ITALIAN MELT SANDWICH

Steps:
- Preheat the oven to 400 degrees. Line a small tray with parchment paper and set aside.
- Cut open the focaccia bread, and spread mayonnaise onto the bottom piece. Next, add your tapenade and spread evenly. Layer the deli meats next, then the cheeses.
- Place both halves of the sandwiches onto the tray. Transfer to oven and bake 10 - 15 minutes or desired toastiness.
- Remove from oven, top with candied jalapeno peppers and arugula.
- Close the sandwich and enjoy with your favourite Lepp Farm Market soup!
ITALIAN MELT SANDWICH
The Italian melt sandwich is known as a Melts Sandwich. This easy Panini sandwich is filled with turkey, ham, cheese and pepperoncini, and a delicious balsamic mayonnaise. Creating the perfect blend of Italian American joy on the taste buds.

- Preheat a Panini press to maximum temperatures. Mix and mesh the mayonnaise and balsamic vinegar in a small bowl and create a perfect blend of mayo and vinegar till the mix turns gooey. Butter the exterior walls of the bread. Spread the balsamic mayonnaise on the insides of each of the slices of bread. Layer the turkey, ham and cheese on 4 slices of bread to taste depending on what you would want to create a better taste of. Top with pepperoncini, then top with the remaining bread, balsamic mayo side on the inside. This is done to make sure the sandwich has consistency along with enough grip to absorb the mix as well as hold on to the ingredients. Grill the sandwiches on the preheated Panini press until it reaches a golden brown colour with a crisp exterior. Trivia This Italian sandwich was invented in Portland, Maine, by baker Giovanni Amato in 1903. While selling his bread on his street cart, Amato received requests from dockworkers to slice his long bread rolls and add sliced meat, cheese and vegetables to them so he did and the workers were more than pleased therefore started making different kinds of requests to change how the sandwiches were presented. This created an entire trend solely from one man's acceptance to change. This went on to create a trend that runs to this day.

- Butter one side of each slice of bread. Top unbuttered side of 2 bread slices with half of the ham, salami, pepperoni, provolone and pepperoncini. Top each with a slice of bread, buttered side out. Heat griddle or large skillet over medium high heat. Grill sandwich with buttered sides out for 2 to 3 minutes or until lightly browned. Flip sandwich and cook an additional 2 to 3 minutes until sandwich is browned and cheese has melted.

Steps:
- Preheat oven to 250 degrees F (120 degrees C). Make slits in roast with a sharp knife, and insert garlic slivers. Place roast in a pan not much larger than the roast. Pour water into pan, and season roast with salt, black pepper, red pepper, and oregano.
- Cover, and bake in preheated oven for 2 hours, basting occasionally. Remove from oven, and let cool in roasting pan. Meat should be very rare. Wrap tightly and refrigerate overnight.
- The next day, Remove roast from pan, and slice as thinly as possible. Add a little water to roasting pan, and heat on stovetop, but do not boil. Stir to blend seasonings. When au jus is hot, add sliced beef just long enough to heat through. Serve on crusty Italian bread with au jus available for dipping.

- Chose crusty Italian bread that are 6-7 inches long.
- Split bread in half horizontally. Place halves on baking sheet, cut side up.
- In a 10-inch skillet or wok heat the salad dressing. Add onion, zucchini, green pepper, and garlic. Stir-fry for 3 to 5 minutes or until crisp-tender. Stir in tomato.
- Sprinkle half of the provolone or mozzarella cheese on bread halves. Spoon vegetable mixture on cheese; sprinkle with remaining provolone or mozzarella and the Parmesan cheese.
- Broil 3 to 4 inches from the heat about 2 minutes or until cheese melts. Serve immediately.

- Preheat oven to 375°F. Split bread horizontally; scoop out soft interior and reserve for croutons or breadcrumbs (see cook's note). Brush inside of each bread half with oil. Bake, cut-side up, until toasted, about 7 minutes. Let cool completely. Spread tapenade on bottom half of bread; add provolone and mozzarella. Top with peppers, artichokes, and salami. Scatter top with arugula. Top with other bread half; press to sandwich.
- Wrap tightly with foil. Place a heavy skillet on top; weigh down with canned goods. Refrigerate at least 1 hour and up to 8 hours.
- Preheat a grill to medium, or oven to 375°F. Transfer wrapped sandwich to grill and cover (or transfer to oven); cook, flipping once, until cheese begins to melt and bread is crisp, about 20 minutes. Remove foil, slice, and serve.
