheese, divided
9 oz package(s) nacho-flavored tortilla chips, crushed and divided
- optional: sour cream, chopped tomato, chopped green onion

Steps:

  • Brown ground beef and onion in a Dutch oven and drain. add tomato sauce, beans, seasoning mix and corn and stir until blended. Simmer over medium heat for 10 minutes.
  • Pour half of beef mixture into a greased 13" x 9" baking dish. Top with half each of the cheese and crushed chips; repeat layers.
  • Bake at 350 degrees for 25-30 minutes, until bubbly and golden.
  • Top portions with a dollop of sour cream and a sprinkling of tomato and green onions, if desired. Serve with avocados, warm tortilla, rice and/or beans.

1 1/2 pounds lean ground beef
2 onions, chopped
1 green pepper, chopped
3 (8-ounce) cans tomato sauce
2 (16-ounce) cans kidney beans, drained and rinsed
2 cups cooked rice
2 teaspoons chili powder
1 1/2 teaspoons salt
2 (15-ounce) cans tamales
1 cup shredded Cheddar cheese
Garnish: 1 (2-1/4 ounce) can sliced black olives, drained

Steps:

  • In a large skillet, lightly brown beef with onions and green pepper; drain. Stir in tomato sauce, kidney beans, rice, chili powder and salt. Spoon into a lightly greased 13"x9" baking pan. Bake, covered, at 350 degrees for 40 minutes. Remove from oven and arrange tamales on top of casserole. Spoon chili sauce from tamales over top; sprinkle with cheese. Return to oven and continue baking, uncovered, 20 minutes longer. Garnish with sliced olives. Use a snowflake or holly leaf-shaped cookie cutter to turn tortillas into tasty chips for dipping. Heat 1/2 inch of oil in a deep skillet over medium-high heat. Add cut-outs and cook for one minute, or until crisp, turning occasionally.

This can also be turned into a hearty appetized by adding tortilla chips for dipping! Sometimes we add a spoonful of sour cream to the top of this when we serve it!

16 ounces frozen corn, thawed
15 ounces tomato sauce

3 cups monterey jack and cheddar cheese blend, shredded
3 cups plain Doritos, crushed and divided (regular kind)

green onion, chopped

Steps:

  • Cook beef and onion in large pan until cooked. Drain. Add beans, corn, tomato sauce and taco seasoning. Stir well. Simmer over medium heat 10 minutes. Pour half of meat mixture into lightly greased 13"x9" baking dish. Top with 1 1/2 cups cheese and half of crushed chips. Top with remaining beef mixture and top with remaining chips and cheese. Bake @ 350 for 30 minutes until bubbly and golden. Sprinkle with chopped tomatoes and onion, serve.
