- Put an oven rack in the middle of the oven and preheat to 350 degrees F.
- Coat a Bundt pan with a little butter, then coat the bottom with 1/4 cup cajeta and put it in a large roasting pan. (The roasting pan will serve as a water bath during baking.)
- For the cake: Add the butter and sugar to a bowl and using an electric hand mixer or stand mixer, beat until light and fluffy, then beat in the egg. Sift together the flour, baking powder, baking soda and cocoa in a medium bowl. Beat 1/3 of the flour mixture, and 1/2 of the buttermilk into the egg mixture. Repeat, ending with the flour mixture. Blend until well incorporated.
- For the flan: In a blender, combine the evaporated milk, condensed milk, cream cheese, eggs and vanilla. Blend on high for 30 seconds.
- Scoop the cake batter into the prepared Bundt pan and spreading evenly. Slowly pour the flan mixture over the cake batter. Cover with foil and add about 1-inch of hot water to the roasting pan.
- Carefully slide the pan into the oven, and bake 1 hour, until the surface of the cake is firm to the touch, or an inserted toothpick comes out clean. When cake is done, remove from the water bath and cool completely to room temperature, about 1 hour.
- Invert a large, rimmed serving platter over the Bundt pan, grasp tightly together, jiggle a little and flip over. Remove the pan and scrape any remaining cajeta from the pan onto the cake, garnish with chopped pecans and serve!

- Empezamos haciendo el caramelo en una sarten antiadherente, Colocando la taza de azucar a temperatura media. El caramelo se empezara a formar en unos 5 minutos, y es importante mover con una cucharara constantemente para que se deshagan los grumos. Aqui el azucar al principio se pondra en forma de grumos eso es normal, espera hasta que se empiece a disolver y una vez disuelto que se ponga liquido con un color cafe dorado, estara listo. Vacia el caramelo en el refractario a usar previamente engrasado con aceite y cuidadosamente con la ayuda de un guante de cocina agarra el refractario y muevelo en forma de circulo para cubiri toda la superficie de abajo. Checa la foto de arriba. Deja enfriar por lo menos 10 minutos antes que vacies la mezcla de el flan Como precaucion puedo decirte que el caramelo estara muy caliente y calentara inmediatamente el refractario cuida de no quemarte!.
- licua todos los ingredientes en la licuadora y vacia al refractario con el caramelo. LLeva el refractario a baño maria previamente tapado con papel aluminio por alrededor de 35 minutos en el horno a 375 grados F. o hasta que este semicocido pero no aguado. Retira de el horno y retira el papel aluminio.
- Sigue las instrucciones de el empaque y vacia la mezcla al flan. llevalo al horno nuevamente a baño maria por 40 minutos o hasta que al insertar un palillo este salga completamente limpio. Deja enfriar y desmolda. Listo tendras un chocoflan perfecto! Refrigera por lo menos 2 horas y Disfruta frio.
- Es importante que para el baño maria pongas suficiente agua ya caliente o lo pongas a calentar antes de vaciar la mezcla. - Para realizar esta receta de chocoflan lo primero que debes hacer es precalentar el horno a 180ºC. Luego, empezaremos con la preparación del flan. Para ello, bate en un recipiente los huevos, las leches y la esencia de vainilla. Si lo deseas, puedes elaborar tu propia leche condensada siguiendo esta receta. Y si no dispones de leche evaporada, sustitúyela por dos cucharadas de azúcar por cada huevo.
- Cuando todos los ingredientes se hayan integrado, en un molde para pastel coloca el caramelo o cajeta (también conocido como dulce de leche) en la base y añade la masa del bizcocho de chocolate que compraste ya elaborada. - Pour cajeta into 12-cup fluted tube pan sprayed with cooking spray. Blend evaporated milk, cream cheese, 4 eggs, vanilla and sugar in blender until smooth.

