6 cups sliced pears
½ cup butter, melted
2 tablespoons maple syrup
2 cups all-purpose flour, or more as needed
1 cup brown sugar
½ cup white sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon vanilla extract
½ cup butter, softened

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
  • Spread pears to cover bottom of the baking dish; drizzle with melted butter and maple syrup.
  • Stir flour, brown sugar, white sugar, cinnamon, nutmeg, and vanilla extract together in a bowl. Cut softened butter into flour mixture until mixture resembles coarse crumbs, adding more flour if necessary. Sprinkle topping over pears.
  • Bake in preheated oven until pears are bubbling and topping is crisp, about 30 minutes.

  • Preheat oven to 350°. Toss pears with orange juice; place in a greased 13-in. x 9-in. baking dish. 1 teaspoon grated orange zest

1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1/2 pound (2 sticks) cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.
  • For the topping: Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
  • Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

1/2 cup dark brown sugar, firmly packed
1 1/2 tablespoons flour
1 teaspoon ground cinnamon
1/4 cup chopped crystalized ginger
1/2 cup raisins
2 tablespoons poire William brandy
1 cup old-fashioned rolled oats
3 tablespoons butter, melted
2 tablespoons thawed orange juice concentrate

Steps:

  • Heat oven to 350 degrees. Peel, core and quarter the pears. Slice each quarter into 2 or 3 pieces. Place in large bowl.
  • Mix all but 2 tablespoons of the brown sugar with the flour, cinnamon, ginger, raisins and brandy. Add to pears and mix well.
  • Chop oats in food processor. Add the remaining brown sugar, the butter and the orange juice concentrate, and mix well.
  • Spoon pear mixture into an 8-cup gratin dish, and sprinkle with oat mixture. Bake in lower third of the oven for 35 to 40 minutes, until oat mixture begins to brown and pears soften. Remove from oven and stir oat mixture into pears. Serve warm.

4 1/2 tablespoons granulated sugar
1/8 teaspoon salt
1 1/2 tablespoons unsalted butter
4 teaspoons firmly packed light brown sugar
1/4 cup walnuts (about 1 ounce)
1 pinch salt
1/2 teaspoon ground cinnamon
1/4 cup all-purpose flour
2 tablespoons unsalted butter, melted and cooled

Steps:

  • Adjust the oven rack to the position 1 up from the bottom position.
  • Preheat the oven to 400 degrees.
  • Have ready a 9-inch square baking dish or a 6-cup casserole dish.
  • If using a glass dish, reduce the temperature to 375 degrees.
  • For the pears: In a large bowl, gently toss the pears with the lemon juice, granulated sugar and salt to combine.

  • Using a pastry blender or 2 knives held crisscross fashion, cut in the butter and vanilla until the mixture resembles coarse meal.
  • Using your fingertips, lightly pinch together the mixture to form little clumps.
  • Set aside.
  • To assemble: Place a colander over a large bowl.
  • Transfer the pear mixture to the colander and drain.
  • Transfer the pears to the baking dish; set aside.
  • Reserve the liquid.
  • Pour the liquid (you should have at least 6 tablespoons) into a small saucepan and heat over medium-low heat.
  • Add the reserved 1 1/2 tablespoons butter and cook, stirring occasionally, until the mixture reduces to 3 tablespoons, about 10 minutes.
  • Pour the liquid over the pears in the baking dish.
  • Cover the dish with aluminum foil, make a 1-inch slash in the middle of the foil and bake the pears for about 30 minutes, until a sharp knife meets with only a little resistance when inserted into a pear.
  • Remove and discard the foil and sprinkle the pears evenly with the reserved topping.
  • Bake, uncovered, for 15 to 20 minutes, until the topping is crisp and golden-brown, the fruit juices are bubbling and the pears are tender but not mushy when a small sharp knife is inserted.
  • Transfer the baking dish to a wire rack to cool.
  • Serve warm or room temperature.

2 tablespoons butterscotch schnapps
2 tablespoons white sugar
1 teaspoon ground cinnamon, divided
¼ teaspoon ground nutmeg
⅛ teaspoon ground ginger
4 medium pears - peeled, cored, and sliced
1 cup fresh cranberries
½ cup rolled oats
½ cup all-purpose flour
½ cup packed brown sugar
½ cup cold unsalted butter, cubed
¼ teaspoon salt
⅓ cup white chocolate chips

Steps:

  • Mix schnapps, white sugar, 1/2 teaspoon cinnamon, nutmeg, and ginger together in a large bowl until sugar dissolves. Add pears and cranberries and toss until fruit is completely coated. Cover and refrigerate for at least 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9-inch square baking dish.
  • Combine oats, flour, brown sugar, cold butter, remaining 1/2 teaspoon cinnamon, and salt in a food processor. Pulse until mixture forms large crumbles. Fold in white chocolate chips.
  • Pour chilled fruit mixture into the prepared baking dish, leaving approximately 3/4 inch at the top. Sprinkle crumb mixture over the fruit, covering completely.
  • Bake in the preheated oven until brown and bubbly, about 45 minutes.
