CELERY POTATO CHOWDER

- In a large saucepan, saute the onion, celery and mushrooms in butter until tender. Add the corn, soups, milk and potatoes. Cook and stir over medium heat until heated through. Garnish with bacon.

CREAMY FISH CHOWDER
This recipe is a combination of other New England style fish chowder recipes that I have tried over the years. All my friends think it is just the best they have ever had.

Steps:
- Melt butter in a large sauce pan. Add onion and celery and cook until onion is tender and translucent.
- Add potatoes, carrots, broth, hot sauce, Old Bay, salt and pepper.
- Cover and simmer 10 to 15 minutes until vegetables are tender.
- Cut fish fillets into bite size pieces and add, with corn, to pot. Cook for 25 minutes.
- Add half and half to pot and heat. Add roux until desired thickness. Stir carefully so not to mush fish. I found a roux of 2 tbsp each of flour and butter was good for me.
- Serve with crispy bread or crackers.

- Cut corn off the cob; set aside. In a large saucepan, saute onion and celery in butter until tender. Add the potatoes, water, bouillon, thyme, pepper and corn. Bring to a boil. , Reduce heat; cover and simmer for 15 minutes or until potatoes are tender. Combine flour and milk until smooth; gradually stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened.

THICK AND CREAMY NEW ENGLAND CLAM CHOWDER
This is the BEST chowder I've ever had. I've had chowder at Legal Seafoods in Boston, which I have to say is good, but mine is BETTER! If you like thick chowder, you'll love this one!!

Steps:
- Add bacon to sauce pan and cook on medium low heat until crispy.
- Add onion and cook until translucent.
- Add clam juice from both cans.
- Add potatoes.
- Cook and cover until potatoes are fork tender, about 15-20 minutes.
- Stir occasionally so potatoes won't stick.
- Add clams, soup, cream, milk, and dill weed.
- Stir together.
- Add butter and let melt into the chowder.
- Cook for about 30-45 minutes or until thickened.
- Stir occasionally.
REAL CELERY CHOWDER
Great for celery lovers, especially on a cold day. I got the idea from a friend of mine a couple years ago. She was making it and I was tired of asking her for all her good recipes :) ...looking through other chowder recipes for ideas and after a few trial and errors I came up with this. Also good with a bit of cooked chicken or tofu mixed in as well.

- Cook onion, celery, and potato in a pot with water enough to cover till potatos are soft.
- Add 3 cup milk, and all spices. Bring to a gentle boil stir often.
- Make a mix of second milk and the flour. Stir into milk mixture. Stir together promptly and bring to a boil stirring until thickened.