- You will need a 12-cup bundt pan and a roasting pan large enough to put the bundt pan inside of and have plenty of room for water. You are creating a Bain Marie or water bath to cook the flan layer.
- Set one oven rack in middle of the oven. Preheat oven to 350 degrees F. Coat the bundt pan with butter and drizzle the bottom of the pan with cajeta.
- Boil about 2 quarts of water for the Bain Marie.
- For the Chocolate Cake Layer: With an electric stand mixer, cream the butter and sugar together until light and fluffy, 3-5 minutes. Beat in the egg. Sift all dry ingredients together in a separate bowl. Then mix the dry ingredients into the wet mixture, 1/3 at a time, alternating with buttermilk until all ingredients are incorporated.
- For the Flan Layer: Place all the flan ingredients together in a blender and blend on high until smooth, about 30 seconds.
- Set the bundt pan inside the roasting pan. Scoop cake batter into the bundt pan on top of the cajeta, smooth it out. Then gently pour the flan mixture over the back of a large spoon into the bundt pan so that it lays on top of the cake batter.
- Lightly butter a piece of foil and cover the bundt pan tightly, butter side down against the cake. Pour boiling water in the roasting pan about two inches high. Gently slide the pan onto the middle oven rack. Bake for 1 hour without opening the oven door. (You need to keep all of the steam inside the oven to do its job.)
- Remove the foil and test the cake. It should be firm to the touch, and an inserted toothpick should come out clean. (If not, place back in the oven for another 10-20 minutes.) Remove the cake from the water bath and cool completely to room temperature. When cool, shake the pan from side to side to loosen, place a large platter inverted over the cake, hold tightly and quickly flip over. With a rubber spatula scrape the remaining cajeta onto the cake.
- Serve at room temperature, or chill and serve cold. Both are !Muy Delicioso! Garnish with more cajeta if desired.

- Preheat the oven to 350F. Brush or spray an 8-inch cake pan with oil.
- Spread the dulce de leche around the bottom and up the sides of the pan. Place the cake pan in a larger roasting pan, which you will use as a water bath during baking.
- To make the chocolate cake layer, mix the sugar, flour, cocoa powder, baking soda, baking powder, and salt in a large bowl.
- In a different bowl, with the mixer on low speed, mix together the sour cream or buttermilk, butter, eggs, and vanilla.
- Slowly add the wet ingredients to the dry. Mixing just until combined. Scrape the batter in the mold, over the dulce de leche.
- Make the flan layer: Place all the flan ingredients in the blender and blend until smooth.
- Pour the flan mixture over the cake layer. Cover the with foil and fill the roasting pan with hot water, reaching halfway up the side of the cake pan, and bake for about 1 hour and 10 minutes, or until a knife inserted into the center comes out clean.
- Let the Chocoflan cool in the water bath then refrigerate for at least 2 hours or overnight.
- To serve, run a thin sharp knife around the rim of the flan. Place a platter or large plate on top of the flan and gently flip over so the plate is on the bottom.

Spray piece of foil with cooking spray, and place sprayed side down over top of pan; cover tightly.
- Place cake pan in large roasting pan; add 1 inch of hot water to roasting pan.
- Bake 1 hour 20 minutes to ensure cake AND flan layer bake completely (toothpick inserted in center of cake will come out clean). Remove cake pan from water bath to cooling rack; remove foil. Cool at room temperature 1 hour. Refrigerate in pan, uncovered, 2 hours.
- Remove from refrigerator; run thin metal spatula around outer and inside edges of pan to loosen cake. Place serving plate upside down on cake pan; turn plate and pan over. Remove pan. Spoon any remaining caramel from pan over top of cake. Store loosely covered in refrigerator.

This recipe was given to me by my mother-in-law, who is from Durango, Mexico. I had to beg her for years to give this recipe to me. Finally, she gave it to me for Christmas. I added orange zest, but the original recipe calls for just pure vanilla. You can use almond extract as well.

- Place sugar in a heavy saucepan over medium-high heat, and cook, stirring constantly, until the sugar melts and turns a golden amber color, about 10 minutes. Watch carefully once syrup begins to change color, because it burns easily. Carefully pour the melted sugar syrup into a flan mold. Let cool.
- Preheat oven to 350 degrees F (175 degrees C).
- Pour whole milk, sweetened condensed milk, eggs, egg yolks, orange juice, orange peel, vanilla extract, and cornstarch into a blender, and blend for a minute or so, until the mixture is smooth. Pour in the cream, and pulse several times to incorporate the cream. Pour the mixture over the cooled caramel syrup in the flan mold.
- Line a roasting pan with a damp kitchen towel. Place the flan mold on the towel, inside roasting pan, and place roasting pan on oven rack. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish.
- Bake in the preheated oven until the center of the flan is set but still slightly jiggly when moved, 45 minutes to 1 hour. Let the flan cool, then refrigerate for at least 4 hours. To serve, run a sharp paring knife around the inside of the mold to release the flan. Invert a plate on the mold, flip the mold over, and gently remove the mold to unmold the flan and reveal the syrupy caramel topping.
