The very first time that I made Cherry Crisp, my brother happened to be visiting. He is an ice cream lover-but he passed up the scoops of vanilla that he tops most desserts with so he could taste the cherries better! Wheat, soybeans and milo are the main crops on our farm. We also have three small cherry trees. I apportion all of that harvest for this recipe. My husband's is the manager of a coop. I work part-time as a church secretary...teach piano in our home...and enjoy making clothes for myself and our 3-year-old daughter. Cross-stitch is one of my favorite hobbies.

1/4 teaspoon salt
1/2 cup packed brown sugar
1 cup all-purpose flour
1/2 cup cold butter, cubed
FILLING:
1 cup sugar
1/4 cup cornstarch
1 cup cherry juice blend
4 cups pitted tart red cherries
Few drops red food coloring, optional
TOPPING:
1-1/2 cups quick-cooking rolled oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
5 tablespoons butter, melted

Steps:

  • In a bowl, combine salt, sugar and flour; cut in butter. Press into a greased 2-qt. or 11x7-in. baking dish. Bake at 350° for 15 minutes. , For filling, combine sugar and cornstarch in a saucepan. Stir in juice. Cook over medium heat until thick, stirring constantly. Fold in cherries and food coloring if desired. Pour over baked crust. Combine all topping ingredients; sprinkle over filling. , Bake for 20-25 minutes or until golden brown and bubbly around edges.

Ours does, plus pistachios and the traditional brown sugar, butter, and flour. There's no disputing the results: tangy, sugary fruit and lots of crunch.

1 3/4 pounds pitted fresh or frozen sour cherries
1/2 cup chopped unsalted pistachios
1/2 cup plus 2 tablespoons all-purpose flour
1/3 cup old-fashioned rolled oats
1/4 teaspoon baking powder
Salt
6 tablespoons unsalted butter, softened
3 tablespoons packed light-brown sugar
3/4 cup granulated sugar
2 teaspoons cornstarch
Pinch of ground cinnamon

Steps:

  • Preheat oven to 375 degrees. If using frozen cherries, spread them in a single layer on a rimmed baking sheet. Let stand at room temperature until cherries have thawed almost completely but still hold their shape, about 30 minutes. Drain off any accumulated liquid.
  • Whisk together the pistachios, flour, oats, baking powder, and 1/4 teaspoon salt in a medium bowl; set aside. Put butter, brown sugar, and 1/4 cup granulated sugar in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until creamy.
  • Stir pistachio mixture into butter mixture until just combined. Work mixture through your fingers until it forms coarse crumbs ranging in size from small peas to gum balls; set topping aside.
  • Stir together cherries, remaining 1/2 cup granulated sugar, the cornstarch, cinnamon, and a pinch of salt in a medium bowl. Transfer cherry mixture to an 8-inch square baking dish. Sprinkle the topping evenly over cherry mixture. Bake until topping turns golden and juices are bubbling, 50 minutes to 1 hour. Let cool on a wire rack 1 hour before serving.

½ cup (60 g) all-purpose flour
¼ cup (22 g old-fashioned rolled oats

4 tablespoons (2 oz; 60 g) cold unsalted butter

Steps:

  • Preheat the oven to 375°F (190°C) with a rack in the center position. Lightly butter and set aside an oven-safe pie dish, roughly 9-inches in diameter.
  • Prepare Filling: Combine the pitted cherries, blueberries, and blackberries in a bowl. Add the honey, tapioca, vanilla, salt, and lemon zest and stir the mixture together gently until all the ingredients are evenly distributed. Place the fruit mixture in the pie dish and spread evenly into a thick layer.
  • Prepare Crisp Topping: In a separate bowl, whisk together the almond meal, all-purpose flour, rolled oats, cinnamon, and salt. This was out of inspiration for something to do with my fresh sour cherries. Only got a few this year so wanted to make something really tasty! I think this did it. Very simple and can be adjusted to your needs if fresh sour cherries are not available, but I do not recommend using Bing or sweet red cherries for this. Use sour cherries in the can if you can find them. Enjoy! Refrigerate when completely cooled.

1 (9 inch) prepared pastry for a single-crust pie
4 cups fresh sour cherries, pitted
1 cup white sugar
4 tablespoons cornstarch, or more as needed
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup packed light brown sugar
⅔ cup all-purpose flour
⅔ cup rolled oats, or more to taste
1 tablespoon ground cinnamon
½ teaspoon salt
½ cup butter, cut into small cubes

Steps:

  • Line the bottom of an oven with aluminum foil to catch spills. Preheat the oven to 400 degrees F (200 degrees C). Line a 9-inch square baking dish with the pie crust.
  • Place cherries in a bowl. Let sit in the refrigerator for about 4 hours until juices start to come out. Gently press down on top of the cherries to release juice. Pour off 3/4 cup juice, reserving cherries in the bowl.
  • Pour juice into a small saucepan over medium heat. Mix sugar, cornstarch, and cinnamon together. Stir mixture into the juice before it starts to steam. Bring mixture to a boil, stirring constantly. Remove from heat and keep stirring until mixture starts to thicken, 3 to 5 minutes. Stir in vanilla and almond extracts.
  • Pour juice mixture into the bowl with the cherries; stir until combined. Pour mixture into the prepared crust.
  • Bake in the preheated oven for 40 minutes while preparing the crumb topping.
  • Mix brown sugar, flour, oats, cinnamon, and salt together in a large bowl. Cut in butter pieces with a fork until they're the size of small peas.
  • Remove cherry pie from the oven. Top with the crumb topping and bake for an additional 20 minutes. Remove from oven and cut a small hole in the center to help vent. Let cool, at least 1 hour. Serve warm.

  • In a medium-size bowl, combine the all-purpose and whole-wheat flours, sugar, salt and cinnamon. Rub in the butter until the mixture resembles coarse meal. Add the walnuts and oats and toss lightly to combine. Cover the cherries with the topping and bake until the topping is crisp and the juices are bubbling, about 40 minutes.
